HOLIDAY HORSERADISH DEVILED EGGS



Holiday Horseradish Deviled Eggs image

4 slices bacon
6 eggs
3 tablespoons mayonnaise
1/2 teaspoon cayenne
2 tablespoons prepared mustard
1 tablespoon prepared horseradish
Pinch salt
Pinch cracked black pepper
2 tablespoons thinly sliced scallion greens

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the bacon on a sheet tray lined with a wire rack and bake until crisp, about 18 to 22 minutes Remove the bacon from oven, allow to cool and then crumble.
  • Put the eggs in a small saucepan and cover them with salted water. Bring the water to a boil over medium heat, then cover, and remove the saucepan from the heat. Allow the eggs to sit for 10 minutes. Remove eggs from pan and shock in ice water. Peel the eggs and cut in half. Remove the yolks to a medium-sized bowl. Add the mayonnaise, cayenne, mustard, horseradish, salt, and pepper. Mix until smooth and creamy. Put the mixture into a piping bag. Arrange the egg whites on a serving platter. Pipe a heaping tablespoon of the egg yolk mixture into each of the egg whites. Sprinkle each egg with some bacon and scallions. Serve.

Deviled eggs are a party classic. The addition of a little horseradish to the traditional deviled egg filling gives the dish a spicy twist.

10 hard-boiled eggs
3 tablespoons mayonnaise
1 tablespoon prepared horseradish , or to taste
1 teaspoon Dijon mustard
1 teaspoon white vinegar
1 dash hot sauce
Salt and pepper, to taste
Garnish: paprika
Garnish: sliced chives

Steps:

  • Gather the ingredients.
  • Peel and cut the eggs in half lengthwise, then scoop out the yolks into a medium bowl. Arrange the whites, cut-side up, on a serving platter.
  • Using a fork, mash the yolks with the mayonnaise, horseradish, mustard, vinegar, hot sauce until the mixture is almost smooth. Season with salt and pepper to taste. If the mixture seems dry, add a touch more mayo.
  • Using a spoon or pastry bag fitted with a star tip, generously fill the holes in the egg halves with the yolk mixture.
  • Sprinkle the tops with paprika and chives, if using. Chill well before serving.

These deviled eggs have horseradish sauce in them, hence the name. Horseradish sauce gives them a little bit of a zip. They are different than "plain" deviled eggs. Since the added pickle juice has salt in it, I did not add salt to this recipe. You can if you want to. Season according to taste. Prep time is approximate and includes refrigeration time. Cook time is for the time it takes to prepare the eggs for deviling and is approximate. Sometimes the cook time is hard to estimate when it goes through different stages, such as boiling and cooling. This recipe can be prepared ahead of time to get a better taste.

6 large eggs
2 tablespoons mayonnaise
1 tablespoon horseradish sauce
1 teaspoon pickle juice
1 tablespoon diced hamburger dill pickle
1 tablespoon diced green onion
paprika (optional)

Steps:

  • For best results cook the eggs as follows: Place the eggs in a saucepan and cover with cold water.
  • Over med-high heat, bring the water/eggs to a boil.
  • As soon as the water begins to boil, turn the burner off.
  • Let the pan of eggs sit on the burner for 15 minutes.
  • Remove from heat and drain water.
  • Cover the eggs with ice cubes.
  • Add water until eggs are fully covered.
  • Let pan sit in the sink until eggs are cold enough to handle and peel.
  • Peel the eggs and rinse off with cold water.
  • Cut each egg in half and place on a plate.
  • Remove the yolks and put them into a small bowl Mash the egg yolks with a fork.
  • Add the mayonnaise, horseradish sauce and pickle juice Mix well with a spoon or fork.
  • Add the diced pickles and onions Mix well.
  • With a spoon, scoop about 1 teaspoon of the egg yolk mixture into each egg white.
  • If desired, sprinkle paprika on the eggs.
  • Cover with plastic wrap.
  • Refrigerate for at least one hour before serving to allow flavors to blend together.

CRUNCHY SCOTCH EGGS WITH HORSERADISH AND PICKLES



Crunchy Scotch Eggs With Horseradish and Pickles image

6 large eggs
2 fat garlic cloves, finely chopped
Pinch kosher salt
1 pound Italian sausage, casings removed
1 1/2 to 2 tablespoons prepared horseradish
1/4 cup all-purpose flour
1/4 cup panko bread crumbs
Olive oil, for frying
Cornichons or other pickles, for serving

Steps:

  • Place 4 eggs in a medium saucepan and cover with cold water. Bring to a boil over high heat; remove from heat and cover for 3 minutes. Uncover and allow to sit for 10 minutes. Peel eggs under running cold water and pat dry.
  • Using a mortar and pestle or the back of a knife, mash the garlic with a pinch of salt until a paste forms. In a medium bowl, knead together the sausage, garlic paste and horseradish until just combined. Divide into 4 equal portions.
  • In a small bowl, lightly beat the remaining 2 eggs. Place the flour and panko in separate bowls. Coat each hard-boiled egg in flour and then enclose each one completely in a sausage patty, molding the sausage into place. Dredge the sausage-coated eggs in the flour, shaking off the excess. Dip them in the beaten eggs, letting the excess drip off, and roll them in the panko, coating well.
  • Fill a medium pot with 1/2-inch oil. Heat to 350 degrees, or until the oil is shimmering and bubbling slightly around the edges. Fry the eggs, 2 at a time, turning them occasionally until golden and cooked through, about 7 to 9 minutes. Transfer to a paper-towel-lined plate. Sprinkle with salt and serve while still warm, with pickles.

10 chicken or quail eggs
1 cup (250 ml) water
1 cup (250 ml) distilled white vinegar
1 1/2 tablespoons sugar
1 tablespoon mustard seeds
1 sprig tarragon
1 celery stalk, cut into matchsticks
2 slices fresh horseradish, each 1/4 inch (6 mm) thick

Steps:

  • Place the eggs in a pot in cold water to cover, bring to a boil, and boil for 3 minutes for quail eggs or 7 minutes for chicken eggs. Chill in an ice bath, then peel and refrigerate.
  • To make the brine, in a saucepan, combine the water, vinegar, and sugar and bring to a boil. Put your eggs in a Mason jar, and put the mustard seeds, tarragon, celery, and horseradish on top. Pour in the boiling mix and seal the jar. Store in the fridge.
  • The eggs are ready to eat after 1 week. They will keep in the refrigerator for up to 1 month.
