SAFFRON CHICKEN BROTH WITH SPINACH MATZO BALLS



Saffron Chicken Broth with Spinach Matzo Balls image

Saffron chicken broth
6 pounds chicken wings
16 cups water
1 1/2 pounds onions, quartered
6 bay leaves
1 tablespoon coarse kosher salt
1 1/2 teaspoons saffron threads
1/2 teaspoon whole black peppercorns
Spinach matzo balls
4 large eggs
1 1/4 teaspoons coarse kosher salt
1/2 teaspoon ground black pepper
1 cup unsalted matzo meal
1 10-ounce package frozen chopped spinach, thawed, squeezed dry

Steps:

  • For saffron chicken broth:
  • Bring all ingredients to boil in very large pot. Reduce heat to medium-low, partially cover, and simmer 2 hours, stirring occasionally. Strain broth into another pot. Spoon 1/4 cup fat from top of broth and place in medium bowl; add 1/4 cup broth. Cool fat mixture and reserve for matzo balls. Remove enough meat from chicken wings to measure 1 generous cup. Finely mince chicken; reserve for matzo balls. Chill remaining broth until ready to use. (Can be made 2 days ahead. Cover and keep chilled.)
  • For matzo balls:
  • Whisk eggs, salt, and pepper into chicken fat mixture. Mix in matzo meal, then spinach and reserved minced chicken. Cover and chill until firm, at least 1 hour and up to 1 day.
  • Bring large pot of generously salted water to boil. Using wet hands and about 2 tablespoons for each, shape matzo mixture into 16 balls; drop into boiling water. Reduce heat to low, cover pot, and simmer until tender, about 45 minutes. Using slotted spoon, transfer matzo balls to 13x9x2-inch dish. (Can be made 1 day ahead; chill.)
  • Skim any fat from top of broth; bring to simmer. Season with salt and pepper. Add cooked matzo balls; simmer until heated through, about 10 minutes. Ladle broth and 2 matzo balls into each of 8 bowls and serve.

It's one of the simplest meals you can make and almost everyone can find a chicken and some vegetables to cook up a big, satisfying pot of soup for the family. Some people even ascribe magical medicinal qualities to chicken soup, and who am I to disagree? The Greeks have a chicken and lemon soup called avgolemono, Italians make tortellini en brodo, the Vietnamese have pho and, of course, the Chinese make egg drop soup with chicken broth. I grew up on chicken soup with matzo balls, so that's my particular favorite. The broth starts with whole chickens and vegetables, plus fresh herbs like parsley and thyme, an entire head of garlic and lots of salt and pepper. I simmer it away for hours while I futz around the house and make some easy matzo balls. I end up with a rich, delicious soup that will delight everyone on a cold night!" says Ina.

3 5-pound roasting chickens
3 large yellow onions, unpeeled and quartered
6 carrots, unpeeled and halved
4 stalks celery with leaves, cut into thirds
4 parsnips, unpeeled and cut in half (optional)
20 sprigs fresh parsley
15 sprigs fresh thyme
20 sprigs fresh dill
1 head garlic, unpeeled and cut in half crosswise
2 tablespoons kosher salt
2 teaspoons whole black peppercorns
4 cups 1/4-inch-diced carrots
4 cups 1/4-inch-diced celery
1/4 cup minced fresh dill
1/4 cup minced fresh parsley
Matzo Balls (recipe follows)
4 extra-large eggs, separated
1/2 cup good chicken stock, plus more for cooking the matzo balls
1/4 cup rendered chicken fat, melted
1/2 cup minced fresh parsley
2 teaspoons kosher salt, plus more for egg whites
1 cup matzo meal

Steps:

  • Place the chickens, onions, carrots, celery, parsnips, parsley, thyme, dill, garlic and seasonings in a 16- to 20-quart stockpot. Add 7 quarts of water and bring to a boil. Simmer, uncovered, for 1 hour. Remove 2 of the chickens and allow to cool slightly. Remove the breast meat from both chickens and set aside. Return the remaining chicken and carcasses to the pot and continue simmering, uncovered, for 3 more hours. Strain the entire contents of the pot through a colander and chill. Remove the surface fat, then reheat the stock as follows, or pack in containers and freeze.
  • To serve the soup, return the stock to the pot and reheat, adding the diced carrots, celery, dill and parsley. Shred the reserved chicken breast meat into large pieces and add to the stock. Simmer over low heat for 5 minutes to cook the vegetables and reheat the chicken. Season to taste and serve as is, or ladle each serving over 1 or 2 warm matzo balls.
  • Whisk together the egg yolks, 1/2 cup chicken stock, chicken fat, parsley and salt. Stir in the matzo meal. In the bowl of an electric mixer with a whisk attachment, whip the egg whites with a pinch of salt until they are stiff. Whisk them into the matzo mixture until it is smooth. Refrigerate for at least 15 minutes, or until the mixture is thick.
  • Bring a pot of chicken stock to a simmer (about 3 quarts). Form matzo balls the size of golf balls by shaping them with 2 spoons, rolling them with your hands or scooping them with a small ice cream scoop. Drop them into the simmering stock and cook for 30 minutes, or until fully cooked and puffed, turning once. Remove and serve hot in the chicken soup.

