1/2 small head romaine lettuce, torn into bite-size pieces (to yield 2 cups)
1/2 lb spinach, well rinsed, stemmed, and torn into bite-size pieces
1 (11 ounce) can mandarin oranges, drained
3 tablespoons soy sauce
1 tablespoon honey
1/4 teaspoon ginger
3 tablespoons oil
1 1/4 lbs boneless chicken breasts, skin removed and cut into 1-inch pieces
3 tablespoons chopped scallions
1 garlic clove, minced
1/4 cup cashews

Steps:

  • In a large salad bowl, combine lettuce, spinach, and oranges.
  • In a small bowl, combine soy sauce, honey, ginger, and 3 Tbsp water, Set sauce aside.
  • In a wok or large frying pan, heat oil over medium-high heat. Add chicken and stir-fry until barely opaque throughout, about 5 minutes. Add scallions and garlic and cook one minute longer. Add sauce and cook, tossing, for 30 seconds.
  • Pour chicken and sauce over greens and oranges and toss. Sprinkle cashews on top.

2 cups seashell pasta
¼ cup brown sugar
1 cup creamy salad dressing (e.g. Miracle Whip)
2 teaspoons lemon juice
1 tablespoon distilled white vinegar
1 pinch salt
2 cups chopped celery
½ cup chopped green bell pepper
1 onion, chopped
3 boneless chicken breast halves, cooked and cut into bite-sized pieces
1 cup cashew halves

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
  • In large bowl, combine brown sugar, salad dressing, lemon juice, vinegar and salt. Toss dressing mixture with cooked pasta, celery, green pepper, onion and chicken. Chill until ready to serve. Mix in cashews just before serving.

3 lbs boneless skinless chicken breasts, cooked, cooled and chopped
3 celery ribs, chopped (include the leaves!)
1 cup chopped sweet onion
1/2 cup finely chopped carrot
1 (8 ounce) can water chestnuts, drained and chopped
3/4 cup chopped cashews
1 tablespoon tarragon
1/4 teaspoon ginger
1 1/4-2 cups mayonnaise (start on the low side)
2 teaspoons reduced sodium soy sauce (sometimes I use a bit more)
1 teaspoon sugar
1/4 teaspoon black pepper
1/8 teaspoon salt (or more)

Steps:

  • Mix everything together in a large bowl.
  • Chill until ready to serve.

BASIL CASHEW CHICKEN SALAD

1/4 cup chopped fresh sweet basil
1 teaspoon dried onion flakes
1/8 teaspoon black pepper, to taste

  • Combine all ingredients; the filling tastes even better when it's had a chance to chill thoroughly, but often I eat it right away.

3/4 cup light sour cream

Steps:

  • Remove and discard skin and bones from rotisserie chicken. Tear meat into bite- size pieces and place in a large bowl with cashews, celery and onion. 4 cups cubed cooked chicken
1 cup chopped celery
1/2 cup chopped green pepper
1 jar (2 ounces) diced pimientos, drained
1/2 cup mayonnaise
1/3 cup heavy whipping cream
1/4 cup sour cream
3 tablespoons thinly sliced green onions
2 tablespoons minced fresh parsley
1-1/2 teaspoons lemon juice
1-1/2 teaspoons tarragon vinegar
1 garlic clove, minced

Leaf lettuce and additional cashews, optional

Steps:

  • In a large bowl, combine the chicken, celery, green pepper and pimientos; set aside. , In a blender, combine the next 10 ingredients; cover and process until well blended. Pour over chicken mixture; toss to coat. Cover and refrigerate until serving., Just before serving fold in cashews. Serve in a lettuce-lined bowl if desired.
