Mustardy Salmon in a Packet with Asparagus Recipe image

Delicate asparagus. Flaky salmon. Jaunty mustard. Just wrap them all up in a foil-parchment packet and bake. What comes out is perfectly steamed fish, tender asparagus, and a punchy sauce. The best part? It's ready in twelve minutes with no clean up.

4 tablespoons crème fraîche
4 tablespoons dry white wine
2 tablespoons Dijon mustard
2 tablespoons whole grain mustard
2 bunches (32 stems) asparagus, trimmed and cut in thirds
Kosher salt and freshly ground black pepper
4 boneless skinless salmon filets (about 6 ounces each)

Steps:

  • Preheat the oven to 400°F. Whisk together the crème fraîche, wine, and mustards. Set aside.
  • Tear off four large rectangles of aluminum foil, and four slightly smaller rectangles of parchment. Place the parchment on top of the foil. On each sheet of parchment, place a quarter of the asparagus and season with salt and pepper. On top of each pile of asparagus, place one piece of salmon, and season the fish with salt and pepper. Divide the mustard sauce among the four pieces of salmon, pouring it over the top. Finally, fold the packets of foil so they are sealed up tight with the parchment and fish within. Bake packets on a large rimmed baking sheet in a single layer until fish is cooked through, about 12 minutes. Open packets and serve.

4 salmon fillets (6 oz. each)
sea salt
fresh ground black pepper
2 tablespoons Dijon mustard
2 tablespoons honey
1/2 teaspoon horseradish
1 lb asparagus (trimmed)
2 tablespoons olive oil

Steps:

  • Preheat grill.
  • Season filets with salt and pepper.
  • In a small bowl mix mustard, honey, horseradish and 1 T. olive oil; brush on filets.
  • Mix asparagus with remaining 1 T. olive oil, season lightly with salt and pepper.
  • Place each filet on doubl thickness of aluminum foil ( 12"x12" ), arrange equal amounts of aspargus along side each filet, fold and seal.
  • Grill covered until salmon flakes easily (about 15 min.).

4 sheets aluminum foil (12 x 18 inches)

1 tablespoon cornstarch
1/8 teaspoon white pepper
1 lb fresh asparagus
1/3 cup chopped walnuts

Steps:

  • Preheat oven to 450 degrees.
  • Blend honey, mustard, butter, Worcestershire sauce, cornstarch and pepper; set aside.
  • Center one-fourth of asparagus on each sheet of foil.
  • Top with salmon steaks.
  • Drizzle with honey-mustard sauce.
  • Sprinkle with walnuts.
  • Bring up foil sides.
  • Double fold top and ends to seal packet, leaving room for heat circulation inside.
  • Repeat to make four packets.
  • Bake 17-23 minutes on a cookie sheet in oven.

3 tablespoons olive oil, divided
3/4 teaspoon kosher salt, divided

4 (6-ounce) skin-on salmon fillets
8 teaspoons country-style or whole-grain Dijon mustard
3 tablespoons panko (Japanese breadcrumbs)
1/4 teaspoon smoked paprika
2 tablespoons chopped fresh tarragon

Steps:

  • Preheat oven to 275°F. Line a rimmed baking sheet with parchment paper. Toss asparagus with 2 Tbsp. oil, 1/2 tsp. salt, and 1/4 tsp. pepper on prepared sheet, then arrange in a single layer on one half of baking sheet. Bake asparagus 5 minutes.
  • Meanwhile, spread each salmon fillet with 2 tsp. mustard. Sprinkle fillets with 1/4 tsp. salt and 1/4 tsp. pepper total. Toss panko with remaining 1 Tbsp. oil in a small bowl. Sprinkle panko mixture evenly onto salmon fillets, then dust with smoked paprika.
  • After asparagus has baked for 5 minutes, remove baking sheet from oven. Place prepared salmon fillets skin side down on empty half of baking sheet. Return to oven and bake until salmon is firm but still pink in the center and asparagus is tender, 14-16 minutes more for medium rare salmon. Divide salmon and asparagus among four plates and top with tarragon.

4 sheets aluminum foil, wrap (12-inch by 18-inch)
4 (5 ounce) salmon fillets
1 lb asparagus
1 fresh lemon
fresh ground black pepper
seasoning salt
lemon wedge (to garnish)

Steps:

  • Preheat oven to 450 degrees.
  • Snap the ends off asparagus spears (they will break where tender) and divide into 4 equal portions.
  • Spray the center of each foil sheet with non-stick cooking spray.
  • Place one salmon fillet in the center of each sheet, top with a serving of the asparagus and drizzle with lemon juice.
  • Sprinkle with fresh ground pepper and salt or seasoning blend as desired.
  • Bring up the sides of foil and fold top over twice.
