16 large raw shrimp, peeled, deveined, tails removed (not Jumbo shrimp)
8 slices turkey bacon, Jennie-O Extra Lean
1/3 cup canned tomato sauce
3 tablespoons ketchup
1 tablespoon brown sugar (not packed)
1 tablespoon cider vinegar
1/2-1 teaspoon garlic powder (depending on how garlicky you want 'em)

Steps:

  • Preheat oven to 425 degrees.
  • Cut bacon slices in half and set aside. Mix together tomato sauce, ketchup, sugar, vinegar and garlic powder. Lightly spray a baking pan with nonstick spray.
  • Take one piece of bacon (half a slice), and coat it in the sauce. Wrap the sauce-covered bacon around a piece of shrimp, and place it seam side down on the baking pan. Repeat with the rest of the bacon and shrimp, and then give them a quick mist with nonstick spray.
  • Place pan in the oven and cook until shrimp are cooked through and bacon is crispy (about 10 - 15 minutes).

From Hungry Girl: "Flat 'n Fabulous Admit it -- you find yourself singing that hip-hop jingle for the latest greasefest to come from Carl's Jr. and Hardee's: "Flat buns... I like flat buns..." (it's catchy!). And since grilled onions, a beefy burger, and melted cheese on toasty rye bread (yeah, that's what a "flat bun" is in this case) sounds delicious, we decided to HG-ify it. We're pleased to present HG's Flat Top Patty Melt."

Number Of Ingredients 4

2 slices light rye bread (for example Weight Watchers or another similar bread with around 50 calories per slice)
2 slices fat-free American cheese
3/4 cup onion, sliced
1 veggie burger, Original Boca Meatless Burger

Steps:

  • Toast bread slices until they are halfway to desired crispiness. Top each slice with a piece of cheese, and continue toasting until cheese is melted and bread is toasty.
  • In a pan sprayed with nonstick spray, cook onions with 2 tablespoons of water over medium heat until desired texture is reached (3 - 5 minutes).
  • Prepare burger patty according to the directions on the package (either in the pan sprayed with nonstick spray, or in the microwave). Place half of the grilled onions on one cheese-topped bread slice, and cover with the burger patty. Top with the rest of the onions, and finish off with the other slice of cheesy bread. Enjoy!

I recently purchased the new Hungry Girl Cookbook and this is one of the first recipes that I am going to try. Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

1 (16 ounce) package corn kernels, frozen, sweet corn
2 (15 ounce) cans pinto beans, rinsed & drained
1 (15 ounce) can black beans, rinsed & drained
3 (14 1/2 ounce) cans no-salt-added diced tomatoes
1 (14 1/2 ounce) can Italian-style diced tomatoes
1 (1 1/4 ounce) envelope taco seasoning mix
1 (1 1/4 ounce) envelope ranch dressing mix
1/4 cup onion, minced
salt, to taste
black pepper, to taste

Steps:

  • Pour the tomatoes and corn into a large pot. Add remaining ingredients and stir thoroughly. Bring to a boil.
  • Reduce heat to low and let simmer for 15 minutes.
  • Remove from heat and allow soup to sit for at least 5 minutes. Add salt and pepper to taste.
