HONEY BLUEBERRY COBBLER JAM



Honey Blueberry Cobbler Jam image

I work at a farmers market, and honey blueberry jam is my top seller. You've gotta taste it with fresh goat cheese and toasted candied pecans. -Krystal Wertman, Humble, Texas

Yield 5 cups.

Number Of Ingredients 7

5 cups fresh or frozen blueberries, thawed
1 cup apple juice
1 package (1-3/4 ounces) pectin for lower sugar recipes
1 cup honey
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Rinse five 1-cup plastic or freezer-safe containers and lids with boiling water. Dry thoroughly., Place blueberries in a large saucepan; mash blueberries. Stir in juice and pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in honey, nutmeg and cinnamon; return to a full rolling boil. Boil and stir 1 minute. Remove from heat; stir in vanilla., Immediately fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; immediately cover with lids. Let stand at room temperature 24 hours., Jam is now ready to use. Refrigerate up to 2 weeks or freeze up to 12 months. Thaw frozen jam in refrigerator before serving., Freeze option: Freeze up to 12 months. To use, thaw in the refrigerator overnight before serving.

Blueberry Honey Jam image

Honey adds a slightly different flavour to this beautiful and easy jam. Fresh or frozen berries may be used. Adapted from Topp and Howard.

Number Of Ingredients 5

2 1/2 cups blueberries, coarsely chopped (fresh or frozen)
2 1/2 cups sugar
1 cup liquid honey
1 tablespoon lemon juice
85 ml liquid fruit pectin (2 7/8 ounces approximately)

Steps:

  • Place blueberries, sugar, honey and lemon juice into a non-reactive saucepan and bring to a boil, stirring.
  • Boil hard for 2 minutes, stirring constantly.
  • Take off the heat, stir in the pectin and ladle into hot sterilized jars.
  • Seal and process in a hot water bath for 10 minutes.
  • Place hot jars on a towel on your counter and let cool overnight. Check seals.

  • Combine the fruit, honey, and pectin together in a saucepan. Over medium heat, bring the fruit to a simmer, stirring constantly. It will bubble, start to gently foam, and do all the beautiful things jam does!
  • Carefully spoon the jam into the jelly jars, put on a new lid and band, and gently tighten. Flip the jar upside down on the countertop and let it sit for a day. In this time, the hot jam will cool and in doing so, create a suction on the lid - thus, sealing the jar. This is an old method called "hot pack" and so long as the jars are sterilized and the jam is hot, you've nothing to fret. Plus it keeps you from heating up a large water-canner unnecessarily.
  • So that's it. I feel like I should have more to offer you in the way of this recipe, but part of its joy remains in the simplicity of it.
