Hoppin' John is a traditional peas and rice Southern dish. This recipe uses andouille sausage as the protein and includes other flavorful ingredients such as okra, peppers, celery and tomato. Recipe developed by Food Network Kitchen.

1 tablespoon extra-virgin olive oil
1 12-ounce package fully cooked andouille sausages, sliced 1/4 inch thick
1 10-ounce bag frozen sliced okra, thawed and drained
3 stalks celery, sliced 1/2 inch thick
1 yellow bell pepper, cut into 1/2-inch pieces
1 bunch scallions, roughly chopped (white and green parts separated)
3 cloves garlic, minced
1 tablespoon fresh thyme, chopped
Kosher salt
1 cup long-grain white rice
1 cup frozen black-eyed peas, thawed
2 plum tomatoes, seeded and chopped

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Add the sausage and okra; cook, stirring occasionally, until browned, about 2 minutes. Remove to a plate; cover to keep warm. Add the celery, bell pepper and scallion whites to the skillet. Cover and cook until the vegetables begin to soften, about 2 minutes.
  • Uncover the skillet; stir in the garlic, thyme and 1/2 teaspoon salt. Add the rice and stir to coat. Stir in the black-eyed peas and 2 cups water. Bring to a boil, then reduce the heat to a gentle simmer. Cover and cook until the liquid is absorbed and the rice is tender, about 18 minutes. Remove from the heat and let sit, covered, 5 minutes.
  • Fluff the rice with a fork. Stir in the sausage-okra mixture, the tomatoes and scallion greens.

1 pound smoked beef sausage, cut into bite-size pieces
1 small onion, chopped
3 (15 ounce) cans black-eyed peas, rinsed and drained
2 (10.75 ounce) cans low sodium chicken stock
1 cup water
½ teaspoon cayenne pepper, or to taste
2 cups uncooked instant rice

Steps:

  • Place the sausage and onion into a large saucepan over medium heat, and cook and stir until the sausage begins to brown, about 10 minutes. Stir in the black-eyed peas, chicken stock, water, and cayenne pepper, and bring to a boil. Stir in the rice, cover, and cook, stirring occasionally, until the rice is tender, 20 to 25 minutes.

This is a modification of my father's hoppin' john recipe. The only difference between his and mine is the use of tomatoes. It's a great recipe for the holidays (New Year's) or any time during winter months. There are many versions of this recipe here, but this one is quick so you can throw it together after a long day at work for the whole family to enjoy!

1 pound sage pork sausage
1 (6 ounce) package uncooked long grain and wild rice mix, with seasoning packet
2 (15 ounce) cans black-eyed peas, drained
2 (14.5 ounce) cans diced tomatoes, with liquid
2 (14 ounce) cans chicken broth
2 cups water
salt to taste

Steps:

  • Crumble sausage into a skillet over medium heat and cook until evenly brown.
  • In a large pot, mix the cooked sausage, rice mix with seasoning packet, black-eyed peas, tomatoes, broth and water. Bring to a boil. Reduce heat to low, cover and simmer 20 minutes, or until rice is tender. Season to taste with salt.

2 cups cooked brown rice
2 teaspoons olive oil
1 cup chopped onion
1/2 cup celery, sliced
2 teaspoons garlic, minced
1 teaspoon cajun seasoning
12 ounces smoked turkey sausage, chopped
2 cups chicken broth
2 (15 ounce) cans black-eyed peas, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes, undrained
1 teaspoon hot pepper sauce (to taste)
1/2 cup tomato sauce

Steps:

  • While rice is cooking, sautee onion and garlic with cajun seasoning in olive oil.
  • Add sausage and brown.
  • Add remaining ingredients and bring to boil. Reduce to simmer.
  • Add rice when done and stir to combine.

Mmm...a great fall or early spring day dish. Oh the smell as it cooks. What a great way to use leftover ham.

2 cups black-eyed peas, drained, rinsed
8 cups water
3/4 lb ham, 1/2 inch cubed
1/4 lb bacon, 1/2 inch strip
1 cup onion, diced
1 teaspoon garlic, roasted
1 cup long-grain white rice
1/2 teaspoon dried thyme
1 teaspoon red pepper flakes (or to taste)
1/2 teaspoon sea salt
1/4 teaspoon black pepper, fresh ground

Steps:

  • Put peas in a deep pan cover with 8 cups of water.
  • Bring to a boil on high heat.
  • Lower heat to simmer, cover pot, cook for 45 minutes.
  • (until peas are tender but not mushy) Place ham and bacon in frying pan over medium heat and fry for 5- 7 minutes, drain on paper towel and set aside.
  • Keep 1 tsp bacon fat, add the onions to pan and sauté, stirring often until soft, (4 min) set aside.
  • When beans are ready, drain and save 2 1/2 cups of cooking liquid.
  • Add rice, ham, bacon, onions, roasted garlic, thyme, red pepper flakes, salt and pepper to beans and reserved cooking liquid.
  • Stir well.
  • Return to high heat and bring to a boil.
  • Lower heat and cover.
  • Cook 25 minutes (until rice is done and all liquid has evaporated).
  • Turn off stove and let sit covered for about 15 minutes.
  • Enjoy--.

A popular soup in our family! A southern dish using sausage and black-eyed peas. This is a version from Southern Living Magazine. All you need is cornbread to make this dish complete!

1 lb sausage
1 (14 ounce) tomatoes, diced
1 (12 ounce) tomato sauce
1 medium onion, chopped
1/2 cup celery, chopped
1/2 cup white rice, uncooked
1/2 teaspoon salt
1/4 teaspoon black pepper
4 cups water
1 (13 ounce) black-eyed peas, drained

Steps:

  • Cook sausage, drain and crumble.
  • Place sausage in a large saucepan along with all other ingredients EXCEPT black-eyed peas.
  • Bring to a boil and let simmer about 25 minutes until rice is done.
  • Add drained peas and cook 15 more minutes.
  • Serve with your favorite cornbread. Warmed leftovers are delicious!

1/2 pound sliced bacon, cut into 1-inch pieces
1 small green or sweet red pepper, chopped
2 celery ribs, chopped
6 green onions, sliced
1 cup uncooked long-grain rice
2 cups water
1/4 teaspoon salt
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 bay leaf
1 can (15 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels; discard all but 2 tablespoons drippings. Saute pepper, celery and onions in drippings until almost tender. Add rice, water and seasonings. Cover and simmer 10 minutes. Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.

  • Return Dutch oven to medium heat; add onion, celery and bell pepper. Cook for 5 minutes, stirring often to loosen fond on bottom. Add minced garlic; cook for 30 seconds until fragrant. Add Rotel Tomatoes and Chilies; continue to stir to loosen any remaining fond on bottom of pan. Add black-eyed peas, cooked sausage, thyme, salt, pepper and chicken broth.
  • Cover and simmer over medium low heat for one hour or until peas are tender and creamy. Adjust seasonings, and garnish with chopped chives or green onions. Serve over rice. Yield: 8 servings.
