Hot Irish Creme Mocha image

Simply irresistible: offer steaming cups of decadent mocha with hint of Irish cream, surprisingly easy when you start with instant cocoa mix.

6 cups hot strong brewed coffee
4 envelopes (1.25 oz each) Irish creme instant cocoa mix
1/4 cup powdered sugar
2 cups half-and-half
1/4 cup Irish creme-flavored syrup, if desired
Sweetened whipped cream, if desired
Chocolate shavings, if desired

Steps:

  • In 3-quart saucepan, mix hot coffee, cocoa mix and powdered sugar until blended. Stir in half-and-half and syrup. Cook over medium heat about 5 minutes, stirring occasionally, until hot.
  • Serve in mugs; top with whipped cream and chocolate shavings.

1.5 ounces high quality bittersweet chocolate (I used Scharrfenberger, but Ghirardelli or Lindt would be good too)
2/3 cup whole milk
1/2 cup strong hot coffee
2 teaspoons sugar
2 tablespoons Bailey's Irish Cream
whipped cream
additional chocolate shavings

Steps:

  • Use a microplane grater to finely grate the chocolate. Very carefully, transfer the chocolate shavings to a bowl (be careful - they are so light, they will become airborne and dust your kitchen with particles if you make any sudden movements -- and DON'T SNEEZE).
  • In a small saucepan, heat the milk over medium heat until just hot, but not boiling. Remove from heat and whisk the chocolate shavings into the hot milk until they dissolve. Add the hot coffee, sugar and Bailey's. Whisk until well combined and pour into individual mugs.
  • Top with a little whipped cream and chocolate shavings if desired.

Steps:

  • Add first three ingredients in a saucepan; stir until well blended and smooth.
  • Add coffee and heat mixture on low, stirring constantly, until the cocoa and sugar are dissolved (do not bring to a boil).
  • Stir in Grand Mariner and Bailey's Irish Cream.
  • Heat over moderate heat, stirring constantly, until hot but not boiling.
  • Pour into 6 coffee mugs.

  • In a saucepan, combine the cocoa powder, the sugar, and the milk, stirring until the mixture is smooth. Add the coffee and heat the mixture moderately low heat, stirring, until the cocoa powder and the sugar are dissolved and the mixture is hot, but do not let it boil. Stir in the liqueur and the Bailey's, heat the mixture over moderate heat, stirring, until it is hot, but do not let it boil, and divide it among 6 heated mugs.

2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup butter
6 tablespoons baking cocoa
2 tablespoons canola oil
1/2 teaspoon instant coffee granules
1 cup sugar
2 large eggs, room temperature, beaten
1 teaspoon vanilla extract
FROSTING:
2 cups confectioners' sugar
1/4 cup butter, softened
3 tablespoons Irish cream liqueur
GANACHE TOPPING:
1 cup semisweet chocolate chips
3 tablespoons Irish cream liqueur
2 tablespoons heavy whipping cream
1/2 teaspoon instant coffee granules

Steps:

  • Preheat oven to 350°. Sift together flour, baking powder and salt; set aside. In a small saucepan over low heat, melt butter. Remove from heat; stir in cocoa, oil and instant coffee granules. Cool slightly; stir in sugar and beaten eggs. Gradually add flour mixture and vanilla; mix well. Spread batter into a greased 8-in. square pan; bake until center is set (do not overbake), about 25 minutes. Cool in pan on wire rack., For frosting, whisk together confectioners' sugar and butter (mixture will be lumpy). Gradually whisk in Irish cream liqueur; beat until smooth. Spread over slightly warm brownies. Refrigerate until frosting is set, about 1 hour., Meanwhile, prepare ganache: Combine all ingredients and microwave on high for 1 minute; stir. Microwave 30 seconds longer; stir until smooth. Cool slightly until ganache reaches a spreading consistency. Spread over frosting. Refrigerate until set, 45-60 minutes.

  • 3. Note: This is a good drink to use upany leftover coffee from the morning.

18g ground espresso, or 1 espresso pod
250ml milk
1 tsp drinking chocolate
large cup, 300-350ml capacity

Steps:

  • Make around 35ml espresso using a coffee machine and pour into the base of your cup. Add the drinking chocolate and mix well until smooth.
  • Steam the milk with the steamer attachment so that it has around 4-6cm of foam on top. Hold the jug so that the spout is about 3-4cm above the cup and pour the milk in steadily. As the volume within the cup increases, bring the jug as close to the surface of the drink as possible whilst aiming into the centre. Once the milk jug is almost touching the surface of the coffee, tilt to speed up the rate of pour. As you accelerate, the milk will hit the back of the cup and start naturally folding in on itself to create a pattern on the top.
