A variation on potato salad - delicious!

9 potatoes, peeled
6 slices bacon
¾ cup chopped onions
2 tablespoons all-purpose flour
2 tablespoons white sugar
2 teaspoons salt
½ teaspoon celery seed
⅛ teaspoon ground black pepper
¾ cup water
⅓ cup distilled white vinegar

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain, cool and slice thin.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings.
  • Saute onions in bacon drippings until they are golden-brown.
  • In a small bowl, whisk together the flour, sugar, salt, celery seed, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Stir in water and vinegar, then return to the stove and bring to a boil, stirring constantly. Boil and stir for one minute. Carefully stir bacon and sliced potatoes into the vinegar/water mixture, stirring gently until potatoes are heated through.

6 fully cooked bratwurst (1 to 1 1/2 pound)
1 box (4.7 oz) Betty Crocker™ scalloped potatoes
2 3/4 cups hot water
2 to 3 tablespoons white vinegar
Paprika, if desired

Steps:

  • Heat oil in 10-inch skillet over medium heat. Cook bratwurst in oil, turning occasionally, until brown; remove from skillet and drain.
  • Heat Potatoes, Sauce Mix and hot water to boiling in same skillet over high heat, stirring occasionally. Reduce heat; cover and simmer about 25 minutes, stirring occasionally, until potatoes are tender.
  • Stir in vinegar. Place bratwurst on potatoes. Cover and simmer about 3 minutes longer or until hot. Sprinkle with paprika.

5 pounds red potatoes, diced
1 pound bacon
2 sweet onions, diced
4 cloves garlic, minced
1 cup white vinegar
½ cup water
2 tablespoons white sugar
1 teaspoon salt

Steps:

  • Place potatoes into a large pot and cover with water; season water with salt and bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes; drain. Put potatoes in a slow cooker.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove the bacon slices to a plate lined with paper towels. Crumble bacon and add to potatoes.
  • Return skillet to medium heat and reheat bacon drippings. Cook and stir sweet onions in the drippings until translucent, 5 to 7 minutes; add garlic and continue cooking until fragrant, 1 to 2 minutes more. Pour onion mixture over the potatoes and bacon.
  • Stir vinegar, water, sugar, and salt together in a bowl; pour over the potato mixture. Stir potatoes gently to mix.
  • Cook on Low, stirring occasionally, 3 to 4 hours.

4 large potatoes,red skin are preferred
5 thick slices of bacon
1 cup chopped onion
dressing:
1/4 cup wine vinegar(or apple)
1/4 cup water
1/4 cup sugar
salt and pepper to taste

Steps:

  • 1. Boil potatoes in their skins, peel and slice 2. Dice the bacon, fry in a large skillet over medium heat, stirring often until almost crisp. 3. Add the chopped onion and continue stirring until onion is cooked and turns slightly golden brown. 4. Add mixed dressing ingredients, heat and stir until mixture boils and sugar is dissolved. 5. Add the sliced potatoes, mix everything together well 6. Season with salt and pepper. 7. Continue cooking stirring frequently, for at least 10 minutes or until the potatos have absorbed all the liquid and are heated through. 8. Continue heating for another 5-10 minutes. Allow to stand for 10-15 minutes to let the flavors blend completely.

4 cups cubed potatoes
6 slices bacon
1 cup diced celery
3 green onions, diced
½ cup mayonnaise
¼ cup vinegar
2 teaspoons white sugar
1 teaspoon Dijon mustard
1 teaspoon salt
¼ teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring potatoes to a boil in a large pot of salted water. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain; transfer potatoes to a large baking dish.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble and sprinkle over potatoes.

8 slices bacon, strips cut up
1 large onion, chopped
1 lb smoked Polish sausage, cut into 1/2 inch slices
2 lbs medium red potatoes, cut into chunks
1 (10 ounce) can cream of potato soup, undiluted
1 cup sauerkraut, rinsed and drained
1/2 cup water
1/4 cup cider vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper

Steps:

  • Cook bacon over medium heat until crisp. remove and drain.
  • Saute onion in the drippings for one minute.
  • Add sausage, cook until lightly browned.
  • Add potatoes, cook 2 minutes longer.
  • Drain. Transfer to a 3 quart slow cooder.
  • In a small bowl, combine the remaining ingredients.
  • Pour over sausage mixture.
  • Cover and cook for 5-7 hours on low until potatoes are tender.

1-1/2 pounds smoked sausage or fully cooked bratwurst links
6 bacon strips
3/4 cup chopped onion

1/4 cup sugar
1-1/3 cups water
2/3 cup cider vinegar

Steps:

  • In a saucepan, cook potatoes in boiling salted water until tender., Meanwhile, cut sausage into 1/2-in. slices; saute in a skillet until browned. Drain and place in a large bowl. Drain potatoes; peel and cut into 3/4-in. cubes. Add sausage; keep warm. , Cook bacon until crisp; crumble and set aside. 4 medium red onions, thinly sliced (4 cups)

6 medium very firm potatoes
1/2 lb low-fat kielbasa
2 tablespoons cider vinegar
2 tablespoons brown sugar
1/2 teaspoon Dijon mustard
salt
freshly ground black pepper
chopped fresh dill

Steps:

  • In a large frying pan, heat the butter and 1 tablespoon of the oil over medium-high heat.
  • Add the onions, thyme, and caraway seeds.
  • Sauté 2-3 minutes, or until the onions begin to soften.
  • Lower the heat, cover, and cook, stirring occasionally, 20-30 minutes, or until the onions are tender but not browned.
  • While the onions are cooking, place the potatoes in a large pot, cover with water, and bring to a boil over high heat.
  • Lower the heat and simmer, covered, 15 minutes.
  • Pierce the kielbasa several times with a fork, add to the potatoes, and simmer 10 minutes, turning several times.
