POBLANO AND CORN QUESO FUNDIDO (FONDUE)

3 cups chicken stock
1 tablespoon butter
1/2 onion, thinly sliced
Kosher salt
1/4 cup all-purpose flour
4 cups shredded Monterey Jack cheese
1 cup corn
6 poblano chiles, charred, stemmed, seeded and cut into strips (see Cook's Note)
Corn tortillas, for serving
Fresh cilantro leaves, for garnish

Steps:

  • In a medium pot, heat up the chicken stock until boiling.
  • Meanwhile, in a medium saucepan over medium-high heat, melt the butter. Add the onions and saute until translucent, about 5 minutes. Season with a pinch of salt. Add the flour and saute briefly. Add the simmering stock to the onion mixture and whisk until there are no lumps and the stock is fully incorporated. Add the cheese and cook, whisking, until incorporated. Stir in the corn and poblanos.
  • Pour the mixture into a fondue pot and serve immediately with warm tortillas heated directly over a gas burner. Add cilantro leaves as a garnish and enjoy!

1 (1 pound) loaf processed cheese (such as Velveeta®), cubed
½ cup milk
2 pounds ground beef
4 (10 ounce) cans diced tomatoes with green chile peppers (such as RO*TEL®)
1 (1.25 ounce) package taco seasoning

Steps:

  • Place processed cheese and milk in a slow cooker.
  • Heat a large skillet over medium-high heat and cook and stir beef in the skillet until crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
  • Stir diced tomatoes and taco seasoning into ground beef and bring to a boil.
  • Transfer ground beef mixture to the slow cooker. Stir with milk and processed cheese.
  • Cook on High until cheese is melted, about 1 hour.

1 paquete (14 onzas) de macarrones con queso con leche al 2% KRAFT Deluxe Macaroni & Cheese Dinner Made With 2% Milk Cheese
1 libra de carne molida de res, extra magra
3 dientes de ajo bien picaditos
1-1/2 cucharadita de hojas secas de orégano
1 lata (28 onzas) de tomates (jitomates) en cubitos, sin escurrir
1 paquete (9 onzas) de ejotes (habichuelas verdes) congelados (descongélalos antes de usar)
1 taza de queso cheddar suave desmenuzado con leche al 2% KRAFT 2% Milk Shredded Mild Cheddar Cheese

Steps:

  • Precalienta el horno a 375ºF. Prepara los macarrones siguiendo las instrucciones en el paquete. Mientras tanto, dora la carne con el ajo y el orégano en una sartén grande antiadherente; escurre la carne. Añade los tomates con su líquido y los ejotes; mezcla todo bien.
  • Esparce la mezcla de carne con una cuchara en una fuente para hornear de 13x9 pulgadas; cúbrela parejamente con los macarrones que preparaste. Cubre esto con papel de aluminio.
  • Hornea la fuente durante 30 minutos o hasta que esté completamente caliente su contenido. Sácala del horno; quítale el papel. Espolvoréala con queso. Déjala reposar durante 5 minutos o hasta que el queso se derrita.

4 rebanadas de tocino (tocineta) OSCAR MAYER Bacon, picadas
2 plátanos maduros (amarillos), pequeños, cortados en cubos de 1/2 pulgada
1-1/2 libra de carne magra molida de res
1 lata (8 oz) de salsa de tomate (jitomate), cantidad dividida
1-1/2 taza de queso cheddar fuerte desmenuzado KRAFT Shredded Sharp Cheddar Cheese, cantidad dividida
8 chiles poblanos grandes, asados, pelados, sin semillas ni venas
1/2 taza de crema agria BREAKSTONE'S Sour Cream o la de KNUDSEN

Steps:

  • Calienta el horno a 350ºF.
  • Cocina revolviendo el tocino en una sartén grande a fuego medio, hasta que esté crujiente. Sácalo de la sartén con una cuchara ranurada sin deshacerte de la grasa en la sartén; reserva el tocino. Cocina los plátanos en la sartén revolviéndolos durante 5 min. o hasta que se doren. Transfiérelos a un tazón.
  • Dora la carne molida en la sartén. Incorpórale 1/4 taza de la salsa de tomate. Cuando hierva, retira la sartén del fuego. Agrega el tocino, los plátanos y 3/4 taza del queso; rellena con esta mezcla los chiles. Ponlo en un molde de 13x9 pulgs. Ponle encima la salsa de tomate y el queso restantes.
  • Hornea los chiles 15 min. o hasta que estén bien calientes y se haya derretido el queso. Sírvelos con copos de crema agria.
