HOBO CASSEROLE (OAMC)

Hobo Casserole (Oamc) image

One of our best and most inexpensive concoctions yet. Makes a great one dish meal. Just add a salad and you're ready to go. Makes 4 casseroles, and the extras can be frozen for later cooking.

Provided by Kzim4

Categories     One Dish Meal

Time 1h45m

Yield 4 casseroles

Number Of Ingredients 10

10 lbs potatoes, cut into 1 inch cubes
3 lbs ground beef
6 -8 medium carrots, diced
1 (10 ounce) bottle Worcestershire sauce (approx. 1 1/4 cups)
1 large onion, chopped
1 head garlic, peeled and chopped fine
3 (26 ounce) cans undiluted cream of mushroom soup
4 cups milk
salt, to taste (I use approximately 1 tablespoon)
pepper, to taste (I use approximately 1 teaspoon)

Steps:

  • Preheat oven to 400°F.
  • Spray 4 9x13-inch baking pans with non-stick cooking spray (such as Pam); set aside.
  • Combine ground beef, onion, and garlic in large skillet.
  • Cook over medium-high heat until ground beef is browned.
  • Drain.
  • Add Worcestershire sauce, cream of mushroom soup, and milk.
  • Stir until sauce is fairly smooth.
  • Boil potatoes until tender; drain. Add potatoes and carrots to sauce.
  • Divide mixture evenly between the 4 baking pans.
  • To bake: Cover baking pan with foil and bake for 30 minutes.
  • Remove foil and bake an additional 15-20 minutes or until potatoes are tender.
  • To freeze: Allow mixture to cool in baking pan.
  • Cover and label; Freeze.
  • To use frozen casserole: Allow casserole to thaw overnight in fridge.
  • Bake as directed above (may take an additional 15 minutes to bake if placed in the oven directly from fridge).
  • **I have to mix this recipe in thirds since I don't have a large enough skillet or bowl to mix it all at once**.

CROCK POT HOBO BEANS FROM SCRATCH (OAMC)

Crock Pot Hobo Beans from Scratch (Oamc) image

I can't really take much of the credit for this recipe. It's just the result of ideas I've purloined over the years. When I take it to a potluck I've learned to have a half dozen copies of the recipe with me. I freeze it one cup at a time in sandwich size zip lock bags. It reheats quite well.

HOBO HASH (OAMC)

Hobo Hash (Oamc) image

This is a quick and easy dish to prepare and is one of the great comfort foods. I've had the recipe so long I don't remember where I got it. I freeze the leftovers one cup at a time in sandwich size zip lock bags and then collect the small bags into a dated and labeled gallon zip lock bag. Thaw, heat, and serve with a garden salad, a baguette, and a nice chianti.

OAMC-HASH BROWNS, SAUSAGE, BACON AND EGGS.

OAMC-Hash Browns, Sausage, Bacon and Eggs. image

This makes 16 servings. At sams club they sell these big bags of precooked bacon, it's a 1 pound bag, I use that instead of cooking the bacon myself. Same for the sausage, the precooked sausage I buy is cheaper than the sausage I have to cook. If you cook the bacon yourself, salt the dish. You can really cut the time on this if you do like I did and it's not more expensive!!! Use precooked bacon (if you can get it cheap like I did), precooked sausage and a cheese mix blend. I put it together in under 10 minutes, that includes cracking and stirring the eggs.

Provided by ColoradoCookin

Categories     Breakfast

Time 1h15m

Yield 16 serving(s)

Number Of Ingredients 11

1 (2 1/2 lb) package frozen hash browns, shreds
1 cup butter, melted
4 cups shredded jalapeno pepper cheese
4 cups shredded cheddar cheese
12 sausage links, cooked and diced (1 pound)
16 slices bacon, cooked and diced (1 pound)
2 cups milk
18 eggs
salt and pepper
crushed red pepper flakes, and
dried onion, to taste

Steps:

  • Preheat oven to 425 degrees.
  • Spray 2 9x13 inch pans with cooking spray.
  • Place half of hash browns into each pan, press to the bottom forming a crust.
  • Drizzle half of melted butter over each dish.
  • Bake for 25 minutes.
  • Remove from oven, reduce temperature to 350.
  • Put half of the chopped meats, and cheeses on the "crusts" in each pan.
  • Sprinkle with salt, pepper, crushed red pepper and onions (as well as any other additions you might want to add like veggies).
  • Mix eggs and milk in large bowl with an electric mixer (I use my stand mixer).
  • Pour half the egg mixture over each pan.
  • Bake for 35 minutes.
  • Let it stand for about 15 minutes before you put it in containers to freeze.
  • Reheat a 3/4 cup serving for 3 minutes on high.
  • This is really good if you alter this in lots of ways! You can use chorizo (mexican sausage) and salsa for a nice twist.
