Roasted Brussels Sprouts with Bacon & Almonds image

Roasted Brussels Sprouts with Bacon & Almonds are the perfect side dish for any meal! Simple recipe and unbelievably delicious!

Number Of Ingredients 6

6 slices bacon
1 1/2 pounds Brussels sprouts, trimmed and halved lengthwise
3 tbsp. reserved bacon grease
3/4 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1/4 cup slivered almonds

Steps:

  • Cook bacon in a skillet over medium-high heat until desired crispness. Transfer bacon to paper towels to drain, reserving 3 tbsp. of the bacon grease.
  • Discard the remaining bacon grease or save for another use. Preheat oven to 400 degrees F.
  • Mix Brussels sprouts in a bowl with the reserved bacon grease, salt, and pepper. Pour them on a rimmed baking pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly.
  • Crumble the bacon. Stir the bacon and almonds into the Brussels sprouts. Serve immediately.

Shaved Brussels Sprouts with Bacon image

Number Of Ingredients 5

1½ pounds Brussels sprouts (larger sprouts are easier to shave, but smaller sprouts will also work fine)
12-ounce package bacon (we used apple wood)
Non-stick pan spray
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper

Steps:

  • Using a mandoline on the setting that cuts 1/8th-inch slices, hold the stem, slice all of the Brussels sprouts and discard the stems. Set shavings aside.
  • Cut the bacon into pieces by slicing the whole 12-ounce slab of slices in half, then stack and slice.
  • Heat a large sauté pan over medium high heat and once hot, spray* with pan spray. (*Pull pan off flame before spraying pan.)
  • Add bacon and cook until just short of crisp, about 5-8 minutes.
  • Use a spider or slotted spoon and remove the bacon to a bowl or plate.
  • Pour off all but ¼ cup of the bacon fat.
  • Add the shaved sprouts and sauté about ten minutes or until your desired doneness. We like them a little underdone so ours were cooked in eight minutes.
  • Add the reserved bacon, salt and pepper and cook just to heat.
  • Serve immediately.

1/2 cup lemon juice
2 tablespoons minced shallots
1 tablespoon Dijon mustard
1 tablespoon honey
1/2 cup extra-virgin olive oil
Kosher salt and freshly cracked black pepper
One 16-ounce bag shaved Brussels sprouts
1/4 cup chopped dates
1/4 cup diced manchego cheese
1/4 cup chopped almonds

Steps:

  • In a small bowl, combine the lemon juice and shallots. Let stand 5 minutes, so the acidity in the lemon juice can begin to break down the shallots. Whisk in the Dijon and honey until well combined. Slowly whisk in the olive oil until emulsified. Season aggressively with salt and add pepper to taste.
  • Add the sprouts, dates, manchego and almonds and toss to coat. The salad can be dressed 15 to 20 minutes in advance if you like more tender Brussels sprouts.

4 strips bacon
chopped into small pieces
2 cloves garlic
peeled
1 tsp red pepper flakes
1 lb Brussels sprouts
bottoms trimmed
cut in half
Salt and black pepper to taste
2 Tbsp sliced almonds

Steps:

  • Heat a large skillet or sauté pan over medium heat. Add the bacon and cook until crispy, about 5 minutes. Remove to a plate lined with paper towels. Discard all but 1 tablespoon of the rendered bacon fat. Add the garlic, pepper flakes, Brussels sprouts, and a pinch of salt to the skillet. Sauté until the sprouts are lightly browned on the outside and tender-but still firm-throughout, 10 to 12 minutes. Add the almonds and sauté for another minute or two. Season with salt and pepper.

1/4 cup olive oil
3/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 cup balsamic vinegar
1/2 cup sugar
1 cup dried cranberries
1/2 cup sliced almonds, toasted

Steps:

  • Preheat oven to 400°. In a large bowl, toss Brussels sprouts with oil, salt, garlic powder and pepper. Transfer to a greased 15x10x1-in. baking pan. Roast 30-35 minutes or until tender, stirring occasionally., In a small saucepan, combine vinegar and sugar; bring to a boil, stirring to dissolve sugar. Reduce heat; simmer, uncovered, 15-20 minutes or until syrupy, stirring occasionally., To serve, place Brussels sprouts in a serving dish; drizzle with glaze and toss to coat. Sprinkle with cranberries and almonds.

  • Cut the stems off the Brussels sprouts. In a food processor fitted with the slicing attachment, shred the Brussels sprouts. You might have to do it in batches depending on how large your food processor is. You can also thinly slice with a knife if you don't have one.
