4 tablespoon(s) flour
1 large yellow onion - chopped
1 large green bell pepper - chopped
2 stalk(s) celery - chopped
8 ounce(s) mushrooms - your chioce
3 clove(s) garlic - diced
4 cup(s) vegetable broth - low salt
1 large tomatoes with juice - diced
6 ounce(s) vegetarian spicy sausge - chopped
1 cup(s) okra - chopped ( optional )
1/2 cup(s) red peppers - roasted -chopped
1 1/2 teaspoon(s) cajun seasoning - or to taste
1 teaspoon(s) fresh cracked black pepper - or to taste
4 large green onions - chopped
1/4 cup(s) fresh parsely - chopped
1 bottle(s) hot sauce - for serving ( your choice )
2 teaspoon(s) fennel seeds - roasted
2 teaspoon(s) fresh rosemary - chopped
1 small poblano pepper - chopped

Steps:

  • Heat the oil in a Large Dutch Oven, add flour and stir till a rue forms, about 5 minutes Add onions, bell pepper, celery, mushrooms, and garlic and cook stirring until vegetables are softened, about 2 minutes
  • Add all remaining ingredients, except for the green onions and parsley, and bring to a boil. Reduce heat and simmer, stirring occasionally, until liquid begins to thicken, then cook an additional 20 minutes. Right at the end, stir in the green onions and parsley.
  • Serve with the hot sauce and a Crusty Bread! ENJOY !!!!!

1 cup(s) wild rice
2 cup(s) water
1 package(s) soy burger crumbles
1 large can whole tomatoes, drained - keep 1/2 cup juice - set aside
3 tablespoon(s) chili powder
2 teaspoon(s) cumin
2 package(s) taco seasoning mix - heat level your choice
2 large corn tortillas - 12 inch packages
2 large cans refried beans, vegetarian - divided
2 large jalapeno peppers - seeded - diced fine
2 cup(s) salsa - your choice on brand
1 pound(s) cheddar cheese - shredded - divided
1 pound(s) monterey jack cheese - shredded - divided
14 ounce(s) can green chile - whole - drained - diced fine
2 bunch(es) cilantro, fresh - chopped

Steps:

  • In a saucepan bring water to a boil. Add rice and stir. Turn heat to low, cover, and simmer for 20 minutes.
  • Preheat oven to 375 degrees
  • Place soy crumbles, tomatoes, reserved tomato juice, chili powder, cumin, green chile, and taco seasoning in a Large Dutch Oven and bring to a boil over medium high heat.
  • Cook and stir, breaking up tomatoes, for 10 minutes.
  • Take 1/2 cup of tomato mixture and spread on bottom of a 9 x 13 baking pan.
  • Place one layer of corn tortillas in a lightly greased 9 x 13 inch baking dish. Layer with one quarter of the beans, jalapeno peppers, rice, salsa, soy mixture, cheddar cheese, monterey jack cheese.
  • Repeat layers with remaining ingredients, beginning with the corn tortillas, and top with remaining Cheddar cheese.
  • Cook in the preheated oven for 15 minutes, or until heated through and cheese is melted.
  • Sprinkle cilantro on top before serving. Serve HOT ENJOY !!!

- spicy bloomin dipping sauce
3 cup(s) mayonnaise
3 cup(s) sour cream
1 cup(s) shredded extra sharp cheddar cheese
1/2 cup(s) chili powder
2 tablespoon(s) horseradish sauce
2 small anniheim chili - roasted and diced fine
1 teaspoon(s) cayenne pepper
- batter for onions
1/3 cup(s) cornstarch
2 teaspoon(s) garlic - minced
2 teaspoon(s) paprika
1 teaspoon(s) jalapeno pepper - diced fine
1 teaspoon(s) salt
1 1/4 teaspoon(s) white pepper
1 cup(s) beef stock
1 3/4 cup(s) all purpose flour
1/2 teaspoon(s) dried thyme
1/2 teaspoon(s) dried oregano
1/2 teaspoon(s) ground cumin
3 teaspoon(s) paprika
2 teaspoon(s) garlic powder
1/4 teaspoon(s) crushed red pepper flakes
1 teaspoon(s) caraway seeds
1 or 2 large sweet vidalia onions

Steps:

