Seasoned to perfection, these Herbed Steak Fries from our Test Kitchen make a quick and tasty side dish for casual suppers. A great way to dress up frozen fries in a hurry!

4 cups frozen steak fries
1 tablespoon olive oil
1-1/2 teaspoons dried basil
1-1/2 teaspoons dried parsley flakes
1/4 teaspoon garlic salt
1/4 teaspoon seasoned salt
1/4 cup grated Romano cheese

Steps:

  • In a large bowl, combine the first six ingredients; toss to coat. Arrange steak fries in a single layer in a greased 15x10x1-in. baking pan. , Bake at 450° for 15-20 minutes or until lightly browned. Sprinkle with cheese.

Number Of Ingredients 7

Olive oil for brushing
3 1/4 cups cold water
1 cup polenta (not quick-cooking)
1 teaspoon chopped sage
1 teaspoon chopped rosemary
1/2 cup grated Parmigiano-Reggiano
2 tablespoons unsalted butter, cut into bits

Steps:

  • Brush an 8-inch square baking dish with oil.
  • Combine water, polenta, herbs, and 3/4 teaspoon salt in a heavy medium saucepan and bring to a boil over medium heat, whisking. Reduce heat to medium-low and cook, stirring constantly with a long-handled wooden spoon, until polenta begins to pull away from side of pan, 15 to 20 minutes. Stir in cheese and butter until incorporated, then transfer polenta to baking dish, spreading evenly with a dampened rubber spatula. Chill, uncovered, until set, about 45 minutes.
  • Preheat broiler. Line a baking sheet with foil and brush with oil.
  • Unmold polenta, then cut into 16 (about 4- by 1-inch) sticks. Brush tops with oil and space evenly on baking sheet. Broil about 4 inches from heat until golden, 15 to 20 minutes.

1 1/2 lbs baking potatoes, peeled
1/3 cup parmesan cheese, grated
1/2 teaspoon dried oregano
1/4 teaspoon dried rosemary
1/4 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Preheat the oven to 400 degrees. Cut the potatoes lengthwise into 1/4 inch thick slices, then cut the slices lengthwise into 1/4 inch wide sticks.
  • Place the potatoes in a large bowl, lightly spray with nonstick cooking spray and toss to coat. Add the Parmesan, oregano, rosemary and pepper and toss again.
  • Transfer the potatoes to 2 baking sheets, lined with parchment paper, and bake for 40 minutes, turning every 12 minutes or till the potatoes are brown and crisp.
  • Place the fries on a platter, sprinkle with salt and serve.

  • Add the sliced potatoes to a bowl of ice water and let them sit for 30 minutes. AFter 30 minutes, remove the potatoes and place them on one or two towels, patting them as dry as possible. Cover a baking sheet or two with paper towels.
  • Add the oil to a large pot and heat over medium heat until the temperature reaches 350 degrees. You can do this while the potatoes are soaking. You really NEED to use a candy thermometer for this to ensure that the oil doesn’t get too hot. One the oil is hot, add the potatoes in batches and fry until slightly golden, about 2 to 3 minutes. Remove the potatoes and place them on the paper towels to drain. Let all of the potatoes cool for about 10 to 15 minutes, then make sure the oil is still at 350 and fry them in batches again. This time, you want to fry until they are even more golden and maybe a little puffy. Remove and place on the baking sheet again quickly, but this time you can let them drain for a second and them throw them on a plate or a sheet of parchment paper. Cover immediately with lots of the herb salt. Add the parmesan and toss, toss, toss. Taste to see if they need more salt or cheese. Of course they do!
  • Combine the basil, cilantro, parsley, oregano, salt and garlic powder in a bowl and mix until combined.
