From a local source. The original recipe is much more elaborate involving fresh lemongrass and steaming fresh rose petals. I made it easier for myself by substituting rose water and tubed lemongrass puree. Please feel free to adjust the proportions to your liking.

4 cups brewed hibiscus tea, cooled
1 teaspoon lemongrass puree
2 cups homemade lemonade
agave nectar, to taste
1 -2 teaspoon rose water (add more, to taste)
ice cube
rose petal, thinly sliced
lemon slice
lemon verbena or mint leaf

Steps:

  • Combine all beverage ingredients in a pitcher.
  • Cover and chill.
  • Before serving, add ice cubes and garnish with rose petals, lemon slices, lemon verbena leaves or mint leaves.

1 c dried hibiscus petals
4 c water
EVERY 1 CUP OF THE DRIED PETALS IS ENOUGH FOR 4 CUPS, MAKE MORE OR LESS DEPENDING ON YOUR NEEDS.
sugar to taste
optional: lemon or lime juice to taste

Steps:

  • 1. Bring water to a boil in a large pot.
  • 2. Stir in the hibiscus petals and boil for about 5 minutes.
  • 3. Stir in sugar until dissolved.
  • 4. Remove from heat and let it steep for about an hour.
  • 5. Strain into a glass pitcher (it stains!) push into the strainer to get as much goodness as you can from the petals.
  • 6. Use personal judgement here: If its too tart add more sugar if its too strong add more water.
  • 7. You can squeeze a lemon or lime into it if you like at this point.

This drink is served throughout Mexico. It is nice and refreshing. It is similar to a tart cranberry tea drink. You may add more or less sugar to your taste if you prefer. Enjoy!

6 cups water
2 cups dried hibiscus petals
1 cinnamon stick
1 pinch ground cloves
1 pinch ground nutmeg
1 pinch ground allspice
½ cup chopped piloncillo (Mexican brown sugar cones)
1 ½ cups white sugar

Steps:

  • Place 6 cups of water in a large saucepan; bring to a boil. Stir in the hibiscus petals, cinnamon, cloves, nutmeg, and allspice. Reduce heat to medium-low, and gently simmer until the water has turned a deep red, 30 to 45 minutes.
  • Stir the chopped piloncillo into the hibiscus water until dissolved, then set aside to cool 15 minutes. After cooling, strain the warm liquid into a 1 gallon pitcher through a wire mesh strainer. Squeeze as much liquid from the petals as you can, then discard the petals. Stir in the white sugar until dissolved, then pour in enough cold water to fill the pitcher. Serve immediately or let stand overnight for best taste.

  • To prepare the tea component, heat the water to a low simmer, either in a tea pot or in a saucepan on the stovetop. Steep the tea in the hot water for 3 minutes, then remove the bags (or strain off the loose tea). Set the tea aside to cool to room temperature, about 20 minutes.
  • To make the honey syrup: Combine equal parts honey and water (say, 2 tablespoons each if you’re only making one batch of drinks) in a microwave-safe bowl or small saucepan. Warm in the microwave or over the stovetop just until you can completely stir the honey into the water. Set aside.
  • When you’re ready to serve, fill four medium glasses with ice. Fill each halfway with hibiscus tea. Top each with about a tablespoon of lime juice and 1 teaspoon of the honey simple syrup, and stir to combine. Fill the rest of each glass with sparkling water, gently stirring afterward to combine. You may want to adjust to taste by using less lime juice or more simple syrup—totally up to you! Serve promptly.
