CLASSIC MINESTRONE SOUP



Classic Minestrone Soup image

Minestrone soup is an Italian favorite! This version is made with cannellini beans, chicken stock, cabbage, potato, zucchini, carrots, plum tomatoes, and Parmesan cheese.

1/4 cup extra virgin olive oil
3/4 cup chopped onion
3/4 cup chopped carrot
3/4 cup chopped celery
1 tablespoon minced garlic
1 bay leaf
2 sprigs fresh thyme or a teaspoon of dried thyme
1/4 teaspoon fennel seeds, crushed
1 Yukon gold potato, peeled and cut into 3/4-inch chunks
2 cups sliced savoy or curly cabbage
1 zucchini, cut into 3/4-inch chunks
2 medium fresh ripe tomatoes (romas if available), cored, peeled, chopped
6 cups chicken stock (or vegetable stock for vegetarian version)
1 15-ounce can cannellini or great northern white beans, drained (about 1 1/2 cups cooked white beans)
1/4 cup chopped fresh parsley
Salt
Freshly ground black pepper
Parmesan cheese, grated for garnish

Steps:

  • Sauté the vegetables: Heat oil in a 4- to 5-quart thick-bottomed pot on medium-high heat. Add the onion, carrot, and celery. Cook until lightly browned, about 8 minutes. Add the garlic and cook a minute more. Add the bay leaf, thyme, fennel seeds. Add the potato, cabbage, zucchini, and tomatoes. Add the chicken stock.
  • Simmer the soup: Bring to a boil and reduce heat to a simmer. Partially cover and simmer for 20 minutes, until the vegetables are tender and cooked through.
  • Finish the soup: Add the beans and parsley to the soup. Season to taste with salt and pepper. Bring to a simmer and cook for 5 more minutes. Remove bay leaf and thyme sprigs. Serve with a sprinkle of grated Parmesan cheese.

1 pound bulk Italian sausage
2 cups sliced celery
1 cup chopped onion
6 cups chopped zucchini
1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups chopped green pepper
1-1/2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1 teaspoon dried oregano
1 teaspoon sugar
1/2 teaspoon dried basil
1/4 teaspoon garlic powder

Steps:

  • In a large saucepan, cook the sausage until no longer pink. Remove with a slotted spoon to paper towel to drain, reserving 1 tablespoon of drippings. Saute celery and onion in drippings for 5 minutes. Add sausage and remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 20-30 minutes or until the vegetables are tender.

⅓ cup milk
⅓ cup bread crumbs
1 ½ teaspoons Worcestershire sauce
½ teaspoon salt
1 ½ pounds ground beef
4 cups beef broth
1 (28 ounce) can whole peeled tomatoes
1 (12 ounce) can corn, drained
2 cups chopped celery
2 cups shredded cabbage
1 medium onion, chopped
1 small zucchini, chopped
½ cup dry red wine
1 tablespoon dried parsley
1 teaspoon dried oregano
¼ teaspoon dried basil
⅛ teaspoon garlic powder
salt and ground black pepper to taste
1 cup broken spaghetti

Steps:

  • Combine milk, bread crumbs, Worcestershire sauce, and salt in a large bowl. Add ground beef and mix well. Shape into 36 to 48 meatballs.
  • Heat a large nonstick skillet over medium heat. Cook meatballs in batches until browned, 2 to 3 minutes per side. Transfer to a plate and set aside.
  • Combine beef broth, tomatoes, corn, celery, cabbage, onion, zucchini, wine, parsley, oregano, basil, garlic powder, salt, and pepper in a large pot. Stir in browned meatballs. Simmer soup until vegetables are tender, 35 to 40 minutes. Stir in broken spaghetti and cook until tender, about 20 minutes more.

