BEST DEEP DISH APPLE PIE

Best Deep Dish Apple Pie image

I've been making apple pie since I was a kid, using my grandmother's recipe. And it's awesome! But you know I have to play with my food... I tried different apples, combinations of apples, etc. One year we all agreed I had hit upon the best combination, and it was as good as it could be. Apples are like wine -- even the...

Time 1h10m

Number Of Ingredients 8

4 medium granny smith apples
3 medium jonathan apples
1 medium macintosh apple
3/4 c sugar
2 tsp pumpkin pie spice
2 Tbsp cornstarch
2 Tbsp lemon juice
2 Tbsp butter, sliced into thin pats

Steps:

  • 1. Prepare a double crust for a deep dish 9" pie plate.
  • 2. Peel, core, and slice the apples. You'll want about 9 cups of prepared fruit. Place the apple slices in an extra large mixing bowl.
  • 3. Sprinkle the lemon juice over the apple slices, and toss to coat. Set aside.
  • 4. In a small mixing bowl combine the sugar, spice, and cornstarch. Stir the sugar mixture into the apples until the slices are well coated. (A wooden spoon works great for this.)
  • 5. Mound the coated apple slices into the crust in the pie plate, slightly higher in the middle.
  • 6. Dot the top of the apple slices with the pats of butter.
  • 7. Lay the top crust over the filling, and gently crimp the edges to seal. Make a few shallow cuts in the top crust, in any pattern you like, to allow steam to escape.
  • 8. Bake at 425* for about 50 minutes. The pie is done when the crust is golden brown, and the juices are bubbling out through the slits in the crust.
  • 9. NOTES: I like to sprinkle the top of the crust with cinnamon-sugar before baking. If the crust is getting too dark too soon, reduce the heat to 350* for the remaining time. You may need a few extra minutes of baking time. You may use any combination of apples you like, or simply use all tart apples -- whatever you prefer. If I'm in a hurry, I don't bother to peel the apples! A corer-slicer tool is very helpful, and makes short work of the prep. Whole wheat crust is very good with this pie -- we actually liked it better than regular crust. This recipe is easily made gluten free by using a GF pie crust. (I recommend Pillsbury GF pie dough!)

DEEP-DISH APPLE PIE WITH CRUMBLE TOPPING

Deep-Dish Apple Pie with Crumble Topping image

I got this recipe from lots of different sources. I couldn't find one I liked. So took what I liked and added my own spin and this is what came out. I love this recipe, because it has all the flavors of fall. A little trick I learned from my grandmother: use different types of apples for the best flavor. I use Granny Smith, Braeburn, and Golden Delicious, but you can use whatever you like. I serve it as is, but encourage the use of ice cream, whipped cream, or whatever addition the occasion calls for.

DEEP-DISH VEGAN APPLE PIE

Deep-Dish Vegan Apple Pie image

Extra-virgin coconut oil is a great substitute for butter in both the pie dough and the apple filling to make this all-American fruit pie vegan-friendly. We use a mix of apples for the filling: The Golden Delicious keep their shape and are a nice contrast to the soft McIntoshes, and the Granny Smiths give a nice tartness.

Provided by Food Network Kitchen

Categories     dessert

Time 8h15m

Yield 8 to 10 servings

Number Of Ingredients 14

3 cups all-purpose flour, plus more for rolling
2 tablespoons vegan granulated sugar
2 tablespoons white vinegar
Fine salt
1 cup unrefined virgin or extra-virgin coconut oil
8 to 10 tablespoons ice water
4 pounds mixed apples (8 or 9), such as Golden Delicious, Granny Smith and McIntosh
2/3 cup vegan granulated sugar, plus more for sprinkling
2 tablespoons fresh lemon juice
4 tablespoons unrefined virgin or extra-virgin coconut oil
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon or apple-pie spice
1/4 teaspoon fine salt
2 tablespoons unsweetened almond or soy milk

Steps:

