INSTANT POT BAKED BEANS
Instant Pot Baked Beans are the perfect side dish for your next get together. The Instant pot infuses all the flavor into the beans, making them the best tasting beans you ever had.

Steps:
- Cut the bacon into bite size pieces and toss into the instant pot on sauté mode. Sauté the bacon until crispy. Remove the bacon and set aside. Keep 2 tablespoons of bacon grease in the instant pot.
- Add the beans, vegetables, spices, vinegar, Worcestershire, garlic and 3 1/2 cups of water and pressure cook on high for 50 minutes. Let pressure release naturally for 10 minutes after finished cooking.
- Add the honey, brown sugar, bacon and tomato sauce. Place on sauté mode and bring it to boil. In a cup, mix the cornstarch and remaining water into a slurry. Stir the slurry into the boiling beans.
- Let sit and cool before serving.

- Set instant pot to saute mode. Add bacon, and cook until almost crispy.
- Stir in onion, jalapenos, and bell pepper. Cook stirring occasionally until onion is translucent.
- Add the bacon.
- Add garlic and cook for 1 more minute.
- Stir in beans, maple syrup, and ketchup. Seal the pressure valve.
- Turn off saute mode, and set to high pressure. Cook for 40 minutes. Allow pressure to release for 20 minutes naturally.
- Then manually reduce the remaining pressure.

- Sort through your beans and remove any funny looking ones. Give them a thorough rinse in a colander.
- Add dried beans, 8 cups water, and teaspoon of salt to the Instant Pot. Secure lid and cook on high pressure for 25 minutes. When done, press Off and allow pressure to naturally release. When lid can be removed, drain and rinse beans. Clean pot and return to pressure cooker.
- Set Instant Pot to sauté mode and add your bacon pieces. Cook bacon until crispy, stirring occasionally to prevent burning. When done, transfer cooked bacon pieces to a separate plate (will be added back in at the very end) and keep all bacon grease in the Instant Pot.
- Add bell pepper and onion to the bacon grease and cook on saute mode for about 5-10 minutes, scraping the bottom of the pot to release anything that may have stuck to the bottom. Because of the large amount of grease, vegetables will not brown but they will get soft.
- Whisk together remaining ingredients except for the tomato sauce in a small bowl.
- Add partially cooked and rinsed beans, tomato sauce, and remaining ingredients (not cooked bacon pieces) to Instant Pot. Gently stir to combine. Close and secure lid. Cook on high pressure for 15 minutes. When done, turn off but let beans release pressure naturally. When pressure is gone and lid can be opened, remove lid and gently stir.
- Stir in cooked bacon. Beans will thicken as they cool. Serve and enjoy!

INSTANT POT® BAKED BEANS
This recipe was passed down through my French Canadian family from my grandmother, to my mother and then to me many years ago. It traditionally takes hours to make, as we let the beans slow cook overnight in the oven on low heat. I decided to try and transform it into a much quicker Instant Pot® recipe with great success! With this method, you don't even have to presoak the beans. These are even better the next day, and they freeze well, too.

- Combine water and beans in a multi-functional pressure cooker (such as an Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method for 20 minutes; quick-release remaining pressure according to manufacturer's directions. Unlock and remove the lid. Drain and rinse the beans with cold water and set aside. Rinse and wipe out Instant Pot® insert and place back into the pressure cooker.
- Turn on Instant Pot® and select Saute function. Heat olive oil until shimmering, 2 to 3 minutes. Add salt pork, bacon, and onion and briefly cook until fat begins to render, 1 to 2 minutes. Pour in 1/2 cup water and scrape any brown bits off the bottom. Turn Instant Pot® off.
- Whisk together ketchup, molasses, brown sugar, mustard, and remaining 1 cup water in a small bowl. Return cooked beans to the pot along with the ketchup mixture. Gently stir to combine. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method for 20 minutes; quick-release any remaining pressure according to manufacturer's directions. Unlock and remove the lid. Beans will thicken upon cooling. Serve immediately or freeze portions for later.

- With Instant Pot set to sauté mode, cook the bacon pieces until fat is fully rendered. For this recipe, I will cook the bacon until it is crispy. Be sure to stir frequently to prevent burning. Once done, remove cooked bacon pieces and set aside to be used later. Keep the grease in the Instant Pot.
- Still on sauté mode, add chopped onion and red bell pepper. Stir to coat with fat and then allow to cook, undisturbed, for about 5-10 minutes until they start to get soft and brown. Add garlic, stir, and allow to cook for another few minutes.
