I received an email today from Hungry Girl that contained a few recipes. I wanted to post them here so that I don't lose them. PER SERVING (1 muffin): 85 calories, 1.5g fat, 240mg sodium, 14g carbs, 1g fiber, 2g sugars, 4g protein -- POINTS® value 2* "Cheesy cornbread muffins for only 85 calories each?! How can it be???"

1 cup cream-style corn, canned
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
1/2 cup fat free egg substitute (like Egg Beaters)
1/2 cup nonfat sour cream
1/2 cup reduced-fat cheddar cheese, shredded
1/4 cup scallion, chopped
2 tablespoons artificial sweetener (i. e. Splenda granulated)
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon hot sauce

Steps:

  • Preheat oven to 375 degrees.
  • Combine flour, cornmeal, Splenda, baking powder and salt in a large bowl.
  • In a separate small bowl, mix together all other ingredients -- then add the contents of the small bowl to the large one, and stir until well mixed.
  • Spray a 12-cup muffin pan with nonstick spray or line it with baking cups. Evenly distribute muffin batter among the cups.
  • Bake in the oven for 15 - 20 minutes (until muffins are firm and a light golden brown). Allow to cool and then enjoy!

1 (10 1/2 ounce) Progresso reduced-sodium garden vegetable soup (Healthy Favorites 50% Less Sodium)
1 fat-free hot dogs, with 40 - 50 calories (like Hebrew National 97% Fat Free Beef Franks or Yves Meatless Hot Dogs)
1/4 cup fat-free cheddar cheese, shredded
1/2 teaspoon chili seasoning mix

Steps:

  • Cut the hot dog into tiny, bite-sized pieces. Spray a small pot with nonstick spray, bring to medium heat, and add hot dog pieces. Cook for 1 - 2 minutes, until outsides begin to crisp.
  • Then add soup and seasoning mix to the pot, stir, and continue to cook until very hot.
  • Spoon the soup into 2 bowls, and top each bowl with half of the cheese. Allow cheese to melt and soup to cool slightly before digging inches Mmmmm!

Okay, if you're absolutely opposed to using F1 for baking, leave it out and double the graham cracker amount instead (each serving will then have 141 calories, 1g fat, 2.25g fiber and a POINTS® value of 2*). BTW, try spooning some of this stuff on top of light vanilla ice cream or yogurt... IT ROCKS!!!"

3 cups apples, peeled, cut into chunks (any sweet, not tart, variety)
1/2 cup all-bran cereal, Fiber One Original
8 low-fat honey graham crackers
2 tablespoons liquid egg substitute
2 tablespoons no-sugar-added applesauce
3 tablespoons artificial sweetener, Splenda No Calorie Sweetener, granulated, divided
2 tablespoons brown sugar (not packed)
1 tablespoon cornstarch
2 teaspoons cinnamon, divided
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • Combine 2/3 cup of cold water with brown sugar, cornstarch, 1/2 teaspoons of cinnamon, vanilla extract, salt, and 1 tablespoons of the Splenda. Stir well.
  • In a medium-sized pot, combine apple chunks with this mixture. Heat the apple mixture over medium heat, stirring occasionally. Once liquid thickens to a syrupy consistency and begins to bubble, reduce heat to low and cover. Allow to simmer for 5 minutes, and then transfer mixture to a medium-sized round baking dish. Set aside.
  • Next, break graham crackers into small pieces. Place graham pieces and Fiber One in a blender or food processor, and grind to a breadcrumb-like consistency. Transfer crumbs to a microwave-safe dish, and add egg substitute, applesauce, 1 1/2 teaspoons of cinnamon, and the remaining 2 tablespoons of Splenda. Stir well. Microwave graham mixture for 1 minute. Use a fork to break up the toughened mixture as much as possible, and then allow it to cool for a few minutes. Transfer graham mixture to a food processor or blender, and pulse until crumbly and uniform.
  • Evenly distribute graham topping over apple mixture. Place the dish in the oven, and bake for 10 minutes. Allow cobbler to cool slightly before serving.

1 cup blueberries
1/2 cup light vanilla soymilk
1/4 cup sugar-free syrup
1/4 cup fat free egg substitute (like Original Egg Beaters)
1/4 cup Splenda granular, Splenda No Calorie Sweetener (granulated)
3 tablespoons brown sugar (not packed)
2 tablespoons light butter, whipped, room temperature (or light buttery spread, room temperature)
2 tablespoons no-sugar-added applesauce (get Mott's Blueberry Delight if you can find it!)
1 1/2 teaspoons baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Preheat oven to 400 degrees.
  • In a mixing bowl, combine flour, Splenda, brown sugar, baking powder and salt. Mix well.
  • In a separate, large mixing bowl, combine soymilk, syrup, egg substitute, butter, applesauce and vanilla extract. Using an electric mixer or a whisk, mix until thoroughly blended. (Don't worry if butter bits do not break up completely.)
  • Add dry ingredients from the first mixing bowl to the mixture in the large one. Mix until completely blended. Then fold in the blueberries.
  • Line a 6-cup muffin pan (or half a 12-cup pan) with baking liners and/or spray with nonstick spray. Evenly distribute batter among the 6 cups.
  • Place in the oven and bake for about 22 minutes, until a toothpick inserted into the center of a muffin comes out clean. Enjoy!

Steps:

  • Preheat oven to 350 degrees.
  • Place squash in large microwave-safe bowl with 1/4 cup of water. Cover and microwave for 6 minutes. Once cool enough to handle, uncover and drain water. Set aside.
  • Place onions in a small microwave-safe dish with 2 tablespoons water. Cover and microwave for 3 minutes. Once cool enough to handle, uncover and drain any excess water. Set aside.
  • Place squash and all other ingredients except for the onions in a blender. (Make sure squash cubes are not still piping hot.) Pulse until thoroughly mixed (but not liquefied). Remove blender from the base, and then stir in the onions.
  • Transfer squash mixture to a small casserole dish sprayed with nonstick spray. Place in the oven, and bake for 35 - 40 minutes (until edges begin to brown). Then serve with a spoon as you would mashed potatoes! Enjoy!
