Shape into six patties. , In a large skillet, cook patties over medium heat for 6 minutes on each side or until meat is no longer pink, turning occasionally. Freeze option: Prepare uncooked patties and freeze, covered, on a plastic wrap-lined baking sheet until firm. Transfer patties to a resealable plastic bag; return to freezer. To use, cook frozen patties as directed, increasing time as necessary for a thermometer to read 160°.

Steps:
- Crush Fennel Seeds (1 teaspoon) with the bottom of a glass or chop with a knife to break apart the seeds.
- Combine crushed fennel with the Garlic (3 clove), Sun-Dried Tomatoes (2 tablespoon), Kosher Salt (1 1/2 teaspoon), Dried Sage (1 tablespoon), Ground Thyme (1 teaspoon), Coarse Black Pepper (1 teaspoon), Crushed Red Pepper Flakes (1/4 teaspoon) and Water (1/4 cup).
- Add Ground Pork (2 pound) to a large bowl and add seasonings. Mix until seasoning is evenly incorporated but do not overmix. I find it best to use my hands.
- Portion mixture into 2.5 ounces each. Form into 3 1/2-inch patties either using your hands or pressing into a ring mold. Place on a flat plate or tray and separate layers with parchment.
- Add 1 tbsp of Canola Oil (2 tablespoon) to your favorite medium-size skillet ( I used cast-iron) and heat over medium until hot. Add patties to the pan without overcrowding and cook for 4-5 minutes per side until browned and cooked through.
- Remove from pan and serve immediately. Or keep warm in a low oven and repeat with remaining oil and uncooked patties.

Steps:
- Place pork, fennel seeds, orange zest, salt, black pepper, Italian seasoning, red pepper flakes, and nutmeg into a bowl and stir very lightly with a fork to combine. Do not overmix. Cover and refrigerate overnight.
- Check seasonings before using: Shape about 2 teaspoons sausage into a small patty and fry until brown in a skillet over medium heat. Let cool 1 to 2 minutes and taste for seasoning.
- Cover a cutting board with plastic wrap. Divide sausage into 6 equal pieces, roll into a balls, and wrap each ball with plastic wrap. Press flat into patties and discard plastic.
- Place a heavy skillet, such as a cast iron skillet, over medium-high heat. Cook patties in hot skillet until meat is no longer pink in the center and the sausage is browned, about 3 minutes per side. Serve immediately.

- Combine all ingredients except oil in a large bowl until well blended.
- Shape mixture into 2 inch balls. Flatten each ball into a patty 4 inches in diameter.