  • Special equipment: a 9 1/2-inch deep-dish pie pan
  • For the dough: Put the flour, sugar, vinegar and 1/2 teaspoon salt in a food processor, and pulse to combine. Add the coconut oil in small spoonfuls, and pulse until the largest pieces are pea-size. Add 8 tablespoons ice water, and pulse until evenly combined. Squeeze a handful of the dough together; it should just hold its shape. If the mixture is very powdery, pulse in an additional 1 to 2 tablespoons ice water. Divide the dough between 2 large pieces of plastic wrap, pat each into a 1/2-inch thick discs and chill for at least 1 hour up to overnight.
  • For the filling: Meanwhile, peel and core the apples; cut into 1/2-inch-thick slices. Toss with the sugar and lemon juice in a large bowl. Melt the coconut oil in a large skillet over medium-high heat. Add the apples and cook, stirring occasionally, until the firmer apples soften but hold their shape, about 12 minutes. Add the flour, cinnamon and 1/4 teaspoon salt, and stir to combine. Remove from the heat, and let cool completely. (The filling can be made up to 2 days ahead; cover and refrigerate.)
  • To assemble: To make rolling easier, let the dough soften a bitit should be slightly soft when pressedat room temperature (this may take anywhere from 20 to 40 minutes depending on the temperature of your kitchen). Roll 1 disc of dough out into a 13-inch round on a lightly floured surface or between two pieces of floured parchment or wax paper. If the dough gets too warm, refrigerate it to firm it up. Ease the crust into a 9 1/2-inch deep-dish pie pan. Add the cooled filling, mounding it slightly in the center.
  • Roll out the remaining dough disc into a 12-inch round; place it over the filling, and press the 2 crusts together around the edges. Fold the overhanging dough under itself, and crimp as desired. Brush the top and edges with the almond milk, and sprinkle generously with sugar. Pierce the top with a knife (or make decorative cutouts) a few times to let steam escape. Chill for at least 1 hour.
  • Position an oven rack in the lowest position in the oven, place a baking sheet on the rack and preheat to 425 degrees F; preheat for at least 30 minutes. Place the pie on the hot baking sheet, and lower the oven to 375 degrees F. Bake until the pie is golden and the filling is bubbly, 1 hour to 1 hour 20 minutes, rotating as needed. (Cover the edges with foil if they brown too quickly.) Transfer to a rack, and cool until set, about 3 hours.

DEEP-DISH APPLE PIE

Deep-Dish Apple Pie image

This hearty, rustic version of the classic American dessert puts all the focus on the texture and flavor of the apple filling.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Number Of Ingredients 10

Pate Brisee for Deep-Dish Apple Pie
All-purpose flour, for dusting
5 1/2 pounds firm, tart apples, such as Empire
Juice of 2 lemons
1 cup sugar
2 teaspoons ground cinnamon
6 tablespoons unsalted butter
1/2 cup brandy
1 large egg yolk
1 tablespoon sugar, for sprinkling

Steps:

  • Heat oven to 450 degrees. Place three-quarters of the pate brisee on a lightly floured work surface. Roll dough out to a 12-inch-diameter circle, 1/8 inch thick, dusting work surface with flour to prevent sticking, as necessary. Brush off excess flour; roll dough around rolling pin, and lift it over a deep-dish pie pan. Line the pan with the dough, pressing it into the corners. Trim dough so that it hangs over pie plate by about 1/4 inch. Roll out remaining dough to a 10-inch-diameter circle. Transfer dough round to a parchment-lined baking sheet, and refrigerate both crusts.
  • Peel and core apples, then cut into 1/4-inch-thick slices. As you cut, place slices in a large bowl, and sprinkle with lemon juice to prevent discoloration. In a small bowl, combine sugar and cinnamon. Toss apple slices with sugar mixture.
  • Divide butter between 2 large skillets, and melt over medium-high heat. Divide apples between skillets, and cook, stirring often, until sugar melts and apples are golden and coated in syrup but still firm, 8 to 10 minutes.
  • Pour brandy into a measuring cup. Pour half the brandy into 1 skillet and carefully ignite with a match. Cook until flames die down, shaking pan to toss apples in melted sugar and brandy. Repeat with remaining brandy and apples. Remove from heat, and set aside.
  • Remove the crusts from the refrigerator; transfer cooked apples to prepared pie pan, letting apples mound in center. Whisk egg yolk with 2 tablespoons water to make egg glaze, and brush glaze on edge of dough. Center the rolled pie dough over apples. Tuck edges of top crust between pie pan and bottom crust. Using your fingers, gently press crusts together along edge, and crimp.
  • Cut several steam vents into crust. Brush surface with egg glaze, and sprinkle with remaining 1 tablespoon sugar.
  • Bake pie until golden brown on top, about 15 minutes. Reduce heat to 350 degrees and bake until the crust is crisp and the apples are soft, 45 to 50 minutes more. Let stand at least 30 minutes before serving.

DEEP-DISH APPLE PIE

Deep-Dish Apple Pie image

If you're going to the trouble of making a pie, why not make it a blockbuster? This pie, adapted from the professional pie coach Kate McDermott, is both deeper and wider than the traditional nine-inch version. The thicker rim is especially satisfying, like a buttery, crumbly slab of shortbread. You can use a 10-inch deep-dish pie pan, or a deep nine- or 10-inch square, or another 2 1/2- to 3-quart baking dish of your choice. A mix of apple types always makes the best filling.

