HIMMEL FUTTER TORTE
This recipe was a favorite of my grandma's. As kids, we called it "Dark Secret" because Grandma would vary the fruit with the season and we never knew what she hid under the cream.

- In a large bowl, beat eggs and sugar until light. Add shortening and vanilla; beat well. Combine flour, baking powder, salt, dates and nuts; add to bowl and mix well. Spread in a greased 13x9-in. baking pan. , Bake at 350° for 40-45 minutes or until cake tests done. Cool on a wire rack. Break torte into small pieces and arrange on a serving plate. Just before serving, place fruit on top and cover with whipped cream. Fruit can be varied by season.

HIMMELTORTE - HEAVENLY TORTE
The story is that the original recipe was created in Austria in the 1830's to console the Duke of Vienna, who was bereft from the loss of one of his chefs. The base is very like a shortbread cookie. Some versions of this recipe call for the base to be baked in a larger pan and assembled in one large layer. When I made it, I baked the base in one big piece and divided it equally into thirds to stack. Baking time approximate. Steps:
- For the filling: Mix sugar and cornstarch together and add to egg yolks.
- Stir in sour cream and cook in double boiler until it coats the spoon.
- Add the flavorings and stir well.
- Let cool to room temperature before assembling cake.
- For the base: Preheat oven to 450°F.
- Cream butter and 1/4 cup sugar; add salt and egg yolks, one at a time and beat until smooth after each.
- Add lemon rind and flour.
- In another bowl, mix egg white, sugar, cinnamon and pecans together lightly.
- Divide dough into thirds and pat into three 7" x 11" pans; spread the tops with the egg white mixture.
- Bake for ten minutes, then reduce heat to 350F and bake approximately 10 to 15 minutes more.
- Turn out onto cooling rack.
- When torte is cold, spread two of the layers with raspberry jam and some of the filling.
- Stack layers and cover all with remaining filling.

Signature dish of the Restaurant Franziskanerplatz in Vienna, Austria. Recipe from a clipping in my grandmother's recipe box. The recipe recommends grilling the tenderloins to just rare but you don't have to.

Steps:
- Grill the steak to your desired doneness.
- Put butter, salt, white pepper, cayenne, mustard, chopped parsley, sherry and Worcestershire sauce into a pan and heat.
- When butter has fully melted and sauce has been stirred, add the steak, pour over with the cognac and flambe.
- When cognac has burned off, remove the steak and cut into 3 slices per steak. Keep warm.
- Mix ketchup and whipping cream then fold in to the sauce along with the sauteed mushrooms. Stir well and bring to just under a boil.
- Plate the steak and pour sauce over. Serve with French fried potatoes and peas.

VINETERTA (VIENNA TORTE)
In Manitoba, where I live, there is a significant population of Icelandic heritage. Thus, this recipe is a popular one on dainty trays in my area. Here is the story of Vineterta as told by my mother's recipe book, "Through the Years", from the Selkirk Ladies Hospital Auxiliary (1982): "Vineterte is known to us as an Icelandic Cake., sine it was introduced to us by the Icelandic settlers who came here a hundred years ago. Vinaterta is also known as Wine Torte.However, we recall a story regarding the origin of this cake. It was said to have originated in Vienna. In those days before Iceland had it's own university, students went to Vienna to study. There they were introduced to this famous torte. It is a popular cake, especially at Christmas time when it is cut into small slices and served on a tray of holiday dainties and cakes."

Steps:
- Cream butter well, then add sugar gradually, beating hard after each addition. Beat in eggs, one at a time.
- Sift together flour, baking powder, and cardamom. Add small amount to creamed mixture. Mix in cream and almond extract. Now work in as much flour as possible.
- Turn out onto pastry cloth and knead in any remaining flour. Divide dough into 5 parts and pat each part into a 9-inch greased layer pan. Bake at 375 until delicate brown.
- To assemble filling: Put prunes through food processor or mill, then add sugar, prune liquid and cinnamon. Cook until thickened, then add vanilla.
- Let cool, and then spread between layers of torte.
- Top cake with a thin layer of vanilla icing. Let the torte stand for a couple of days before serving to allow the cake to soften. Serve in small slices.
HIMMEL TORTE CAKE FILLING
A lovely rich filling from the US Regional Cookbook, Chicago Culinary Arts Institute, 1947. Cooking time is approximate. Yields enough filling for two 9-inch layers.
