PORK TENDERLOIN STEAKS WITH WILTED CABBAGE AND APPLES

Steps:
- Slice the pork tenderloin at a long angle into 4 "steaks" and sprinkle with the thyme and a total of 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Heat the oil in a large skillet over medium-high heat until very hot, but not smoking. Add the steaks to the skillet and cook, turning once, until well browned and just a bit pink in the center, about 7 minutes per side. Turn the heat down to medium if the skillet starts to get too dark. Put each steak on a plate to rest.
- While the steaks cook, core and slice the apple and thinly slice the cabbage. Stir together the broth, vinegar and sugar in a small bowl.
- When the pork has finished cooking, add the cabbage, apples, 1/4 teaspoon salt and 1/4 teaspoon pepper to the same skillet. Cook, tossing, until slightly wilted, 2 to 3 minutes. Add the broth mixture and continue to cook until the cabbage is tender and the liquid has reduced slightly, 2 to 3 minutes. Remove from the heat and stir in the parsley leaves. Season with additional salt and pepper.
- Divide the cabbage and apples and any juices in the skillet among the plates with the steaks. Serve with a roll.

- Bring 3 1/2 cups water and 1/2 teaspoon salt to a boil in a medium saucepan. Reduce the heat to medium-low and stir in the oats. Cook, stirring frequently, until the oats are creamy and tender, 5 to 6 minutes. Remove the saucepan from the heat, cover and rest until the oatmeal thickens slightly, about 2 minutes.
- Whisk together the yogurt, 1 tablespoon of the maple syrup and the matcha in a small bowl until smooth and creamy. Set aside.
- Transfer the oatmeal to four serving bowls, and top each with 1/4 cup of the matcha yogurt. Scatter the chopped pistachios over the oatmeal and drizzle with the remaining maple syrup. Top each serving with some apples and sprinkle with matcha to serve.

PORK WITH SQUASH AND APPLES

- Preheat the oven to 425 degrees. Mix the nutmeg, 1 teaspoon garlic and the sage in a bowl. Rub over the pork and season with salt and pepper.
- Toss the squash, apples, onion, the remaining 1/2 teaspoon garlic, the honey mustard, and salt and pepper to taste in a bowl. Spread out on a long sheet of foil. Add the rosemary and 3 tablespoons butter, then bring the ends of the foil together and crimp to seal into a packet. Place the packet on a baking sheet and roast on the upper rack until tender, 30 to 35 minutes. Poke holes in the packet to release steam.
- Meanwhile, heat a large ovenproof skillet over medium-high heat. Add the remaining 2 tablespoons butter, then brown the pork on all sides, about 8 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan, then transfer the skillet to the lower oven rack and roast until a thermometer registers 150, about 15 minutes. Transfer the meat to a cutting board and let rest 5 minutes.
- Return the skillet to medium heat. Add 1/2 cup water, scrape up any browned bits and simmer about 2 minutes. Slice the pork and drizzle with the pan juices. Serve with the squash and apples.
HEALTHY MONSTER APPLES
Steps:
- Cut each apple in half and core the centers. Cut the top and bottom of each apple off at a slight inward angle so the apple halves stand upright. Cut away wedge-shaped slices from the centers using a paring knife to create a "mouth." Slice the wedges deep enough so a small hole is created in the center of each "V." Brush the exposed apple flesh with lemon juice to prevent browning.
- Stick the sunflower seeds into the apple's flesh to create "teeth."
- Insert a mango slice into the hole in the center of each apple to create a tongue. Add small dots of frosting to the backs of the candy eyeballs to secure them just above the mouth.
GREEK YOGURT OATMEAL
Oatmeal is a great way to start a day! I have it almost every morning, so to not get bored I add different toppings and vary the ingredients I put in, always healthy and always delicious! Greek yogurt goes fantastically with hot oats and makes it creamier, adds protein, and most important of all makes a standard bowl of oatmeal phenomenal! Sprinkle with some more cinnamon, if you desire.
