Havana Cooler is a refreshing and popular rum-based cocktail that originated in Cuba. This version is from the Taste of Cuba website, which states it's from the Cocina Cubana Club. Ginger ale is the traditional mixer used for the Havana Cooler, but you can use Sprite or other lemon-lime carbonated soda in place of the ginger ale.

ginger ale (I added about 2 1/2 to 3oz or so)

1 fresh sprig mint
2 1/2-3 oz ginger ale

Steps:

  • 1. Combine rum, ice cubes and mint in a short glass (old-fashioned).
  • 2. Top with ginger ale, and serve.

This dish has bright flavors and becomes incredibly easy too with the help of a slow cooker! I came up with this recipe with the flavors and style of cooking meat slowly, inspired by my friend from Cuba.

Number Of Ingredients 12

1 onion, sliced
3 pounds pork tenderloin
3 tablespoons minced garlic
½ cup orange juice
3 tablespoons red wine vinegar
1 lemon, juiced
1 tablespoon ground cumin
1 tablespoon grill seasoning (such as Montreal Steak Seasoning®)
1 teaspoon salt
1 teaspoon ground red pepper
3 bay leaves
2 tablespoons grated lemon peel

Steps:

  • Arrange onion slices in the bottom of a slow cooker; top with pork tenderloin. Sprinkle garlic evenly over onion and pork. Pour orange juice, vinegar, and lemon juice over pork. Sprinkle cumin, grill seasoning, salt, red pepper, bay leaves, and lemon zest over pork.
  • Cover and cook on Low until pork is very tender, 6 to 7 hours. To serve, slice tenderloin into 1 1/2-inch slices, arrange on a platter, and drizzle juices over top.