MATZO BALL MIXTURE
3 large eggs
3 Tbsp vegetable oil or schmaltz
3/4 c matzo meal
1 tsp baking powder
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried dill
1/4 tsp ground white pepper
MATZO BALL SOUP
1 1/2 Tbsp vegetable oil
1 medium onion chopped
2 ribs celery chopped
4 carrots peeled and chopped
2 clove garlic minced
1 tsp dried dill
2 bay leaves
8 c low sodium chicken broth
2 1/2 c chopped cooked chicken
1 Tbsp chopped fresh parsley

Steps:

  • 1. In a medium bowl whisk the eggs together and then whisk in the oil.
  • 2. In a separate medium bowl whisk together the matzo meal, baking powder, garlic powder, onion powder, dried dill and black pepper. Pour the egg mixture into the matzo meal mixture and stir just until combined. Do not overmix. Cover and place in the refrigerator for at least 1 hour.
  • 3. In a Dutch oven or large stockpot heat the oil over medium heat. Add the onions, celery and carrots. Cook until the onions and celery are soft; approximately 6-8 minutes. Reduce the heat to low and add the garlic and dill; cook for 1 minute stirring constantly. Add the bay leaves and chicken broth. Bring to a low simmer and add the chicken.
  • 4. Then using a small scoop or tablespoon drop the matzo mixture into the simmering soup. Cover and cook for 25-30 minutes or the matzo balls are puffed up and the vegetables are tender. Remove bay leaves and sprinkle with fresh chopped parsley.
  • 5. NOTES Carrots colors are prettier if you peel them. The matzo ball mixture can be prepared up to 24 hours in advance, covered and stored in the refrigerator. Matzo meal is simply matzo crackers ground finely into meal. I use my food processor to grind them. Most local grocery stores carry matzo crackers. Any kind of roasted, baked, or poached chicken will work. It can be cubed, diced or shredded. As long as it tastes good than it is a go. Do not overmix the matzo ball mixture as it can make it tough. Use a cookie scoop or 2 tablespoons to add the balls to the soup. I like light and airy matzo balls but if you prefer denser heavier ones than cut the baking powder in half or omit it all together. If you have the time make your own Homemade Chicken Stock it will add flavor and depth to the soup. Don't forget to remove your bay leaves as they have sharp edges.

1 pound chicken wings
6 quarts water
3 large carrots, chopped

4 large eggs

1/4 cup rendered chicken fat
2 tablespoons snipped fresh dill

Steps:

  • Place chicken and wings in a stockpot; add water, vegetables, herbs and seasonings. Slowly bring to a boil. Reduce heat; simmer, covered, 1-2 hours., Remove chicken and wings and cool. Strain broth through a cheesecloth-lined colander; reserve vegetables. Skim fat. Remove meat from bones and cut into bite-sized pieces; discard bones. Return broth, vegetables and meat to pot. If using immediately, skim fat. Or cool broth, then refrigerate 8 hours or overnight; remove fat from surface before using. (Broth may be refrigerated up to 3 days or frozen 4-6 months.), Meanwhile, in a large bowl, beat matzo ball mix, eggs, oil, chicken fat, dill and parsley until combined. Cover and refrigerate for at least 30 minutes., In another stockpot, bring water to a boil. Drop rounded tablespoonfuls of matzo ball dough into boiling water. 5 pounds chicken bones, such as wings, necks, and backs, rinsed
3 stalks celery, cut into thirds
2 medium yellow onions, halved
5 whole black peppercorns
1 bay leaf

Steps:

  • Make broth: Add chicken bones, large carrot pieces, celery, onions, peppercorns, and bay leaf to a large pot. Fill with enough cold water to cover ingredients by 2 inches and bring to a rapid simmer over medium-high. Reduce to a gentle simmer and cook 2 hours. Strain through a fine-mesh sieve and discard solids. Let broth cool, then refrigerate in an airtight container, 5 days (or freeze up to 6 months).

