Number Of Ingredients 10

1 cup water
3/4 cup white sugar or 3/4 cup Splenda sugar substitute
1 (12 ounce) package fresh cranberries
1 cup apple (peeled, cored, and diced)
1/2 cup cider vinegar
1/2 cup raisins
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves

Steps:

  • In a medium saucepan, combine the water and sugar.
  • Bring mixture to a boil over medium heat.
  • Add the apples, cranberries, cider vinegar, raisins, and spices.
  • Bring to a boil, then simmer gently for 10 minutes, stirring often.
  • Pour mixture into a mixing bowl.
  • Place plastic wrap directly on the surface of the sauce.
  • Cool to room temperature and serve or cover and refrigerate.
  • Bring chutney to room temperature before serving.

This sweet chutney provides a great balance to a rich, spicy curry. Serve it cool; if you don't want to eat it right away, it can be stored in glass jars in the refrigerator for up to six months.From the book "Lucinda's Authentic Jamaican Kitchen," by Lucinda Scala Quinn (Wiley).

Number Of Ingredients 10

4 mangoes, peeled, pitted, and chopped (4 cups)
3 tablespoons grated fresh ginger
1 onion, chopped
1 clove garlic, minced
1/2 sweet red pepper, seeded and chopped (about 1 cup)
1/2 cup raisins
1/3 cup sugar
2 teaspoons salt
1/2 cup white vinegar
1/3 cup water

Steps:

  • Mix all of the ingredients together in a noncorrosive saucepan. Bring to a boil over high heat, then reduce the heat to low and simmer for 1 hour and 15 minutes. Remove from the heat and allow the chutney to cool. Store in glass jars in the refrigerator up to six months.

1 package (12 ounces) fresh or frozen cranberries
1-1/4 cups sugar
3/4 cup water
1 large tart apple, chopped
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon ground cloves

Steps:

  • In a saucepan, combine all ingredients; bring to a boil, stirring constantly. Reduce heat; simmer for 15-20 minutes or until apple is tender and mixture thickens. Cool completely. , Store in the refrigerator. Serve over cream cheese with crackers or as a condiment with pork, ham or chicken.

I got this from a lady at work. Haven't tried it yet but she says it gets rave reviews every Thanksgiving. This one evidently goes well with turkey and or a sourdough roll.

3 1/2 cups fresh cranberries
1 tart apple, finely chopped
2 navel oranges
1/2 cup golden raisin
1 medium onion, chopped
1 cup brown sugar
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon allspice
1/4 teaspoon white pepper
1/2 teaspoon salt

Steps:

  • Combine cranberries, apple, and the wedges of one orange and juice of the other, along with raisins and onion in one saucepan.
  • Add sugar and spices. Let this boil, stirring often for about 20 minutes.
  • When it cools, will keep in refrigerator.

1/2 cup cider vinegar
2 1/4 cups firmly packed light brown sugar
3/4 teaspoon curry powder
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1/2 teaspoon cinnamon
1 1/2 cups water
2 lemons, rind grated finely, pith discarded and fruit cut into sections
2 navel oranges, rind grated finely, pith discarded and fruit cut into sections
1 tart apple, peeled and coarsely chopped
6 cups fresh cranberries
1/2 cup golden raisins
1/2 cup dried apricots
1/2 cup chopped pecans

Steps:

  • In a large saucepan combine the vinegar, sugar, curry, ginger, cloves, allspice, cinnamon and water. Bring the liquid to a boil, stirring until the sugar is dissolved, about 3 minutes. Add the lemon rind and lemon sections, the orange rind and orange sections and the apple, reduce the heat and simmer for 10 minutes.
  • Add 3 cups of the cranberries, the raisins and the apricots and simmer, stirring occasionally, until thickened, about 35 minutes. Add another 2 cups of the cranberries and simmer for 10 more minutes. Add the remaining cup of cranberries and the pecans and simmer the mixture for 15 minutes longer.
  • Remove the saucepan from the heat, pour the chutney into a bowl and let cool. Chill overnight or up to 2 weeks.

1 (16-ounce) bag cranberry fresh or frozen
1 pear large such as Bosc or Anjou, peeled, cored, and chopped
1 1/4 cups brown sugar packed
3/4 cup orange juice concentrate
1/2 cup onion chopped
1/2 cup raisins golden
2 tablespoons ginger crystallized
2 tablespoons cider vinegar
1/2 teaspoon allspice ground

Steps:

  • * "Tie gold metallic cord around top of jar. Attach a tag with suggested uses." In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat to low and simmer, uncovered, 30 to 35 minutes until very thick, stirring frequently to avoid sticking. Cool.Spoon chutney into one or two decorative jars. Cover and refrigerate up to 1 month. Chutney can be frozen in freezer containers for longer storage. Serve with poultry, pork, or lamb.
