This is a German recipe - a farmer's omelet. I got it over 20 years ago from Southern Living (I think). This has been a family favorite since the recipe was introduced.

Number Of Ingredients 10

3 medium potatoes, diced
1/4 cup cooking oil
1/4 cup onion, finely diced
1 cup ham, diced
6 eggs
1/2 cup swiss cheese
1 teaspoon salt
1/4 teaspoon pepper
1 dash Worcestershire sauce
1 tablespoon parsley, chopped

Steps:

  • Melt butter in 11 inch frying pan and saute potatoes and onion until lightly browned.
  • Add ham and saute 5-7 minutes longer.
  • Beat eggs with worcestershire sauce, salt, and pepper.
  • Pour egg mixture over potato mixture.
  • Sprinkle with parsley and reduce heat.
  • Lift the cooked eggs from the edge of the pan with spatula so that liquid can run down and cook.
  • When omelet is nearly done, sprinkle with grated swiss cheese and place under broiler until cheese is melted.

2-1/2 cups frozen shredded hash brown potatoes
1/3 cup chopped onion
3 tablespoons butter
5 large eggs
1/2 cup whole milk
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
25 slices pepperoni
1 cup shredded Mexican cheese blend

Steps:

  • In a large skillet, cook potatoes and onion in butter until tender and lightly browned. Meanwhile, in a large bowl, beat eggs, milk, Italian seasoning, salt and pepper. , Pour over potato mixture. Sprinkle with pepperoni. Cover and cook on medium-low heat until eggs are set, 10-12 minutes. Remove from the heat. Sprinkle with cheese; cover and let stand for 2 minutes. Cut into wedges.

This recipe came from my aunt, who was a wonderful cook. We eat it both with and without the spinach or ham.

1 large onion
1 1/2 cups shredded hash browns
1 (9 ounce) bag fresh spinach (optional)
3/4 cup diced cooked ham (optional)
6 slices bacon, cooked and crumbled
8 eggs
1/4 cup milk
salt and pepper
1 cup shredded cheese (I use cheddar)

Steps:

  • In a large heavy skillet, fry onion and hash browns in oil until lightly browned.
  • Stir.
  • Add spinach.
  • Cover and cook until wilted.
  • While the spinach is cooking down, stir eggs and milk in a bowl.
  • Pour eggs on top of spinach.
  • Salt& pepper to taste.
  • Cover.
  • Cook over low heat until eggs are set.
  • Remove from heat.
  • Add cheese.
  • Cover and let set until cheese is melted.
  • Cut into wedges and serve.
