2 russet potatoes, peeled
3 tablespoons clarified butter
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 pinch paprika, or to taste

Steps:

  • Shred potatoes into a large bowl filled with cold water. Stir until water is cloudy, drain, and cover potatoes again with fresh cold water. Stir again to dissolve excess starch. Drain potatoes well, pat dry with paper towels, and squeeze out any excess moisture.
  • Heat clarified butter in a large non-stick pan over medium heat. Sprinkle shredded potatoes into the hot butter and season with salt, black pepper, cayenne pepper, and paprika.
  • Cook potatoes until a brown crust forms on the bottom, about 5 minutes. Continue to cook and stir until potatoes are browned all over, about 5 more minutes.

1/4 teaspoon ground black pepper
5 medium baking potatoes, like russets (about 4 pounds), scrubbed
1/4 cup vegetable oil
3 tablespoons unsalted butter
1 cup diced yellow onions
2 teaspoons minced garlic
1 teaspoon Essence, recipe follows
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1 tablespoon dried leaf oregano
2 1/2 tablespoons paprika
1 tablespoon dried thyme
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper

Steps:

  • Place the whole potatoes in a large pot, cover with water, and bring to a boil. Lower the heat and simmer until half-cooked and almost tender, about 15 minutes. Drain and let sit until cool enough to handle. Slip the skins from the potatoes and cut into 1/2-inch dice.
  • Heat the oil and melt the butter in a skillet over high heat. Add the onions and cook, stirring, for 2 minutes. Add the garlic, and cook, stirring, for 20 seconds. Add the potatoes, Essence, thyme, salt, and pepper, and cook without stirring, but shaking the pan occasionally to keep from burning, until the potatoes begin to color and crisp on the underside, about 4 minutes. Turn the potatoes with a spatula being careful not to mash, and continue cooking until uniformly golden.
  • Remove from the pan and serve hot.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

2 medium russet potatoes, shredded
½ medium onion, finely chopped
¼ cup all-purpose flour
1 egg
1 cup oil for frying, or as needed
salt and pepper to taste

Steps:

  • Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
  • Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
  • Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.

  • In a large saucepan, cover potatoes with water. Bring water to a boil and cook until tender, about 20 minutes. Let cool in refrigerator overnight.
  • The next morning, heat butter in a large skillet or frying pan. Shred potatoes and add to pan. Season with salt and pepper. Cook until golden brown on bottom, flip and brown on other side.

I love homemade hash browned potatoes. Sometimes good hash browns are hard to come by in a restaurant so I came up with my own recipe. I use red or Yukon Gold potatoes for these. For best results, prepare the potatoes using my recipe #77231 recipe.before making these. Figure one medium potato per serving. This gives the potatoes a jump start and prevents them from absorbing a lot of the grease and sticking together. These are really good with gravy on them. Prep time does not include the time for preparing potatoes Cook time is approximate. If you are using a skillet that is NOT non-stick, such as aluminum, preheat it on medium-high heat for 2-3 minutes with nothing in it. Not even oil. 4 slices thick sliced bacon
2 medium prepared potatoes (appx 1 1/2 cups)
1/2 cup chopped onions or 1/2 cup shallot
salt and pepper (to taste)

Steps:

  • Dice or shred the potatoes.
  • Fry bacon in a non-stick skillet until crisp.
  • Remove bacon from the skillet and drain on a paper towel.
  • If there is too much grease, pour some of it into a measuring cup in case you need to use it later.
  • Add the chopped onions to the bacon grease.
  • Saute' on medium heat until the onions are tender and slightly brown.
  • Add the potatoes and mix thoroughly with the onions, using an egg spatula.
  • Fry the potatoes turning them over frequently for even cooking.
  • If potatoes start to stick to the bottom of the skillet, add more bacon grease or vegetable oil (about 1 tablespoon) Fry until potatoes are a nice golden brown.
  • Serve with the fried bacon.

1/2 medium sweet red pepper, cut into 1-inch strips, optional

1 small onion, finely grated
1 tablespoon flour
1 egg, beaten

  • Put the potatoes and onion in a cloth and wring out the moisture.
  • Lightly mix in the rest of the ingredients.

5 tablespoons unsalted butter
1 1/2 pounds boiling potatoes, peeled and 1/2-inch diced
1 1/2 cups chopped yellow onions (2 onions)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced fresh flat-leaf parsley
2 tablespoons minced scallions (white and green parts)

Steps:

  • Melt the butter in a large (10 to 12-inch) saute pan. Add the potatoes, onions, salt, and pepper and cook over medium-low heat for 15 to 20 minutes, turning occasionally with a flat spatula, until the potatoes are evenly browned and cooked through. (Allow the potatoes to cook for 5 minutes before turning.) Turn off the heat and add the parsley and scallions. Serve hot.

1 small onion, chopped (about 1 cup)
1 cup chopped scallion (about 5 medium)
1 teaspoon salt

1/4 lb bacon (4 to 6 slices)

Steps:

  • In a large saucepan of simmering salted water, cook the potatoes until tender, about 30 to 35 minutes. Drain well, return to the saucepan, and shake over medium heat until they are dry. Remove from the heat and when they are cool enough to handle, peel them, and cut into 1/2-inch dice.
  • In a large bowl, toss the potatoes, onion, scallions, salt and pepper together.
  • In a large skillet, preferably nonstick, cook the bacon over medium heat until crisp, about 10 minutes. Reserving the fat in the skillet, drain the bacon on paper towels; crumble and set aside.
  • Add the butter (if you are not using a nonstick skillet, it may be necessary to add more butter to keep the potatoes from sticking) to the bacon fat and heat over medium-high heat, Add the potato mixture and press firmly into the pan with a spatula. Cook, flipping frequently, until the potatoes brown, 10 to 15 minutes.
  • Serve hot with crumbled bacon on top.
