This burger was born in Oklahoma out of Depression-era resourcefulness: In the 1920s, cooks at El Reno's Hamburger Inn used onions to stretch hamburger meat. That location has closed, but you can try a version at other El Reno restaurants like Johnnie's Hamburgers & Coneys, Sid's Diner and Robert's Grill. To make one yourself, smash at least half an onion into each patty.

1 1/2 pounds ground beef
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil, plus more as needed
2 onions, very thinly sliced (preferably on a mandoline)
8 slices American cheese
4 hamburger buns
Ketchup, mustard and/or pickle slices, for topping

Steps:

  • Preheat the oven to 250˚ F. Mix the beef with 1 teaspoon each salt and pepper in a large bowl, then form into 8 balls.
  • Heat the vegetable oil in a large skillet over medium-high heat. Add 2 of the beef balls and slightly flatten with a metal spatula. Place a handful of the sliced onions on each patty (you'll use about a quarter of the onions for 2 patties - it will seem like a lot!) and flatten the beef into 1/4-inch-thick patties, pressing the onions into each burger. Cook until browned on the bottom, about 3 minutes. Carefully flip the burgers along with the onions and cook until the onions are browned and tender, about 2 more minutes. Flip the burgers again, along with the onions, and top each with a slice of cheese. Cover and continue cooking until the cheese melts, 30 seconds to 1 minute. Transfer to a baking sheet and keep warm in the oven until serving.
  • Repeat with the remaining beef and onions to make 8 burgers total, adding more vegetable oil to the skillet if needed. Serve 2 burgers on each bun with ketchup, mustard and/or pickles.

Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

1 pound ground chuck
2 onions, shaved (use a mandoline or a very sharp knife to make the thinnest possible slices)
American or pimento cheese
6 buns, split
Mustard

Steps:

  • Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
  • With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
  • Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.

I developed this recipe as a trailer park chef in training. As a poor bachelor trying to feed (Impress) a couple of ladies with not a lot of cash or ingredients in the cupboards. I had eaten a delicacy in OK years prior called an onion fried burger and though good the burgers really lacked flavor both in the meat and flavor . Any who while trying to cook for these ladies I came up with a way of cooking that results in a superior onion burger. Hope you agree.

ground beef
1 medium yellow onion
1 teaspoon garlic powder (to taste)
1 tablespoon dried chili pepper flakes
1 teaspoon season salt (to taste)
1 teaspoon cinnamon (to cover onion)
1 tablespoon minced dried onion
8 slices cheese
4 hamburger buns

Steps:

  • Take onion cut into slices med. to thin slices pop out middle core from slices discard. Take slices and separate into bowl. take cinnamon and coat onion lightly while stirring them with your hand to ensure good coverage to all onions. Set aside.
  • take hamburger and separate with hands and add season salt, chili flakes, garlic powder, also add minced dried onion.
  • the garlic powder season salt I don't have exact measurements just be sensible about taste.
  • mix burger and ingredients with hands and separate into 4 equal portions take portions and roll into balls in hand compressing as you roll then take and set on flat surface and with plate or large saucer press into 1 inch or thicker patties ( I use a cutting board and my palm but I have really large palms and its in the T.P.C.S. guidelines to use your hand as much as possible) :).
  • take patties and set in ungreased frying pan on med- hi heat. Press patties into pan around the edges. Take onions and set in middle of pan.
  • Cook burgers and onions in pan adjusting heat so as not to scorch the outside while leaving inside raw. Mix onions (I use fork and my hand) press the burgers gently to help release the fats into the onions.
  • Flip burgers when they are half done and once burger begins to cook on second side really be vigilant at pressing the grease out of the burgers while mixing the onions
  • You know the onions are getting done when they are darkened really have never had to pull onions out early. Once burgers are fully cooked place generous amount of onions on top of burgers and place 2 slice of cheese on top of that top with bun turn off heat and let cheese melt.

I usually use cheddar cheese, and I like the sesame seeded buns. Sometimes I use a mandolin for the onions and don't have to sweat them. I make these on Saturdays, serve with a salad or fries. One pan and I'm done.

1 large onion
12 oz ground beef 80 % fat
1 pinch salt and pepper
1 Tbsp butter
1 tsp vegetable oil
4 slice american cheese
4 hamburger buns

Steps:

  • 1. Slice onion thin about 1/8 thick, combine with salt and let sit for about 30 minutes. Gather in a towel and squeeze the water out. Toss with pepper.
  • 2. Divide the onions into 4 piles on a baking sheet. Gather beef and season with salt and pepper. Form into 4 balls. Flatten each ball on top of onions and press so the onions adhere to the beef.
  • 3. Heat skillet and add butter and oil. Place burgers in onion side down. Cook for 6-8 minutes until onions are golden. Flip gently and raise heat, cook until well browned.
  • 4. Butter and toast buns, place cheese on bottom and add burger. Top with preferred condiments and pickles.