1 tablespoon onion powder

1/2 cup schmaltz or vegetable oil
1 cup small diced onions
1/2 cup small diced carrots
1/2 cup small diced celery
2 tablespoons schmaltz or vegetable oil
4 quarts good-quality chicken stock
2 bay leaves
Kosher salt and black pepper
1 cup cooked fine egg noodles
1 cup shredded cooked chicken breast meat

Steps:

  • For the matzo balls: Combine the matzo meal, salt, onion powder and white pepper in a large bowl. Combine the eggs and schmaltz in a second large bowl. Very gently mix the wet ingredients into the dry ingredients. Cover and refrigerate for one hour.
  • Bring a large pot of water to boil and season well with salt.
  • Using wet hands, form the matzo mixture into 1 1/2-ounce balls. (Be gentle: overmixing can result in tough, hard dumplings.)
  • Add the dumplings to the pot of water and cook until cooked all the way through, about 45 minutes. The dumplings can be held in warm water until ready to serve.
  • For the soup: Sweat the onions, carrots and celery in a large soup pot with the schmaltz until soft and translucent, about 10 minutes. Add the chicken stock and bay leaves and bring to a boil. Lower the heat and simmer until the vegetables are very tender, about 20 minutes. Skim any foam or bits of food that have risen to the top. Discard the bay leaves. Add salt and pepper to taste.
  • Just before serving, add the noodles and chicken and heat through. Place 2 matzo balls in each bowl and add the soup.

1 chicken with extra giblets (use kosher chicken, if you like)
3 chicken stock cubes (use kosher stock, if you like)
1 bay leaf
10 peppercorns
4 carrots , sliced
2 onions , peeled, root intact
2 celery sticks , sliced
1 swede , peeled and cut into chunks
½ small pack parsley , roughly chopped
challah bread , to serve (optional)
1 ½ tbsp fat from the chicken soup
1 egg , beaten
100g matzo meal

Steps:

  • Wipe the chicken with kitchen paper and put in a large saucepan with the giblets. Cover with water and bring to the boil. Once boiling, reduce the heat to a simmer. Skim away any scum with a large spoon or ladle every few mins for about 30 mins until no more comes to the surface. Crumble in the stock cubes and add the bay leaf, peppercorns and vegetables.
  • Bring to the boil again, then reduce the heat to very low. Cover and simmer gently for 3-3 1 /2 hrs.
  • Leave the soup to cool a little, then transfer to the fridge overnight.
  • Once chilled, the fat from the soup will rise to the top. Save 11 /2 tbsp for the matzo balls and set aside, then use a large spoon to remove as much as you can. Remove the chicken, shred all the meat, then add it back to the pan. Put the soup back on the heat and skim away any remaining fat while you bring it to the boil.
  • Meanwhile, make the matzo balls by combining the fat, egg, matzo meal and 1/2 tbsp warm water. Stir into a paste, adding a little more water if needed, then chill for 10-15 mins. Roll into about 12 small balls. Dampen your hands if the mixture is too sticky.
  • Drop the matzo balls into the soup for a few mins. Scatter with parsley and serve with challah bread, if you like.

FOR THE SOUP
1 whole chicken, sometimes I use thighs
2 stalks celery, broken in the middle
1/2 onion, don't bother to chop
3 large carrots, cut in half
1 clove garlic, leave it whole and drop it in
6 c water or enough to cover the chicken
salt and pepper
8 oz thin egg noodles
FOR THE MATZO BALLS
6 pieces lightly salted matzo, crushed
water
1 egg
1 Tbsp oil or chicken fat if you want to be authentic
matzo meal

Steps:

  • 1. Place everything for the soup except the noodles into a large stock pot.
  • 2. Bring to a simmer. Cover and cook until meat is very tender.
  • 3. To make the matzo balls, place the crushed matzo in a bowl and cover with water. Let soak 30 minutes.
  • 4. After soaking, drain the matzo well. I place them in a large mesh sieve over a bowl to drip and press on them some. Set aside.
  • 5. Once chicken is done, remove it and de-bone.
  • 6. Discard the celery, onion, and garlic. I usually slice the carrots into the finished soup.
  • 7. Strain the broth if you want a pretty soup.
  • 8. Put it back into the pot and bring to a boil.
  • 9. Start a pot of plain water to boil. Add salt.
  • 10. Mix the matzo with the egg, oil, and enough matzo meal to make it hold together. It will be a stiff dough.
  • 11. Form into balls.
  • 12. Drop the matzo balls into the simmering plain water. They will float when done, about 8-10 min.
  • 13. Drain.
  • 14. Cover to keep warm.
  • 15. Cook the egg noodles in the broth.
  • 16. Add the chicken and carrots back to the broth.
  • 17. To serve, place one or two matzo balls in a bowl and spoon the soup over.
