HERBED PEA DIP
Whenever I need a last-minute appetizer or snack, I pull out a bag of frozen peas, cook them briefly to defrost, then pulse them with whatever flavorings I have on hand like garlic, fresh herbs and olive oil. This dip is always a huge hit served with grilled bread or crudite.

HERBED CHICKPEAS
Crispy, salty, creamy, and full of protein (really!), these chickpeas should be a staple in your kitchen.

Steps:
- Place chickpeas in a large skillet or Dutch oven and add garlic and oil; season with salt and pepper. Cook over medium heat, stirring occasionally, until chickpeas are crisped and some have split open (these will be the most delicious ones), 10-15 minutes. Remove from heat; stir in herbs.
HERBED CARDAMOM PEAS
Peas (frozen or canned), on their own, are not one of my favorite vegetables but they are convenient to have on hand. This recipe dresses them up and adds flavor which I find otherwise lacking. I have only prepared this with frozen peas, but assume it would work just as well with the canned variety.

This pan-roasted chicken thigh dinner is a winning combo of warm, crispy skin, cool baby spinach, and a creamy pea puree (the puree also makes a great dip for vegetables). Keep an extra batch in the fridge for midday snacking.
