HERB GARLIC BAKED GOAT CHEESE

Herb Garlic Baked Goat Cheese image

Tangy goat cheese makes a simple but pretty cracker topper-especially when it's warm and topped with dried cranberries and garlic-infused oil.

Provided by Food Network Kitchen

Time 30m

Yield 8 servings

Number Of Ingredients 8

3 tablespoons olive oil
3 cloves garlic, peeled and thinly sliced
1 teaspoon chopped fresh rosemary
3 long strips orange zest
1/8 teaspoon crushed red pepper
1 log (11 oz.) fresh goat cheese
1/4 cup dried cranberries
32 Keebler® Town House® Flatbread Crisps - Sea Salt and Olive Oil

Steps:

  • 1. In small saucepan heat oil over medium-high heat. Reduce heat to medium. Add garlic, rosemary, orange zest and red pepper. Cook, uncovered, for 3 to 5 minutes or until garlic is golden, stirring frequently.
  • 2. Cut cheese into 8 even pieces. Place in 1-quart gratin dish or 9-inch pie plate. Sprinkle with cranberries. Pour garlic oil over top. Bake, uncovered, at 375 degrees F for 10 to 15 minutes or until cheese is warm. Serve warm with KEEBLER TOWN HOUSE Flatbread Crisps - Sea Salt and Olive Oil.

HERBED GOAT CHEESE

Herbed Goat Cheese image

Provided by Ina Garten

Categories     appetizer

Time 1h10m

Yield 8 servings

Number Of Ingredients 7

2 (6-ounce) creamy goat cheese disks, such as Coach Farm
Kosher salt and freshly ground black pepper
Minced fresh dill
Julienned fresh basil leaves
Crushed red pepper flakes
Good olive oil
Bread or crackers, for serving

Steps:

  • Find a small, wide-mouth canning jar or small glass vase (3 1/2 inches in diameter by 4 inches high), just large enough to hold the two goat cheeses on top of each other with a little room to spare. Cut each cheese in half horizontally, making 2 rounds from each. (A piece of dental floss makes this easier.)
  • Place half of the first disk flat in the jar, sprinkle with salt and pepper, then with 1/2 teaspoon dill, 1 teaspoon basil, and a few red pepper flakes, and drizzle with 1/2 tablespoon olive oil. Place another disk of cheese on top and repeat the seasonings, herbs, and oil. Continue with the remaining cheese disks, piling one on top of the other with oil and seasonings in between. When all the disks are stacked and seasoned, drizzle 1 tablespoon of olive oil on top. Cover and set aside at room temperature for one hour or refrigerate for up to 24 hours. Serve at room temperature with bread or crackers for people to help themselves.

Time 45m

Yield 8 to 10 servings

Number Of Ingredients 11

3 tablespoons olive oil
36 (1/2-inch-thick) slices baguette
3 tablespoons finely chopped fresh Italian parsley leaves
2 1/2 teaspoons finely chopped fresh thyme leaves
2 teaspoons finely chopped fresh rosemary leaves
1 teaspoon lemon zest
1 teaspoon coarsely cracked black pepper
1/4 teaspoon salt
1 11-ounce log soft fresh goat cheese
1 1/2 tablespoons extra-virgin olive oil or Meyer lemon olive oil
Fresh herb sprigs, for garnish

Steps:

  • Preheat the oven to 375 degrees F.
  • Arrange the bread slices on 2 heavy baking sheets. Drizzle 3 tablespoons of olive oil over the bread slices. Bake until the crostini are pale golden and crisp, about 10 minutes.
  • Meanwhile, stir the herbs, lemon zest, pepper, and salt in a medium bowl to blend. Using about 2 teaspoons of cheese for each, form the goat cheese into 1-inch diameter balls. Roll the cheese balls in the herb mixture to coat completely. Arrange the cheese balls on a platter. Drizzle the extra-virgin olive oil over and around the cheese balls. Serve with the crostini. Garnish with herb sprigs.
  • The crostini and cheese balls can be prepared 1 day ahead. Store the crostini in an airtight container at room temperature. Cover and refrigerate the cheese balls.

BEET, BACON AND HERBED GOAT CHEESE FLATBREAD

Beet, Bacon and Herbed Goat Cheese Flatbread image

Provided by Kelsey Nixon

Time 3h20m

Yield 1 flatbread

Number Of Ingredients 19

1 red beet or 2 to 3 baby beets
1 yellow beet or 2 to 3 baby beets
1/2 cup goat cheese
1 tablespoon fresh rosemary leaves, chopped
1 tablespoon fresh thyme leaves, chopped
1/4 recipe Simple Pizza Dough, recipe follows
Flour
Olive oil, for brushing
1/4 cup arugula
2 tablespoons fresh lemon juice
Salt and freshly cracked black pepper
1/4 pound bacon (4 slices), cooked crisp
1 3/4 cups warm water (105 to 110 degrees F)
1 envelope active dry yeast (2 1/4 teaspoons)
2 teaspoons sugar
3 tablespoons olive oil
4 cups bread flour, plus more for dusting
2 teaspoons salt
Nonstick spray

