HONEY ROASTED PECANS RECIPE
To make hot, fresh honey roasted pecans, the secret is to thinly coat pecans with honey, and then roast them. It's just that easy!

Steps:
- Gather the ingredients.
- Preheat oven to 350 F. Line an oven safe dish or a baking sheet with parchment paper.
- In a medium bowl, combine the honey and pecans until thoroughly coated. Sprinkle with a pinch of salt and toss once or twice more.
- Bake for up to 15 minutes. Take care not to over-caramelize the nuts, which will taint the honey flavor.
- Cool at least 10 minutes, and serve. Store in a sealed container for up to six months.
- Enjoy!

Steps:
- Grease a 9x13-inch pan with 2 teaspoons butter.
- Combine evaporated milk with sugar in a heavy, large stockpot and place over medium heat. Stir constantly and bring to a boil. Cook the syrup, stirring often, until a candy thermometer reads 235 degrees F (110 degrees C) or a small spoonful of syrup dropped into a glass of cold water forms a soft ball, 5 to 8 minutes.
- Stir pecans and butter into the syrup and continue to cook until solid crystals of candy begin to form on the side of the pot, about 30 minutes. Remove from heat and stir vanilla and almond extracts into candy.
- Pour candy into prepared dish and let cool for 10 minutes before cutting into squares.

- Preheat oven to 350°. Line a 13x9-in. baking pan with foil, letting ends extend up sides; grease foil with 2 teaspoons butter., In a large bowl, cream remaining butter and brown sugar until light and fluffy, 5-7 minutes; beat in egg yolk. Gradually beat in flour. Press into prepared pan. Bake until golden brown, about 15 minutes., Meanwhile, in a large saucepan, combine brown sugar, butter and honey. Bring to a boil over medium heat, stirring constantly; cook and stir 3 minutes. Remove from heat; stir in cream and pecans. Pour over crust. Bake until hot and bubbly, about 30 minutes. - Line a baking sheet or 2 large plates with parchment paper (for cooling the pecans) and set aside.
- Put pecans and honey on a non-stick frying pan and heat over medium-high heat.
- When the honey starts bubbling, reduce heat to simmer.
- Cook, stirring the pecans every 10 seconds, for 4 minutes, or until excess honey evaporates and the pecans look candied.
- Put the candied pecans on parchment paper and spread them apart so they are not touching.
- Let the pecans dry on parchment paper for 24 hours.

- Preheat oven to 375 degrees.
- Mix sugar, salt and allspice in a small bowl and set aside.
- Saute butter and honey in pan and bring to a boil.
- Remove from heat. Add nuts and toss to coat.
- Transfer nuts to a baking sheet lined with aluminum foil.
