HOT TRUCK P M P - POOR MAN'S PIZZA
This is posted in tribute to Bob Petrillose, its creator who passed away last month. I had the honor of eating way too many of these pizza subs during my college days. Rumor has it that a student who worked in the truck sold the idea to Stouffer's and was the origin of the French Bread Pizza. Steps:
- Preheat the oven to 375 degrees.
- Cut the French bread loaf in half crosswise and then slice them completely open, horizontally. Place the four pieces of bread on a baking sheet.
- Using a ladle or spoon, spread the pizza sauce on all pieces of bread, being sure to cover out to the edges (to prevent burning) and sprinkle with oregano.
- Spread mushrooms across each bottom half of the bread. (This is officially for the "PMP Mush" version - use pepperoni for "PMP Pep").
- Generously cover the mushrooms with mozzarella.
- Bake 8-10 minutes or until the cheese is melted and the French bread is golden brown. Lay the top halves of the French bread on the bottom halves to make sandwiches. I also tried it in the panini maker which was faster and tasted the same, but the cheese didn't melt quite like the original. Enjoy!

Steps:
- Heat half the oil in a large wide, pan.
- Once hot (but not smoking) add the (optional) pancetta, followed a couple of minutes later by the onion, carrot, garlic, and parsley. Give it a good stir.
- Put a lid on it and cook slowly for 20-30 minutes, stirring regularly.
- Tip half the beans in with the veggies and mash the other half with a potato masher before stirring them in too.
- Pour in the tinned tomatoes and the stock, and chuck in any old rind of Parmesan (it's wise to keep these, as they are a great source of flavour).
- When the soup has come to the boil, stir in the roughly chopped cabbage leaves and turn down to the lowest heat.
- Season well, stir in the chunks of bread and put the lid back on the pan. Don't play with it too much, as you want nice chunks of bread.
- After 10 minutes, turn off the heat, pour in another healthy glug of olive oil and let it sit with the lid on for a good 5 minutes before serving with yet more oil and some grated Parmesan.

POOR MAN'S PIZZA
This dish was served at a small drive-in type eatery that my Aunt worked at in Detroit years ago. It sounds odd, but it's really good!

Steps:
- Bring a stick pot of heavily salted water to a boil and add pasta. Cook until al dente; about 6-mins.
- In the meantime, heat oil in large skillet. Add garlic slices, stirring constantly so they don't burn. Once a light-golden brown, spoon out garlic and set aside.
- Slowly, add tomato sauce to pan, taking care not to splatter yourself with the popping hot oil. Add, peas with their liquid, herbs and salt and pepper to taste; stirring occasionally. Cook for about 6-mins.
- Once pasta is cooked to perfection, scoop out of water and transfer directly into sauce. Fold pasta into sauce. Remove from heat. Fold in about half the cheese.
- Garnish with additional cheese.
- Enjoy!
