PARMESAN HERB BAKED MAHI MAHI
Parmesan Herb Baked Mahi Mahi is the best baked mahi mahi recipe EVER. I would even go as far to say this the best FISH recipe ever. It is THAT good!

Steps:
- Place Mahi Mahi in a gallon-sized Ziploc bag. Combine marinade ingredients and pour into bag with mahi mahi. Press out air, seal, and refrigerate for at least 30 minutes.
- Preheat oven to 400 degrees. In a small mixing bowl, combine Greek yogurt, mayonnaise, parmesan cheese, breadcrumbs, and salt & pepper. Remove mahi mahi from bag and discard marinade.
- Place mahi mahi on a greased 9x13 baking dish and spread yogurt mixture evenly over the top of each filet. Optional: Sprinkle extra breadcrumbs evenly over each filet for an extra crispy topping.
- Bake for 18-20 minutes or until cooked through and topping is golden brown.
- Garnish with chopped green onions, chives, or a lemon slice if desired.

SWEET SESAME MAHI MAHI
Steps:
- Toss the pineapple, cilantro, red onion, and lime juice together in a bowl until evenly mixed; set aside.
- Rub the mahi mahi fillets with the sesame oil to lightly coat.
- Sprinkle the sesame seeds evenly over one side of each fillets; gently press the seeds into the fish to assure they stick.
- Heat the vegetable oil in a large non-stick skillet over medium heat.
- Lay the fillets with the seeded side down into the hot oil; cook for 4 minutes, turn, and continue cooking until the flesh turns opaque and flakes easily with a fork, another 3 to 5 minutes. Serve with the pineapple mixture.

BAKED MAHI MAHI WITH CITRUS-SOY-SESAME SAUCE
This Asian marinade is not only very flavorful but it's also amazingly flexible. You can spice it up by adding a little chili sauce, or make it sweeter with a little honey or orange juice or add ginger or garlic to enhance the flavor. Scramble recipe tester Jennifer Grosman said her son "Gave it 500 thumbs up! I loved the marinade and would have slurped it up with a straw." I use mahi mahi because it's sustainable and affordable but you can swap it for any fish, tofu, or chicken.

- Put the fish in an 8 x 8-inch glass or Pyrex baking dish. In a large measuring cup or bowl, combine the remaining ingredients and pour them over the fish (or tofu or chicken), and flip with a fork to coat.
- Let it marinate on the counter for 10 - 30 minutes if time allows (if time doesn't allow, proceed with the recipe).
- Preheat the oven to 400 degrees. Bake the fish, uncovered, for 20 minutes until it flakes easily. Serve it immediately.
HONEY SESAME MAHI MAHI

- In a skillet melt 1 Tbs of butter over medium heat, add garlic, and sauté 'til tender (watch carefully so that it doesn't burn!).
- Remove from heat and stir in teriyaki sauce, lemon juice, honey and sesame seeds.
- Let cool a few minutes then pour over fish and marinate 30 minutes in refrigerator.
- Heat remaining Tbs of butter in skillet over medium heat.
- Remove fish from marinade and add to pan, sautéing 4-5 minutes per side and basting with marinade.
- Note: I like to toast the sesame seeds before adding them to the mixture for a more pronounced flavor.

- In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
- Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
- Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.

SESAME CRUSTED MAHI MAHI WITH SOY SHISO GINGER BUTTER SAUCE
Mahi mahi fillets are encrusted with black and white sesame seeds, and pan seared. The sauce is rich and creamy, and flavored with soy, ginger, shallots, and shiso (a Japanese herb related to basil and mint).

- In a sauce pan over medium heat, combine shallots, ginger, lemon juice, and white wine. Cook until liquid is reduced to approximately 2 tablespoons. Stir in heavy cream, and bring to light boil. Reduce cream by half; do not burn. Stir in soy sauce, then transfer to blender. Blend on low while slowly adding butter, a few cubes at a time, until all of the butter is emulsified. Roughly chop or tear shiso, add to sauce, and blend for about 10 more seconds. Season to taste with kosher salt and pepper. Keep sauce warm.
- Preheat oven to 425 degrees F (220 degrees C).
- Heat oil in a large saute pan over high heat. Season both sides of the fillets with kosher salt and white pepper. Mix together white and black sesame seeds, and place in a plate or flat dish. Press the TOP side only of each fillet into the mixture, and press seeds into fish so it sticks. Make sure that the crusted sides are evenly crusted with the seeds. When oil is smoking, add fish, sesame seed side down to pan, and be careful of oil splatters. Pan sear fish for about 30 to 45 seconds per side. Place pan into oven, or transfer fish to baking sheet, and cook in oven for about 5 to 6 minutes. Serve sesame crust side up with ginger butter sauce.

Steps:
- Preheat an oven to 400 degrees F (200 degrees C). Spray a shallow baking dish with nonstick cooking spray.
- Pat mahi mahi dry with paper towels. Drizzle with sesame oil, and season with garlic pepper. Press grated ginger and toasted sesame seeds onto both sides of the fish to coat. Place fish on the prepared baking dish.
- Bake in the preheated oven until the fish flakes easily with a fork, 10 to 15 minutes.