  • Prepare the Spicy Bloomin Dipping Sauce first and chill. Combine the first 7 ingredients in a small bowl, mixing well, Chill for 30 minutes.
  • Prepare the Batter... Mix cornstarch, flour, and all remaing ingredients until well blended. Add beef stock, mix well.
  • Cut about 1/4" off top of onion and peel. Cut 12 to 16 vertical wedges into onion, like a pizza slice, but do not cut through the bottom.
  • Plunge the onion into boiling water for 1 minute. Remove from boiling water and plunge into Ice water for 3 minutes. Take it out of the water and gently place the bottom facing down, onto a cookie sheet until it "flowers". It will spread out like a " Flower " on the cookie sheet.
  • Carefully place " opened onion " in batter coating the whole onion. Gently place in fryer basket with " wire basket " spoon and deep-fry at 375 to 400 1 1/2 minutes. Turn over, and fry an additional 1 1/2 minutes, or until golden brown.
  • Salt to taste immediately when removed from oil. Drain on paper towels.
  • Place onion upright in shallow bowl, and serve immediately Serve hot with Spicy Bloomin Dipping Sauce. Enjoy !!!

1/2 pound(s) mussels - cleaned
1/2 pound(s) clams - with juice
1/2 pound(s) fresh shrimp - peeled - medium size
2 1/2 pound(s) assorted whitefish fillets such as perch, red snapper, orange ruffy cod, flounder
1 pound(s) fresh crabmeat - drained - no shells
1 pound(s) scallops - cleaned and halved
6 large garlic cloves - minced
3 cup(s) red potatoes - peeled and diced
1/2 to 2 cup(s) flour
3 cup(s) fish stock - homemade or your choice of store bought
4 can(s) 10 1/2 ounce chicken broth - or your own homemade chicken stock - your choice
2 stick(s) butter
8 slice(s) bacon - diced fine
2 tablespoon(s) extra virgin olive oil
1 cup(s) white onion - diced fine
1 1/2 cup(s) celery - diced fine
1 large leek - diced fine
1 cup(s) red sweet bell pepper - diced fine
1 cup(s) carrot - diced fine
2 teaspoon(s) white pepper
1 teaspoon(s) dried thyme
2 large bay leaves
2 can(s) 12 ounce evaporated skim milk
2 can(s) 8 3/4 ounce cream corn
2 tablespoon(s) hot sauce - or to taste
2 cup(s) heavy cream
2 tablespoon(s) course sea salt - or to taste
2 teaspoon(s) fresh cracked pepper
1 tablespoon(s) fresh dill

Steps:

  • In a large Stock Pot, heat the oil, add the bacon and cook over low heat for 5 minutes. Add the onion, garlic, leek, carrot, celery and potato, and saute over medium heat for 5 minutes, stirring often. Add the butter to the pan, and when melted, add the flour, stirring continually till " cooked ". Add the fish stock and, bring it to the boil, lower the heat and simmer uncovered for 10 minutes until carrots and potato are just tender.
  • Add the remaining spices to the Stock Pot.... Add the fish pieces and cook over medium heat for 5 minutes, stirring frequently. Lastly, add the scallops, shrimps, crab, cream, milk, and parsley. Mix well, and heat for 5 minutes, or until scallops and shrimps are cooked and tender. DO NOT allow to boil
  • Season to taste with salt and pepper, and garnished with dill and serve with a great Crusty Bread. ENJOY !!!!

  • NOTE !!!! 12-15 minutes Cover the pot. Note the time at which the water comes to a boil again. From that point, boil the lobsters for 12-20 minutes or longer, depending on the size of the lobster. 12-15 minutes for 1 lb lobster, 15-20 minutes for a 1 1/2 pound lobster, 20-25 minutes for a 2-3 pound lobster.

1 cup(s) all-purpose flour
1 teaspoon(s) cayenne pepper
2 tablespoon(s) smoked ground cumin
6 - chicken bouillon cubes, crushed
1 1/2 teaspoon(s) course sea salt
1 1/2 teaspoon(s) fresh cracked pepper
2 cup(s) chicken broth
2 cup(s) milk
3/4 cup(s) water
2 teaspoon(s) hot sauce, your choice homemade or store bought.
1 pound(s) angel hair pasta, cooked aldente
4 cup(s) shredded chicken, cooked
1/2 pound(s) smoked bacon, chopped fine
1/2 pound(s) fresh mushrooms, sliced
1/2 cup(s) poblano peppers, chopped fine
1/2 cup(s) jalapeno peppers, chopped fine
1/2 cup(s) ancho chili peppers, chopped fine
1 cup(s) red bell pepper, chopped fine
1 cup(s) yellow bell pepper, chopped fine
1/2 cup(s) fresh fennel, chopped fine
1/2 cup(s) fresh parsely, chopped fine
2 cup(s) saltine crackers, crushed

Steps:

