2 to 2-1/2 cups all-purpose flour, divided
1/2 teaspoon salt
3 large eggs, lightly beaten
1 tablespoon cold water
1 tablespoon canola oil

Steps:

  • Place 2 cups flour and salt on a pastry board or in a deep bowl. Make a well in a center of the flour; add eggs and water. Gradually mix with hands or a wooden spoon until well blended., Gather into a ball and knead on a floured surface until smooth, about 10 minutes. If necessary, add remaining flour to keep dough from sticking to surface or hands. Divide the dough into thirds. On a lightly floured surface, roll each section into a paper-thin rectangle. Dust top of dough with flour to prevent sticking while rolling. Trim the edges and flour both sides of dough. , Roll dough, jelly-roll style. Using a sharp knife, cut 1/4-in. slices. Unroll noodles and allow to dry on paper towels before cooking. , To cook, bring salted water to a rapid boil. Add 1 tablespoon oil to the water; drop noodles into water and cook until tender but not soft, about 7-10 minutes. ,

This is my late mother-in-laws recipe for noodles -- her favorite for flavor and because they don't spring back when you roll them. At every family gathering she'd make the best Chicken and Noodles, dropping her prepared noodles into homemade chicken broth along with shredded cooked chicken, then serving them over mashed potatoes. I've made them many times and everyone loves them. When making multiple batches, and lacking counter space, I hang the rounds on clean plastic hangers to dry.

2 eggs
3 tablespoons butter, melted and cooled
1 ¼ cups all-purpose flour
¼ teaspoon baking powder
1 teaspoon salt

Steps:

  • In a large bowl, whisk the eggs and melted butter together with a fork. Stir in the flour, baking powder and salt until dough becomes stiff. Knead on a lightly floured surface or in the bowl for a few minutes to blend completely. Divide the dough into thirds. On a lightly floured surface, roll each piece into a sheet about 1/16 of an inch thick. Place each sheet onto a dry cloth and set aside for 30 to 45 minutes to partially dry.
  • When the noodle sheets are somewhat dry, roll up one at a time into a loose spiral and cut into strips as wide as you want using a sharp knife. Spread out the noodles to dry for about 1 hour before cooking or storing in freezer containers. To use frozen noodles, thaw in the container before using.
  • To cook the noodles, drop into rapidly boiling water or broth, and cook until tender, 7 to 10 minutes.

Homemade noodles from the Pioneer Woman blogs. This description will be a work in progress to discover what my old memory remembers of when I was a kid. Formica tables, rolled noodles, folded over a wood dowel clothes rack, throwing the noodles in the area to help dry - [of course Mom was in the kitchen]. First recipe used in was added basic chicken and stock for Chicken Noodle soup. Did remind me of my Mom's chicken soup. Someday soon we will be fusing Fried Chicken memory in my head with the "Chicken & Waffles" I have heard about through some googgle searches. These noodles are going to be used in new recipe adapted from Rossario's Restaurant's recipe for the "3 P's" - Peas, Pruscitto, and Orcettee.

  • roll into long roll and cut strips square or diagonally.
  • boil 2 or 3 minutes in salted water, drain, toss with melted butter.

This is our family's number-one favorite part of the Thanksgiving meal. The noodles take the place of the gravy, they get dumped over EVERYTHING! They are a great thick and tasty noodle.

4 eggs
1 teaspoon salt
1 teaspoon ground black pepper
2 cups all-purpose flour
4 cups beef broth

Steps:

  • Beat the eggs and mix in the salt, pepper and flour. Divide the dough into two halves. Roll out the halves to 1/4 inch thick. Let dry for at least 2 hours. Cut the noodles into 1/2 inch to 1 inch wide and as long as you want strips.
  • Drop the noodles into the boiling stock of your choice and boil until soft.

This is my beloved Grandmother's recipe. I have made noodles from scratch mixing, rolling, and cutting by hand. Today I use a dough mixer and pasta cutter to save time.

1 gallon chicken stock
4 bone-in chicken breast halves
3 cups all-purpose flour
¼ teaspoon salt
3 eggs
2 tablespoons water, or as needed
½ teaspoon ground black pepper
1 pinch salt

Steps:

  • Bring chicken stock to a boil; cook chicken breasts at a boil until no longer pink in the center, 15 to 20 minutes. Remove chicken, cool, and cut meat from bone; keep chicken stock at a low simmer.
  • Mix flour and 1/4 teaspoon salt together using the dough hook attachment in the bowl of a stand mixer on Low; add eggs and water, 1 tablespoon at time, until dough holds together.
  • Split dough in half. Roll 1 dough half on a lightly floured surface to 1/8-inch thickness. Cut dough into noodles 2 to 3-inches long x 1/4-inch wide using a sharp knife dipped in flour or a fettuccine pasta cutter. Repeat with other dough half.
  • Return chicken to the simmering stock; add noodles. Season stock with black pepper and 1 pinch salt. Cook soup until noodles are cooked through, 15 to 25 minutes.

1/2 teaspoon salt
2 large egg yolks
1 large egg
1/3 cup water
1 tablespoon olive oil
6 cups chicken broth

Steps:

  • In a small bowl, combine the flour and salt. Make a well in the center. In another bowl, beat the egg yolks, egg, water and oil; pour into well. Stir to form a stiff dough., Turn dough onto a well-floured surface; knead 8-10 times. Divide into thirds. Roll each portion to 1/8-in. thickness. Cut noodles into 1/4-in. strips; cut the strips into 2-in. lengths. Cook immediately in boiling broth for 5-7 minutes or until tender; drain.

3 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking powder

Steps:

  • Beat the eggs and water together in a bowl. Sift the flour, salt, and baking powder into a separate large bowl and make a well in the center. Pour the beaten eggs into the well, then stir in the flour mixture until a soft dough forms.
  • Roll the dough into a very thin layer on a lightly-floured surface; cut into 1/2 inch strips. Allow to dry at least 4 hours before using.
