These cookies have a chocolatey taste, and are rich in fiber. They are quite moist and very filling. These cookies have a subtle sweetness to them, making them sweet, yet not too sweet.

- Preheat the oven to 350 degrees (F).
- Mix all of the ingredients together in a bowl.
- On a greased cookie sheet, place balls of dough spaced about 2" apart.
- Bake for 8 minutes, then check on them. How long they take to bake will depend on your oven as well as how large you made each cookie. Mine usually take between 10 and tweleve minutes to bake.

VEGAN AND OIL-FREE CHOCOLATE CHIP COOKIES

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Line a large baking sheet with parchment paper.
- Combine oat flour, baking powder, carob powder, and sea salt in a large bowl and set aside.
- Combine soy milk, syrup, applesauce, vinegar, and vanilla in a separate bowl. Pour the wet ingredients into the dry and mix until combined, then fold in the chocolate chips.
- Using a tablespoon, scoop the mixture onto your prepared baking sheet to make roughly 12 cookies, leaving space in between each one.
- Bake in the preheated oven for 10 minutes, then remove from the oven and let cool for 10 minutes before transferring them to a wire rack. Enjoy warm, or let cool to room temperature.

Can you say yum? These are great, but i'm working on making them better. My last batch tasted as if it where missing a little bit of something...vegan butter I think...

Steps:
- Preheat oven to 375 degrees.
- In a medium sized bowl, sift together flour, baking soda, and salt. Set aside.
- In another bowl combine the vegan butter, sugar, vanilla, egg replacer (mixed with the water beforehand. Mix well.
- Add the dry ingredients. Mix.
- Add carob chips (and nuts if desired).
- Drop teaspoonfulls on a greased cookie sheet and bake 8-10 min(i like my cookies more chewy, so about 8 minutes works great.
- Cool on a rack and try not to eat them all up too fast!

- In a large bowl, whisk together sugars, oil, and coffee until completely smooth. Stir in the flour, baking powder, and baking soda until just combined. Stir in the carob or chocolate chips until distributed. Form the dough into a disc shape and cover with plastic. Refrigerate at least 24 hours, 48 is way better. If you’re really feeling crazy, go for 72, but no more. Dough must be chilled at least 24 hours though.
- When ready to bake, preheat oven to 350 degrees F. Line two cookie sheets with parchment. Form the dough into golf ball sized portions and place well spaced on the sheets. Sprinkle with salt (I actually like pink salt, but whatever finishing salt floats your boat will work).
- Bake about 13 minutes. Cookies should look rather underdone – that is okay. Serve warm or cool completely on the tray. Cookies may be stored in an airtight container for up to 5 days or frozen, wrapped in parchment and foil, and placed in a zipper bag for up to 3 months.
