BRETT'S SUPER AMAZING BREAKFAST BURRITOS
Have a super amazing day when you start it with this recipe for Breakfast Burritos using Idahoan® Hash Browns.

Steps:
- In a medium skillet, over medium high heat, add 1 Tbsp of the oil. Add the Idahoan® Hash Browns and spread evenly. Let cook for 6-8 minutes before stirring. Stir and continue to cook until desired crispiness. Remove from skillet and set aside.
- In the same skillet, add remaining oil and add the onions. Cook for 2 minutes, then add the peppers and continue to cook until crisp tender. Add the ham and sauté all ingredients for 2 minutes.
- In a separate skillet, add butter and melt. Add eggs, scrambling and adding salt and pepper to taste.
- Add the hash browns back into the pepper mixture and blend. Add the scrambled eggs and the cheese. Blend together and divide among the warmed flour tortillas. Serve with the toppings of choice.
FREEZER BREAKFAST BURRITOS
Meal prep over the weekend for the best burritos during the week. Loaded with tater tots, eggs, beans and cheese, of course!!

- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray. Cook tater tots according to package instructions; set aside. Heat olive oil in a large skillet over medium high heat. Add sausage and cook until browned, about 3-5 minutes, making sure to crumble the sausage as it cooks; drain excess fat, reserving 1 tablespoon in the skillet. Add eggs to the skillet and cook, whisking, until they just begin to set. Gently whisk in half and half; season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside. Spread beans down centers of tortillas; top with tater tots, sausage, eggs, cheeses, tomatoes and cilantro. Fold in opposite sides of each tortilla, then roll up, burrito-style.* Place, seam-sides down, onto preparing baking sheet; cover. Place into oven and bake until heated through, about 12-15 minutes. Serve immediately.
BREAKFAST BURRITO ALA IDAHO
This burrito makes a satisfying and comforting breakfast. I often make extra mashed potatoes just to have this burrito the next morning.

- Warm a large skillet (big enough to hold burrito size tortilla) over medium heat.
- Butter (1T or so) can be added to the skillet to help brown the tortilla and give the outside more flavor and crispness, but I always just warm it in a dry (no butter or oil) skillet.
- Spread mashed potatoes down the center of tortilla.
- Place the tortilla in warm skillet, mashed potato side up.
- Sprinkle cheese on potatoes.
- Sprinkle bacon pieces on cheese.
- Spread scrambled eggs on top of bacon.
- Top with salsa and sour cream.
- If you like your tortilla soft, slide it out of the pan onto a plate as soon as it is warm. Roll and eat.
- If you prefer your tortilla crunchy, continue to cook until it starts to brown, slide out of the pan onto a plate and roll imediatly.

- In a large cast-iron skillet over medium-high heat, add the bacon and onion. Cook until the bacon is crisp and the onion is softened, 6 to 8 minutes. Remove to a paper towel-lined plate. Add the sausage to the same skillet and, using the back of a wooden spoon, break it up into small bits. Cook until golden brown, 5 to 7 minutes. Add the bacon and onion back to the skillet, along with the ham. Pour in the whisked eggs and use a rubber spatula to scramble the eggs and meat. Cook until the eggs are set, about 5 minutes, then add the cheese, salsa verde and chiles and stir everything together. Season with salt and pepper.
- Divide the scramble among the 12 tortillas. Roll up the tortillas, leaving the ends open. Wrap each burrito in foil. Serve immediately.
- To make ahead: Refrigerate the burritos after assembling; reheat the next day at 350 degrees F for 35 minutes in a pan covered with foil.
BREAKFAST BURRITOS
A delightful breakfast, these burritos filled with soft scrambled eggs, scallion-flecked refried beans and buttery avocado slices are also great any time of the day. Cilantro adds freshness, and a few drops of your favorite hot sauce will deliver a nice zing. The nontraditional open-ended rolling technique used here will tightly encase the filling in the smaller-sized tortillas while ensuring the optimal tortilla-to-stuffing ratio. To seal completely, wrap each tortilla in a strip of foil and twist both ends. For convenience, the little wraps can be made ahead of time, stored in the refrigerator or freezer and reheated in an oven.

- Heat broiler to high and line two sheet pans with foil.
- Place the tortillas on the sheet pans. Sprinkle half of the cheese over the tortillas. Broil, one pan at a time, until the cheese is just beginning to melt, about 20 seconds.
- In a medium nonstick skillet, heat 1 tablespoon oil over medium. Add the scallions and cumin and cook, stirring, until fragrant, about 1 minute. Add the refried beans, stir to combine and cook until the beans are warmed through, about 2 minutes. Divide the beans among the tortillas, spooning in even lines down the centers.
- Wipe out the skillet and set over to medium-low heat. Pour in the remaining 1 tablespoon oil, add the whisked eggs and season lightly with salt. Cook, stirring occasionally, until the eggs are just set, about 3 minutes. Divide the eggs evenly among the tortillas, in lines over the beans. Drizzle on hot sauce, if using.
- Sprinkle the remaining cheese over the eggs and top with avocado and cilantro. To roll, fold one side over the filling to enclose it, then tightly roll away from you, leaving the ends open. Serve immediately, or wrap in foil and refrigerate for up to 24 hours. Reheat in a 400-degree oven or toaster oven until warm, about 8 minutes.