  • Begin by melting 1/2 cup of the butter in a large Dutch Oven, add anchovies to butter and stir to melt the anchovies into the butter.
  • Add flour, cayenne pepper, smoked ground cumin, chicken bouillon, course sea salt, fresh cracked pepper, chicken broth, milk, water, hot sauce and cook over low heat till thickened.
  • Add , pasta, chicken, bacon, mushrooms, poblano, jalapeno, and ancho chili peppers, fennel, and parsley and stir to incorporate all. If needed, add more chicken broth to make mixture " wet ".
  • Place large Dutch Oven in the oven and cover securely. NOTE: *** If using Dutch Oven with Charcoal, follow usual cooking methods and keep the temperature at 250 degrees.
  • Bake at 250* for 1 3/4 hours or till done. With 30 minutes of cooking time left, add crushed saltine crackers mixed with 1/2 cup of melted butter to the top of the casserole and cook till golden brown! Enjoy!

4 large rutabaga - peeled and rough chopped
4 large carrots - peeled - sliced thin
2 large turnips - peeled and rough chopped
2 large leeks - washed - chopped
1 large yellow onion - chopped
2 large shallots - chopped
3 clove(s) garlic - chopped fine ( add more to taste if desired )
1 tablespoon(s) fresh sage - chopped
1 bunch(es) parsley - chopped
3 cup(s) chicken stock ( you can also use beef stock if so desired )
1 tablespoon(s) cumin - ground - or to taste
1/2 cup(s) butter - divided
2 tablespoon(s) extra virgin olice oil
1 teaspoon(s) course sea salt - or to taste
1 teaspoon(s) fresh cracked black pepper
1 teaspoon(s) paprika
1 small jalapeno - chopped fine ( optional )

Steps:

  • Place rutabaga, carrots, turnips, and leeks in a large pan and blanch in boiling water for 4 minutes, remove and set aside. Depending on how You like these, You can have a " Rustic " dish or Smooth it out in a food processor.
  • Sauté onions, shallots, and garlic in 1/4 cup butter until softened. Set aside
  • In a Large Dutch Oven, add 1/4 cup butter, olive oil, and cumin. Heat until melted. Add the flour, cook butter/flour mixture till roux turns golden brown.
  • Add chicken broth. Add sage, onions, garlic, carrots, pepper, jalapeno, and rutabagas. Simmer covered on low 30-40 minutes, or until rutabagas are tender. ( add more stock if needed )
  • Add the chopped parsley and paprika just before serving. Enjoy !!!

1 small red onion, diced
2 medium yellow squash or zucchini, chopped
8 ounces cremini mushrooms, stems trimmed and diced
1 large red, orange, or yellow bell pepper, seeded and chopped
1 jalapeño, seeded and diced, optional
1/2 large bunch (about 3 cups tightly packed) curly leaf kale, stems removed and leaves roughly chopped
3 cloves garlic, minced
2 teaspoons chili powder, plus more to taste
1/2 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper
2 (15-ounce) cans pinto or black beans, rinsed and drained
1 (10-ounce) can diced tomatoes with green chilies, drained
1 (7-ounce) can salsa verde
For the cheddar biscuit
2 1/3 cups (326g) all-purpose flour, divided
1 tablespoon baking powder
1 tablespoon sugar
3/4 teaspoon kosher salt
1/2 teaspoon baking soda
4 tablespoons unsalted butter, cold and cubed
1 1/2 cups buttermilk
1 1/2 cups shredded sharp cheddar cheese, divided

  • Heat the oven: Preheat the oven to 450°F and grease a 9x13-inch casserole dish with cooking spray.

1 pkg ( small ) each of orange, lime, lemon, and raspberry jello
1 1/2 c hot water for each package of jello
1 envelope plain gelatin - knox brand
1/4 c cold water
1 c hot pineapple jiuce
2 c heavy cream - whipped
1/2 c sugar
1 tsp vanilla
2 pkg lady fingers or 1 angle food cake
1 tsp cinnamon, ground

Steps:

  • 1. Dissolve each of the 3 packages jello with the 1 1/2 cups hot water... CHILL and cut in small cubes.
  • 2. Soften the plain gelatin in the 1/4 cup of cold water and dissolve pineapple juice, cool, then fold into the whipped cream which you have beaten with the sugar and vanilla.
  • 3. Combine the cubed jello's with the whipped cream.
  • 4. Line a " Tube " pan with the Lady Fingers and add mixture. *** If you can't find Lady Fingers, You can use an Angle Food Cake... Break the Angel Food cake up into chunks and layer Angle Food Cake then whipped cream/jello mixture then Angle Food Cake then Jello mixture till all is in the pan.
  • 5. CHILL for 6 to 12 hours. Remove and " coat " with more whipped cream.