1 pound ground pork
1/2 cup chopped celery
1/2 cup chopped onion
1/2 teaspoon minced garlic
1 can (28 ounces) crushed tomatoes
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 cups tomato juice
1 can (15 ounces) tomato sauce
1 can (14-1/2 ounces) beef broth
3 medium carrots, chopped
1 medium zucchini, halved lengthwise and thinly sliced
1 tablespoon Italian seasoning
1 to 1-1/2 teaspoons salt
1/2 teaspoon sugar, optional
1/8 teaspoon pepper
ADDITIONAL INGREDIENTS (for each batch):
1/2 cup water
1 cup uncooked ziti or small tube pasta

Steps:

  • In a Dutch oven, cook the pork, celery and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the tomatoes, beans, tomato juice, tomato sauce, broth, carrots, zucchini, Italian seasoning, salt, sugar if desired and pepper. Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until carrots are tender. , Transfer 6 cups of soup to a freezer container; cool. Freeze for up to 3 months. Add water and pasta to remaining soup; bring to a boil. Cover and cook until pasta is tender. , To use frozen soup: Thaw in the refrigerator; transfer to a large saucepan. Stir in water. Bring to a boil; reduce heat. Add pasta; cover and cook until tender.

3 stalks celery, chopped
3 carrots, chopped
1 onion, chopped

3 cups vegetable stock
1 tablespoon Italian seasoning, or more to taste

1 (14.5 ounce) can diced tomatoes with basil and garlic
2 potatoes, diced
1 (15 ounce) can kidney beans, drained
1 cup bite-sized pieces kale

Steps:

  • Heat olive oil in a large pot over medium heat. Cook and stir celery, carrots, onion, and garlic in the hot oil until the onion is translucent, 7 to 10 minutes.
  • Pour vegetable stock over the vegetable mixture; season with Italian seasoning, kosher salt, and black pepper. Stir tomatoes, potatoes, and kidney beans into the stock mixture; bring to a simmer and cook until the potatoes are tender, about 40 minutes. 1 medium onion, chopped
2 celery ribs, chopped

2 cans (14-1/2 ounces each) chicken broth
1/4 teaspoon garlic powder

1 cup ditalini or other small pasta

  • In a Dutch oven, cook sausage, onion, celery and carrots over medium heat 8-10 minutes or until sausage is no longer pink and onion is tender, breaking sausage into crumbles; drain., Stir in tomatoes, beans, broth, garlic powder and pepper; bring to a boil. Add pasta; cook, covered, 6-8 minutes or until pasta is tender. Freeze option: Freeze cooled minestrone in freezer containers. To use, partially thaw in refrigerator overnight. This is an amazingly tasty - and hearty soup that's easy to make. My mother-in-law got the recipe from a cookbook, and I've made a few changes. My DH loves it, especially served with cornbread or Pillsbury cornbread refrigerator twists. Enjoy!

2 tablespoons olive oil
3/4 cup green onion, sliced
1 garlic clove, minced
1 (10 ounce) can Rotel Tomatoes
1/2 cup salsa (your choice)
1 (14 1/2 ounce) can chicken broth
2 cups water
1 (13 ounce) canned chicken, drained (or turkey) or 2 cups shredded cooked chicken (or turkey)
3/4 lb small red new potato, sliced small
1 cup carrot, sliced
1 cup red green yellow, and orange bell pepper
1 cup zucchini, sliced at 1/8 in size
1 (19 ounce) can white navy beans or 1 (19 ounce) can kidney beans, drained
2 bay leaves
1 teaspoon dried basil leaves
1 teaspoon dried oregano leaves
2 tablespoons lime juice
1 teaspoon lime zest, if desired

Steps:

  • In a large, deep skillet, (or large sauce pan with wide base), saute green onions, potato, and garlic in oil until soft.
  • Add all remaining ingredients except lime juice and peel.
  • Bring to a boil, stirring occasionally.
  • Reduce heat to medium-low and simmer 20 minutes, or until potatoes are just tender.
  • Stir in lime juice and peel, remove bay leaves. ENJOY!
