One 14-ounce can sweetened condensed dairy milk or coconut milk
1/2 cup unsweetened nut or seed butter (I love cashew butter, almond butter and tahini the best!)
1 tablespoon vanilla extract
1/2 teaspoon kosher salt
3 1/2 cups quick-cooking oats
1 cup roasted salted nuts
3 tablespoons flax seeds, or a mix of different seeds (chia, millet, sunflower, etc.)
3/4 cup candy-coated chocolates, such as M&M's or muted-color ones from Whole Foods or Trader Joe's
1/2 cup dried apricots

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-inch square baking dish with enough parchment paper so that it comes up the sides and hangs over by 1 inch.
  • Stir together the condensed milk, nut or seed butter, vanilla and salt in a large mixing bowl. Add the oats, nuts and seeds and mix to combine. Scrape into the baking dish and spread it out evenly. Press the candy-coated chocolates and dried apricots into the top. Bake until lightly browned around the edges, about 25 minutes. Let cool in the pan for 10 minutes, then remove to a rack to cool completely. Chop into squares. Store in an airtight container in the refrigerator for up to a week. You can also freeze these.

2 cups old-fashioned oatmeal
1 cup sliced almonds
1 cup shredded coconut, loosely packed
1/2 cup toasted wheat germ
3 tablespoons unsalted butter
2/3 cup honey
1/4 cup light brown sugar, lightly packed
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon kosher salt
1/2 cup chopped pitted dates
1/2 cup chopped dried apricots
1/2 cup dried cranberries

Steps:

  • Preheat the oven to 350 degrees F. Butter an 8 by 12-inch baking dish and line it with parchment paper.
  • Toss the oatmeal, almonds, and coconut together on a sheet pan and bake for 10 to 12 minutes, stirring occasionally, until lightly browned. Transfer the mixture to a large mixing bowl and stir in the wheat germ.
  • Reduce the oven temperature to 300 degrees F.
  • Place the butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute, then pour over the toasted oatmeal mixture. Add the dates, apricots, and cranberries and stir well.
  • Pour the mixture into the prepared pan. Wet your fingers and lightly press the mixture evenly into the pan. Bake for 25 to 30 minutes, until light golden brown. Cool for at least 2 to 3 hours before cutting into squares. Serve at room temperature.

2 cups rolled oats
½ cup shredded coconut
½ cup honey
2 tablespoons creamy peanut butter
1 teaspoon vanilla extract
⅛ teaspoon salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
  • Spread the oats and coconut evenly across a baking sheet.
  • Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
  • Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
  • Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.
