Pinch of Salt & Pepper

Steps:

  • Simply place all your ingredients into a jar with a lid and shake to mix.

Homemade Mexican Seasoning is easy to make with just a few simple ingredients, and the flavor is much richer than the store-bought taco seasoning packets. Plus it's completely customizable. Make the mix ahead of time and use it in your favorite Mexican dishes.

3 tablespoons chili powder
1 teaspoon garlic powder
1 teaspoon dried oregano
2 teaspoons paprika
3 tablespoons ground cumin
1/2 tablespoon Kosher salt
2 teaspoons black pepper
1 teaspoon onion powder
1/4 teaspoon cayenne powder (optional)

Steps:

  • In a mason jar, add chili powder, garlic powder, oregano, cumin, paprika, onion powder, and salt & pepper.
  • Cover with the lid and shake to mix well.
  • Use immediately or store for up to 6 months in a cool and dry place.

Don't buy MSG-loaded Adobo, Sauzon, or store-bought fajita seasoning. Combine with oil and use it to marinate corn, chickpeas, potatoes, and beans for a crispy healthy snack, and it's also great for tacos, fajitas, quesadillas, and I swear by this seasoning for my arroz con frijoles. It works for other Latin American foods too.

2 tablespoons chili powder
4 teaspoons paprika
4 teaspoons cornmeal
2 teaspoons cumin
2 teaspoons oregano
1 teaspoon onion powder
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper

Steps:

  • Carefully mix, by hand, all the spices in a bowl until they are all perfectly melded, should be a light reddish-brown color.
  • Yields 3.4 ounces, have an airtight bottle or container ready to store inches.
  • Feel free to substitute the onion powder for garlic powder for a hotter taste, and cilantro for coriander, and adjust the cayenne according to how hot you would like it.

1/4 cup kosher salt or 1/4 cup sea salt
1 teaspoon dill weed
1 teaspoon black pepper
1 teaspoon onion powder
1/4 teaspoon garlic salt
1/4 teaspoon curry powder
1 tablespoon bottled grated fresh lemon rind
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon crushed oregano leaves
1/2 teaspoon dried marjoram
1/2 teaspoon rubbed sage

Steps:

  • For MEXICAN SEASONING MIX:.
  • Combine ingredients (add 1/2 teaspoon SALT-SPICE) and store in covered container at room temperature. The spice mixture keeps for one year. Makes 5 1/2 tablespoons.
  • For SALT-SPICE:.
  • Combine all ingredients, stirring well. Store the Salt-Spice in a pepper grinder and use it to season foods. Makes about 1/2 cup.

1/4 cup pure chile powder (read NOTE*)
1 tablespoon Mexican oregano
1 teaspoon ground cumin or 1 teaspoon cumin seed
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon salt-free onion powder
1/2 teaspoon salt-free garlic powder
1 teaspoon cayenne pepper
1/2 teaspoon ground cloves
1/4 teaspoon ground allspice

Steps:

  • *NOTE: Pure chili powder is just that. Ground up roasted dry chilis blended to a fine powder. It is not the store bought chili powder mix that includes other herbs and spices. The spiciness of this seasoning mix depends on the chilis you select.
  • Combine all ingredients in mini-blender, coffee mill or food processor. Process until well blended.
  • Store in clean, dry airtight container. Shelf life is about 3 months. Shake well before using. Keep from heat, light and moisture.
