Number Of Ingredients 8

8.5 ounce package corn muffin mix
1 large egg
1/3 cup 2% milk
1/3 cup Daisy Brand Sour Cream
1 tablespoon peach preserves
2 teaspoons Dijon mustard
3 ounces deli baked ham, very thinly sliced
1/2 cup baby arugula leaves

Steps:

  • 1.Heat the oven to 400°F.
  • 2.Spray 20 mini muffin cups with cooking spray.
  • 3.Mix the muffin mix as directed on package, using the egg and milk.
  • 4.Spoon the mixture into muffin cups, filling almost full.
  • 5.Bake for 10 to 12 minutes or until golden brown. Remove from the pans and cool for 30 minutes.
  • 6.Meanwhile, in a small bowl, mix the sour cream, preserves and mustard.
  • 7.Split each mini muffin horizontally. Spread the sour cream mixture over the cut sides of the muffins.
  • 8.Cut the thin ham slices in 1½-inch strips. Pleat to fit the muffins.
  • 9.Fill each muffin with the ham and a couple of arugula leaves.

BEET SLIDERS



Beet Sliders image

Number Of Ingredients 24

5 quarts water
1/2 cup sea salt, plus a pinch
1 tablespoon dried dill
6 dried arbol chiles
1/4 cup coriander seeds
1 tablespoon caraway seeds
1 large carrot, coarsely chopped
2 stalks celery, coarsely chopped
1/2 large yellow onion, coarsely chopped
4 tablespoons seasoning sauce (recommended: Maggi)
6 to 8 whole beets (depending on size)
Olive oil
Green Goddess Dressing, recipe follows
Sliced red onions, for serving
16 to 18 slider buns, toasted
1 bunch fresh tarragon, stemmed, finely chopped
1/2 bunch fresh parsley, stemmed, finely chopped
1 bunch green onions, finely chopped
1/2 cup buttermilk
1 tablespoon lemon juice
1/2 cup white wine vinegar
1 cup sour cream
2 cups mayonnaise
Salt and pepper

Steps:

  • In a large stock pot, combine and the water, 1/2 cup sea salt, dill, chiles, coriander, caraway, carrots, celery, onions, seasoning sauce, and beets and bring to a boil. Boil on medium heat for about 1 hour.
  • Remove the beets and let cool, discarding the liquid. Once cooled, remove the skin from the beets with a vegetable peeler. (Remember to wear gloves, as the beets will stain your hands as well as other surfaces.) Cut the beets into 1/4 to 3/8-inch slices. Place the beet slices, a drizzle of olive oil, and a pinch of sea salt into a skillet over high heat and saute until glossy and tender, about 2 1/2 minutes on each side.
  • Remove the beets from the skillet and serve with shaved red onion and Green Goddess Dressing on a toasted slider bun.
  • Combine the herbs, green onions, buttermilk, lemon juice, and vinegar in a mixing bowl. Let macerate for 10 minutes. Add the sour cream and mayonnaise, and blend with an immersion blender until creamy. Season with salt and pepper.

PULLED MUSHROOM SLIDERS

1 cup thinly sliced portobello mushrooms (thin strips)
1/4 cup barbecue sauce
3 slider rolls
1/2 cup shredded cheese

Steps:

  • Add a little olive oil to a saute pan and set over medium heat. Cook the mushroom strips in the pan until wilted and caramelized, about 5 minutes. Add the barbecue sauce and stir to coat in the sauce. Divide the mushrooms among the slider rolls and top with the shredded cheese.

1 pound ground beef
1 pound ground sausage
1/2 cup finely chopped onion
1/4 cup minced garlic
2 tablespoons chopped fresh thyme
1 tablespoon chopped fresh parsley, plus more for garnish
1 egg
1/2 cup grated Parmesan, plus more for garnish
1 cup panko breadcrumbs
12 ounces ricotta cheese
2 teaspoons kosher salt
Olive oil
4 cups red sauce, heated
Small potato buns (slider size), toasted

Steps:

  • Preheat the oven to 450 degrees.
  • Mix the beef, sausage, onions, garlic, thyme, parsley, egg, Parmesan, breadcrumbs, ricotta and salt in a bowl together with your hands (like mixing play dough). Form 1 1/2-inch inch balls out of the meat mixture. Heat a large ovenproof skillet (preferably cast iron) with a bit of olive oil. Add the meatballs and brown on all sides, about 3 minutes. Place the skillet in the oven to finish cooking, 5 to 7 minutes.
  • Remove and toss with the red sauce. Place on the toasted slider buns and sprinkle with Parmesan and parsley.