Time 2h

Yield 12 to 16 servings

Number Of Ingredients 16

3 3/4 cups/450 grams all-purpose flour, more for dusting surfaces
1 1/2 teaspoons kosher salt
1/2 teaspoon sugar
12 ounces/340 grams cold unsalted butter (3 sticks), cut into large dice
About 10 cups/40 ounces/1200 grams peeled and sliced apples, more as needed (see note)
1/2 cup/100 grams granulated sugar
1/2 teaspoon salt
1 teaspoon cinnamon
Pinch freshly grated nutmeg
1/2 teaspoon allspice
1 to 2 teaspoons freshly squeezed lemon juice or 1 tablespoon unfiltered apple cider vinegar
1 to 2 tablespoons Calvados or other apple liqueur, brandy or cider
1/2 cup/70 grams all-purpose flour
2 tablespoons/30 grams cold butter, cut into small pieces
1 egg
2 teaspoons coarse or granulated sugar for sprinkling

Steps:

  • Make the crust: In a food processor or stand mixer, mix together the flour, salt and sugar. Add butter and pulse (or mix at medium-low speed) until the pieces are coated with flour. Add 1/2 cup ice water and mix until incorporated. Keep dribbling in ice water, a tablespoon at a time, mixing until the dough just comes together into a lump. It should be moist, but not sticky. Turn out onto a lightly floured surface. (If dough feels wet, use a little extra flour.) Press the dough together, turning over a few times, until smooth and solid.
  • Shape into 2 disks, using about 1/3 of the dough for the top crust and the remaining 2/3 for the bottom crust. Wrap separately in plastic wrap and refrigerate at least 1 hour and up to 2 days.
  • On a lightly floured surface or nonstick baking mat, roll out the larger disk to about 1/4-inch thickness. The size and shape will depend on your dish. Use the crust to line a large 2 1/2- to 3-quart baking dish, like a 10-inch round or 9-inch square, at least 2 inches deep. Refrigerate while you prepare the apples.
  • Make the filling: In a large mixing bowl, combine the apples, sugar, salt, cinnamon, nutmeg, allspice, lemon juice or vinegar, 1 tablespoon Calvados and flour. Toss together until the apples are roughly coated with what looks like wet sand. If filling is dry, add the remaining tablespoon of Calvados. Pour into the pie crust, mounding above the rim, and dot with butter. (If necessary, add more apple pieces to the top. Don't worry about mixing them in.)
  • Roll out remaining dough to 1/4-inch thickness (or a bit less) and lay it gently over the fruit. Trim any excess and fold the edges into a thick rim. Crimp, if desired.
  • Whisk the egg thoroughly with 1 tablespoon cold water. Brush over the entire top crust, including the edges. Cut 5 or 6 vents on top. Refrigerate pie while the oven heats.
  • Place a baking sheet on the middle rack of the oven and heat to 425 degrees. Place pie on baking sheet and bake for 20 minutes. Reduce heat to 375 degrees. Bake another 25 minutes.
  • Open the oven and carefully sprinkle the sugar over the surface of the pie. Bake about 10 minutes longer. Look for steam and bubbling juices coming out of the vents, and a well-browned crust, before removing the pie from the oven.
  • Let cool at least 1 hour before serving.

  • To prepare crust: Whisk whole-wheat flour, 1 1/4 cups all-purpose flour, 2 tablespoons sugar and 1/2 teaspoon salt in a large bowl. Cut butter into small pieces and, with your fingers, quickly rub them into the dry ingredients until the pieces are smaller but still visible. Add sour cream and oil; toss with a fork to combine with the dry ingredients. Sprinkle water over the mixture. Toss with a fork until evenly moist. Knead the dough with your hands in the bowl a few times--the mixture will still be a little crumbly. Turn out onto a clean surface and knead a few more times, until the dough just holds together. Divide the dough in half and shape into 5-inch-wide disks. Wrap the dough in plastic and refrigerate for at least 1 hour.
  • Meanwhile, make filling: Combine apples, brown sugar, lemon juice, 1 teaspoon cinnamon, nutmeg, allspice and pinch of salt in a large bowl. Reserving 4 cups, transfer the rest of the apple mixture to a Dutch oven. Cook over medium heat, stirring, until the apples are tender and beginning to break down, about 10 minutes. Remove from the heat, stir in the reserved apples and 2 tablespoons flour; let cool for about 30 minutes.
  • Remove the dough from the refrigerator; let stand for 5 minutes to warm slightly. Roll one portion between sheets of parchment or wax paper into a 13-inch circle. Peel off the top sheet and invert the dough into a 9 1/2-inch deep-dish pie pan. Peel off the remaining paper. Scrape the filling into the crust. Roll the remaining portion of dough between sheets of parchment or wax paper into another 13-inch circle. Peel off the top sheet of paper and invert the dough onto the fruit. Peel off the remaining paper. Trim the crust so it overhangs evenly. Tuck the top crust under the bottom crust, sealing the two together and making a plump edge. Flute the edge with your fingers. Combine 1 teaspoon granulated sugar and the remaining 1/4 teaspoon cinnamon in a small bowl. Brush the crust with egg white and sprinkle with the cinnamon-sugar. Cut 6 steam vents in the top crust.
