This is an easy and wholesome cake to bake.

Ingredients

½ cup rolled oats
½ cup butter
1 cup boiling water
1 ½ cups packed brown sugar
2 eggs, beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
4 tablespoons cocoa

Steps:

Preheat oven to 350 degrees F (175 degrees C). Grease one 8x8 inch pan.
In a large bowl, mix together the rolled oats and butter. Mix in boiling water. Set aside to cool.
Beat together the brown sugar, eggs and vanilla; add to cooled oat mixture and mix well.
Sift together the flour, baking soda, baking powder, salt and cocoa. Add to wet ingredients and mix well. Spread into the prepared pan.
Bake at 350 degrees F (175 degrees C) for 40 minutes. Remove from oven, allow to cool, and remove pan.

1 cup quick-cooking oats
1/2 cup butter, cubed
4 ounces German sweet chocolate, chopped
1-1/4 cups boiling water
3 large eggs
1 cup packed light brown sugar
1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
TOPPING:
1-1/2 cups packed light brown sugar
1 cup flaked coconut
1 cup chopped pecans
3/4 cup butter, melted
1/2 cup half-and-half cream

Steps:

Preheat oven to 350°. Grease a 13x9-in. pan. In a bowl, combine oats, butter and chocolate; pour boiling water over top. Let stand 10 minutes., Stir oatmeal mixture until combined; whisk in eggs and brown sugar. In another bowl, whisk together flour, sugar, baking soda and salt; stir into oatmeal mixture just until combined., Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 30-35 minutes. Remove from oven. Preheat broiler., Combine topping ingredients; spread over warm cake. Broil 4 in. from heat until lightly browned, 3-4 minutes.

Heat the milk in a small saucepan on medium heat. Add in the oats and chia seeds. Bring to a boil, and reduce the heat. Allow to simmer for 4-5 minutes, stirring occasionally. Pour into a bowl.
In a small microwave sage bowl, microwave the honey and coconut oil for 30 seconds and mix until smooth. Mix in the coconut and pecans. Scoop on top of the oatmeal.
