2 cups turkey drippings, or as needed
¼ cup all-purpose flour
1 cup chicken broth, or more as needed
salt and ground black pepper to taste

Steps:

  • Separate the oil from the liquid in the turkey drippings by pouring the drippings into a clear 4-cup measuring cup. Allow the drippings to settle and separate into oil on top and juices on the bottom. Remove 1/4 cup oil using a kitchen syringe; transfer to a saucepan.
  • Mix flour into the oil in the saucepan; cook and stir over medium-low heat until color changes to a light brown, about 5 minutes. Pour 1 cup juices from the measuring cup into flour mixture (roux); cook and stir, adding more drippings for a thinner gravy, until gravy is heated through and smooth, about 5 minutes. Mix chicken broth into gravy; cook and stir until heated through, adding more broth for a thinner gravy, about 5 minutes.

Pan drippings from roasted turkey
1/2 cup Madeira wine, may substitute sherry, white wine or water
4 tablespoons unsalted butter
3 tablespoons all-purpose flour, may substitute any gluten-free flour
1 1/2 cups turkey or chicken stock, plus more as needed
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • While the turkey rests, make the gravy: Use a fine-mesh strainer to strain the turkey pan drippings into a medium bowl, leaving behind any browned bits, or "fond," stuck to the pan. Press down on the solids to get as much liquid as possible into the bowl; discard the solids. Pour the liquid into a measuring cup or a fat separator and allow the fat to rise to the top. Meanwhile, place the roasting pan across two burners over medium-low heat. When the pan is sizzling, add the wine and stir, scraping up all the fond in the pan. Turn off the heat and pour the wine mixture through a fine-mesh strainer set over a bowl.
  • Ladle or spoon off the fat from the pan drippings and discard; set aside the jus. In a saucepan over low heat, melt the butter. Then sprinkle in the flour and whisk until the flour is completely incorporated and light golden brown, 1-2 minutes. Slowly add the wine mixture, whisking constantly. When it has fully absorbed into the roux, slowly add the reserved jus. Small additions of liquid and continuous whisking are the keys to smooth gravy.
  • Finish the gravy by adding turkey or chicken stock a ½ cup at a time and whisking; taste and adjust the seasoning with salt and pepper as you go. (You'll need a total of 2½-3 cups of liquid to make the gravy.) When the gravy is thick yet pourable and perfectly seasoned to taste, transfer it to a bowl or gravy boat and serve immediately.

FOR THE TURKEY STOCK-
ROAST:
3 ribs celery, chopped
2 carrots, chopped
1 large onion, cut into wedges
4 garlic cloves, smashed
3 lb. turkey wing pieces
ADD:
4 cups chicken broth
4 cups water
FOR THE GRAVY-
COMBINE FOR SLURRY:
1 cup whole milk
6 T. all-purpose flour
ADD:
Chopped turkey wing meat
2 T. apple cider vinegar
Salt and pepper to taste

Steps:

  • Roast celery, carrot, onion, garlic,and turkey wings in a large ovenproof saute pan for 1/4 hours. Add 2 cups broth and roast an additional 45 minutes. Transfer pan to the stovetop, add remaining broth and water, and bring to a boil. Reduce heat and simmer 1 hour, or until liquid is reduced to about 4 cups. Remove and reserve wing pieces, then strain and defat stock, discarding vegetables. When wings are cool enough to handle, remove the meat from them and chop. Combine milk and flour. Bring stock to a boil in the pan. Whisk in slurry and simmer 5 minutes. Add the chopped turkey and vinegar; season with salt and pepper.

3 cups liquid (turkey juices, canned chicken broth or water)
1/3 cup Gold Medal™ all-purpose flour
Browning sauce, if desired
1/4 teaspoon salt
Dash pepper

Steps:

  • After removing turkey from roasting pan, pour drippings (turkey juices and fat) into bowl or glass measuring cup, leaving brown bits in pan. Let drippings stand 5 minutes to allow fat to rise. Skim 6 tablespoons fat from top of drippings and return to pan; discard any remaining fat. Add enough broth or water to remaining drippings to measure 3 cups; reserve.
  • Stir flour into fat in pan, using wire whisk. Cook over low heat, stirring constantly and scraping up brown bits, until mixture is smooth and bubbly; remove from heat.
  • Gradually stir in reserved 3 cups drippings. Heat to boiling, stirring constantly. Boil and stir 1 minute or until gravy thickens. Stir in a few drops of browning sauce if a darker color is desired. Stir in salt and pepper.
