Homemade breakfast bars full of goodness. Of course you can vary the fruit/chocolate chips etc..etc.. that you add.

Number Of Ingredients 8

2 cups rolled oats (you can use flavoured oats)
1/2 cup whole wheat flour
1/2 cup shredded coconut
1/2 cup chopped nuts (of your choice)
1/2 cup chocolate chips or 1/2 cup dried fruit
1/2 cup honey
80 g low-fat margarine
1 egg, lightly beaten

Steps:

  • Mix oats, flour, coconut, nuts, chocolate chips or fruit together in a bowl.
  • Heat honey and low fat margarine in a saucepan or in the microwave until spread is melted and mixture combines when stirred.
  • Allow to cool slightly and whisk in egg.
  • Pour liquid into dry ingredients and mix well.
  • Line tray with baking paper and spread mixture out to about 2cm.
  • Bake in 180 Degrees C oven for 25 minutes.
  • Cut into 8-10 pieces whilst still warm, then transfer to airtight container to store.

This was given to me by a friend, I was really surprised at how much it really helps when I feel tired. I keep mine in the freezer then pull a couple out when I need a pick-me-up and they are ready for me to eat. You can substitute almond butter for peanut butter, if desired.

1 cup rolled oats
½ cup miniature semisweet chocolate chips
½ cup ground flax meal
½ cup peanut butter
⅓ cup honey
1 teaspoon vanilla extract
¼ teaspoon salt

Steps:

  • Stir oats, chocolate chips, flax meal, peanut butter, honey, vanilla extract, and salt together in a bowl. Roll into 24 balls and refrigerate until firm, at least 30 minutes.

3 ½ cups rolled oats
¾ cup sweetened dried cranberries (such as Craisins®)
⅔ cup sunflower seeds
½ cup white chocolate chips
½ cup toasted sesame seeds
½ cup oat bran
3 tablespoons flax seeds
1 tablespoon ground cinnamon
1 teaspoon salt
1 ½ cups creamy natural peanut butter
1 cup honey
5 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine oats, sweetened dried cranberries, sunflower seeds, white chocolate chips, sesame seeds, oat bran, flax seeds, cinnamon, and salt in a large bowl. Stir in peanut butter, honey, and oil. Press mixture firmly into a 9x13-inch baking pan.
  • Bake in the preheated oven until golden, 12 to 15 minutes. Remove from the oven and let cool for 5 minutes. Transfer to the refrigerator and chill for 10 minutes to set.
  • Slice chilled bars into 2x3-inch squares. Wrap in plastic wrap and store in the refrigerator.

  • Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper or greased foil. Set aside.
  • In a large bowl, add peeled banana. Using a fork or dough blender (recommended), mash until smooth. Add the remaining wet ingredients: peanut butter, maple syrup, coconut oil, flax egg and vanilla. Whisk until well incorporated.
  • Add the dry ingredients: oats, baking soda, baking powder and salt. Using a rubber spatula, fold until well mixed. Fold in seeds, dried fruit and walnuts.
  • Pour this mixture into the prepared baking pan. Using the rubber spatula, smooth into an even layer.
