TURKEY MEATLOAF

For a Thanksgiving dinner any time of the year, this tender and moist turkey meatloaf is perfect.

2 teaspoons vegetable oil
3/4 cup finely chopped onion
1/4 cup finely chopped green bell pepper
2 cloves garlic, finely chopped
1/4 cup shredded reduced-fat sharp Cheddar cheese (1 oz)
1/4 cup Progresso™ Italian style bread crumbs
1 1/2 teaspoons Italian seasoning
1 teaspoon ketchup
1/2 teaspoon salt
1/2 teaspoon pepper
1 egg, slightly beaten
1 1/4 lb ground turkey breast
1/2 cup ketchup
1 tablespoon packed light brown sugar
1 teaspoon yellow mustard

Steps:

  • Heat oven to 350°F. Spray 8x4-inch loaf pan with cooking spray.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Cook onion, bell pepper and garlic in oil 3 minutes, stirring occasionally. Cool.
  • In large bowl, mix cheese, bread crumbs, Italian seasoning, 1 teaspoon ketchup, the salt, pepper, egg and onion mixture. Crumble turkey over mixture; stir just until blended. Pack mixture into loaf pan.
  • Bake 35 minutes. In small bowl, mix 1/2 cup ketchup, the brown sugar and mustard. Spread over meatloaf. Bake 5 minutes longer or until meat thermometer inserted in center reads 160°F. Let stand 10 minutes before cutting.

1 1/2 lbs ground turkey
1 onion, chopped
4 egg whites
1 cup salsa
3/4 cup old fashioned oats, uncooked
1 (7/8 ounce) package vegetable soup mix
1/4 teaspoon ground black pepper
1/2 cup ketchup

Steps:

  • Preheat oven to 350 degrees F.
  • In a large mixing bowl, combine ground turkey, onion, egg whites, salsa, oats, soup mix and black pepper.
  • Press mixture into 9" x 5" loaf pan and spread ketchup over top.
  • Bake in preheated oven until meatloaf is no longer pink in the center and juice is clear, about 60 minutes.
