SPICY FETA DIP

Steps:
- Add the roasted red pepper, Calabrian chile paste, salt and garlic to the bowl of a food processor. Pulse until the mixture is chunky and evenly chopped. Using your hands, break the feta up into large chunks and add it to the food processor. Pulse the mixture until the feta is incorporated into the pepper mixture. (The mixture should remain slightly chunky.) Refrigerate for at least 30 minutes for the flavors to come together. Serve with crackers, veggies, on sandwiches or burgers. Spicy feta dip will keep, refrigerated in an airtight container, up to 1 week.

Steps:
- In a food processor, combine feta, milk, walnuts, oregano, pepper, lemon juice and hot sauce until smooth and creamy.
- Scoop the feta dip with a spatula from the processor into a serving bowl and garnish with red pepper and olives.
- Serve with crispy flat breads, cut pitas and cucumbers for dipping.
- Enjoy! ;).

- Pulse feta cheese in a food processor just enough to get uniformly small crumbles; transfer to a bowl.
- Puree red peppers, pepperoncini peppers, and cayenne pepper in the food processor until smooth. Mix pepper puree, ricotta cheese, and lemon juice into feta cheese until dip is an even texture and color. Transfer to a sealed container; refrigerate 2 hours to overnight.

- Using a cheese cloth or a triple ply paper towel over a colander remove some of the excess water from the yogurt.
- Combine all ingredients in a food processor and Voila! You have a great dip in less than a minute.

I ate this at a Bulgarian restaurant and it was simply delicious. I think I came pretty close to the original recipe by mixing my own ingredients and proportions. My husband and I like to enjoy this dip with a nice glass of red wine.

- In a bowl using a strainer and paper towel drain the yogurt from excess water for about 30 minute.
- In a separate bowl mix the above ingredients including the drained yogurt.

- In the bowl of your food processor, combine the feta, bell pepper, olive oil, lemon juice, cayenne pepper, and about 10 twists of freshly ground black pepper.
- Process until the mixture is orange, fairly smooth, and you no longer see any big chunks of feta. Don’t overdo it; small bits of feta are good and over-processing this dip will make it gritty. Taste, and add additional cayenne pepper (up to 1/4 teaspoon more) if you want it to be extra spicy. Blend briefly to combine.
- Transfer the mixture to a serving bowl. Smooth the top and create a few swooshes with a spoon. Lightly drizzle some olive oil on top, and sprinkle with red pepper flakes if desired. Serve immediately, or cover and refrigerate for later. This dip will keep well in the refrigerator for 7 to 10 days.
