SPICY CRAB DIP
This style of crab dip, often referred to as Maryland crab dip because of its Chesapeake Bay origins, makes for a festive appetizer. Here, it's served hot out of the oven and is extra creamy thanks to the combination of cream cheese and a little mayonnaise. Though crabs are plentiful this time of year - and you can certainly make this with freshly steamed and picked meat if you'd like - canned lump crabmeat makes this dish simple to assemble. Just be careful to leave the clumps of meat as intact as possible when mixing. A sprinkle of cayenne pepper and a generous douse of hot sauce add heat to this flavorful dish.

Steps:
- Heat oven to 375 degrees. Grease an 8-inch cast iron skillet or 1-quart baking dish with butter.
- In a large bowl, combine the cream cheese, mayonnaise, shallot, chives, garlic, lemon juice, Cajun seasoning, mustard powder, Worcestershire sauce and 1/3 cup Parmesan. Stir until well combined. Add the crabmeat and gently stir until just combined, trying to not break up the large lumps. Season with pepper to taste.
- Scrape into the prepared skillet and smooth the top. Sprinkle the ground butter crackers and remaining 2 tablespoons Parmesan on top.
- Bake until golden brown and bubbling, 20 to 25 minutes. Cool for 10 minutes, then sprinkle with ground cayenne, hot sauce and chives. Serve with baguette, celery sticks, carrots, additional crackers and more hot sauce.
WASABI LIME CRAB SALAD IN CUCUMBER CUPS
Steps:
- Prepare cucumber cups:
- Cut cucumbers crosswise into generous 1/2-inch-thick slices. Cut a fluted round from each slice with cookie cutter, then scoop out some flesh from center of each round with melon-ball cutter or a small spoon, creating an indentation but leaving bottom intact.
- Prepare filling:
- Whisk together mayonnaise and wasabi, then whisk in lime juice and salt.
- Cut radishes into very thin slices with slicer. Halve slices, then cut crosswise into very thin strips. Trim radish sprouts to 1-inch lengths, measuring from top of sprout, and discard remaining stems. (If using pea shoots, cut sections with leaves into 1-inch pieces.)
- Stir together crab, wasabi mayonnaise, radish strips, and radish sprouts, then put a small spoonful of filling into each cucumber cup.

HOT MARYLAND STYLE CRAB SPREAD
I finally found this recipe( cleaned out ever recipe box), so I am posting it here for safekeeping. Years ago I had this spread at a friends home in Maryland. Got the recipe put it away and forgot where it was. I reduce the fat by using fat-free cream cheese and sour cream.

- Preheat oven to 325°F.
- Lightly grease a 1-quart baking dish.
- In a 2-quart bowl, blend together cream cheese, sour cream, mayonnaise, lemon juice, dry mustard and hot sauce.
- Stir in crab meat, Old Bay seasonings, and 1/4 cup cheddar cheese.
- Transfer to greased baking dish. Top with remaining 1/4 cup cheddar cheese.
- Bake in preheated oven 30 minutes, or until bubbly and lightly browned.

- In a small sauce pan, melt the butter over medium heat. Add the shallots and saute until softened and golden, about five minutes. Stir in the garlic and saute another minute, or until fragrant.
- Add the shallots, garlic, cream cheese, sour cream, 1/2 cup cheddar cheese, and 1/4 cup Parmesan cheese to the bowl of an electric mixer. Beat until well combined. Fold in the peppers and crab meat, then stir in the hot sauce, lemon juice, and Old Bay seasoning.
- Spread the dip evenly over a baking dish (8 inch square pans or deep dish pie plates work well), and sprinkle with the remaining cheddar and Parmesan cheese.