Steps:

  • Preheat the oven to 400 degrees F.
  • Wrap the beets in aluminum foil and roast in the oven until the beets are tender and a paring knife inserted in the center is met with no resistance, 45 minutes to 1 hour. Once cooked, set aside until they are cool enough to handle. Then, using a paper towel, rub the skin off the beets and then cut into moons or dice.
  • Mix the goat cheese with the rosemary and thyme until combined and set aside.
  • Gather up the rest of the ingredients and have them at the ready before you grill your bread.
  • Preheat a cast-iron grill pan, or a grill, to medium-high heat. Turn the dough out onto a floured work surface and stretch and press with your hands to form a thin, rectangular shape. If you need to, pick up the dough and let the natural weight of the dough stretch itself out. It doesn't need to be perfect, matter of fact it is better when it's not. Once you have the dough in the shape you like, brush one side of the dough with olive oil and lay that side down flat onto the preheated grill. Cook the dough until it is charred and has a crisp texture, about 5 minutes, brush the other side with some oil and then flip the dough and char the second side. Once the bread is charred and cooked, remove it from the grill and assemble the flatbread.
  • Spread the herbed goat cheese onto the flatbread. Toss the arugula with some lemon juice, olive oil, salt and pepper and then place it on the flatbread. Top with sliced beets and crispy bacon and another drizzle of olive oil. Cut the flatbread and serve.
  • In a liquid measuring cup, combine the warm water, yeast and sugar. Allow the yeast to dissolve and bloom, about 5 minutes. Once bloomed, add the olive oil.
  • Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, combine the flour and salt. Stream in the water/yeast mixture and as the dough begins to come together, switch to a dough hook attachment. Allow the dough to knead, adding a bit more flour if needed, so that the dough releases from the sides of the bowl, 1 to 3 minutes. You should be able to touch the dough and not have the dough stick to your fingers. Once the dough has kneaded and has pulled away from the sides of the bowl, remove the dough from bowl to a floured work surface and, with floured hands, continue to knead it by hand for 1 to 2 minutes. Then form the dough into a round ball and place it into a large bowl sprayed with nonstick spray. Cover the bowl with plastic wrap or a clean dish towel and let the dough rise in a warm area of your kitchen until it doubles in size, 1 1/2 to 2 hours. After the dough has risen it is ready to be cooked however you'd like!
  • Sugar is used to feed the yeast which will help the dough to grow. Bread flour will give you a chewier texture because the flour has more gluten. You don't need to use a thermometer to get the water temperature, it should just feel warm to the touch.

HERBED FLATBREAD

Herbed Flatbread image

Provided by Giada De Laurentiis

Time 43m

Yield 4 to 6 servings

Number Of Ingredients 8

3 1/2 cups all-purpose flour, plus extra for dusting
1/2 teaspoon baking soda
2 teaspoons fine sea salt
3 tablespoons chopped fresh rosemary leaves
3 tablespoons chopped fresh thyme leaves
1 stick (1/2 cup) butter, cut into 1/2-inch pieces, at room temperature
3/4 cup water, plus extra, as needed
2 tablespoons extra-virgin olive oil

Steps:

  • Combine the flour, baking soda, salt, rosemary, and thyme in the bowl of an upright mixer, fitted with a paddle attachment. Add the butter and mix on low speed until incorporated, about 2 minutes. With the machine running, slowly add the water until the mixture forms a dough, adding more water, if needed, 1 tablespoon at a time. Transfer the dough to a lightly floured work surface and knead for 5 minutes until smooth. Cut the dough into 4 equal pieces. Form into disc shapes and wrap in plastic wrap. Refrigerate for 30 minutes.
  • Place a grill pan over medium-high heat or preheat a gas or charcoal grill. On a lightly floured work surface, roll out each piece of dough into an 8 to 10-inch circle, about 1/8-inch thick. Brush each circle with olive oil and grill for 4 minutes each side. Remove the flatbread from the grill and cool slightly before serving.

Add onions and cook, stirring occasionally, for about 30 minutes, making sure to lower heat if they begin to cook too quickly. When onions are a deep caramelized brown, add salt and pepper, then stir to combine. Remove from heat, add vinegar, then let cool.
  • Prepare the flatbreads: Place flatbreads or naan in a toaster oven (conventional oven is also fine) and cook until slightly crispy. Remove and let cool.
  • Prepare the herbed goat cheese: Combine goat cheese, garlic, and thyme in a small bowl and stir with a spatula until well mixed.
  • Assemble: To serve, spread a thin layer of goat cheese on each flatbread or naan. Add a generous portion of caramelized onions, then top each with fresh microgreens. Serve warm or at room temperature.
