I regularly mix up my own spice blends. I have recipes of Indian and Mexican spice blends, too. But my favorite is this Chinese five spice version with its strong anise flavor. It's so convenient to make this mix from pantry staples I have on hand. -Lydia Scott, Englehart, Ontario

Number Of Ingredients 5

2 tablespoons aniseed
2 tablespoons fennel seed
2 tablespoons ground cinnamon
2 tablespoons whole cloves
2 tablespoons whole peppercorns

Steps:

  • In a spice grinder or with a mortar and pestle, combine all ingredients (in batches if necessary); grind until mixture becomes a fine powder. Store in an airtight container for up to 6 months.

Can be used on all types of meat, seafood and poultry. Not Emeril's, but a good subtitute. Can add a smidge of ground corriander and/or fennel.

1 tablespoon light brown sugar
1 tablespoon kosher salt
1 teaspoon cayenne pepper
1/2 teaspoon garlic powder

  • In a small bowl, combine all of the ingredients, pressing out any lumps of brown sugar.

2 tablespoons ground cinnamon
2 tablespoons whole cloves
2 tablespoons peppercorns

Steps:

  • 1. In a spice grinder or with a mortar and pestle, combine all ingredients (in batches if necessary); grind until mixture becomes a fine powder. Store in an airtight container for up to 6 months.
  • My update Note: I play with this and ended up mixing half of this with a half cup of brown sugar and rubbing it on raw chicken. I then sprinkled soy sauce over the top. Considering that chinese five spice is so expensive, it's really better that I can make it at home. This way, I'm not out seven dollars for a spice I might only use a couple of times.
  • I made a variation from the original and added a tablespoon of powdered ginger to the mix instead of the pepper. hope this helps somebody.

An ancient spice mix used in Chinese cooking that combines sweet cinnamon and cloves, fennel seeds and star anise, and tongue-tingling Sichuan pepper

Number Of Ingredients 5

2 tbsp cinnamon or 2 cinnamon sticks
1 tbsp fennel seed
6 star anise
2 tsp Sichuan peppercorn
1 tsp whole clove

Steps:

  • Toast the whole spices in a small pan until they are aromatic and have turned a shade or two darker. Don't be tempted to skip this stage, as it really enhances the flavours.
  • Tip into a spice grinder (or use a pestle and mortar), then add the ready-ground spices and dried herbs if required, and crush to a fine powder. Store in a sealed jar for up to six months.

AUTHENTIC CHINESE 5-SPICE PEKING DUCK

An authentic Chinese roasted duck that will leave you pleasantly surprised. Crispy skin and subtle flavors make this a great introduction to an unfamiliar bird.

Number Of Ingredients 9

1 (4 -6 lb) frozen whole duck
3 tablespoons honey
4 tablespoons xiao xing chinese rice wine (aka shao hsing)
2 tablespoons white vinegar
3 slices of unpeeled fresh ginger
3 tablespoons cornstarch
3 tablespoons Chinese five spice powder, for rub
4 tablespoons soy sauce
8 cups water

Steps:

  • thaw duck overnight in refrigerator.
  • remove giblets and trim excess fat from tail area or anywhere hanging.
  • pierce chopstick or skewer under wing and bring through to other side to pierce through under the other wing on the other side in order to give you a way to dunk and hang duck. wings may be removed if desired.
  • in large wok or pot bring water to a boil.
  • add in ginger, vinegar, soy sauce, xiao xing, and honey and stir to dissolve honey completely.
  • make a slurry with cornstarch (mix with water) then add to boiling mixture.
  • dunk duck into boiling mixture and spoon liquid over duck for a couple of minutes making sure you completely moisten duck and render some fat.
  • repeat process for another couple of minutes.
  • immediately hang duck in cool room with a fan on high pointed directly on duck. make sure you put a pot or similar under duck to catch drippings.
  • rotate duck to ensure even drying. should take about 5 hours. skin will become taunt and tight.
  • after 4-6 hours, rub duck with 5-spice powder to taste.
  • heat oven to 375 degrees.
  • place duck onto roasting or cooling rack on middle or top rack of oven with a large pan filled with about 2 inches of water on bottom rack of a 375 degree oven. this will catch any drippings, keep your oven clean, and keep duck moist.
  • roast uncovered for about 1-1 1/2 hours rotating it 2-3 times.
  • check internal temperature for doneness. mine was perfect at 175 degrees in the breast. note that convection ovens will cook duck quite fast.
  • remove duck and rest 10 minutes before serving whole or chopping Chinese style on the bone.

4 large pork chops
1 tablespoon Chinese five spice powder
2 tablespoons soy sauce
2 tablespoons garlic-infused olive oil (or use plain olive oil and 1tsp minced garlic)

Steps:

  • Arrange the pork chops in a single layer in a non-metallic baking dish.
  • Sprinkle on the five spice powder, then drizzle over the soy sauce and garlic oil.
  • Using clean hands rub the mixture into the meat.
  • Cover the dish with plastic wrap and chill for 2 hours.
  • Preheat the oven to 325°C/160°F.
  • Uncover the dish and bake for 30-40 minutes or until the meat is cooked through and tender.
  • Serve immediately with a green leafy vegetable or broccoli and plain boiled or steamed rice.
