Make your own savory homemade low sodium Italian sausage and enjoy your sausage patty and eggs for breakfast again. Lowered fat too!

1 lb lean ground pork
1 tbsp olive oil
2 tbsp red wine vinegar
1/2 tsp fennel seed (ground)
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp ground black pepper
1/2 tsp red pepper flakes (add more if you like spicy)
1/2 tsp oregano
1/2 tsp ground sage
1/2 tsp dried basil
1/2 tsp dried thyme
1/8 teaspoon mace
1-2 slices dried or toasted no salt added bread (optional)
1 egg beaten (optional)

Steps:

  • Crush the "leafy" basil, sage, oregano, pepper flakes and fennel seed in a spice grinder or mortar and pestle until ground or they are lightly powdered.
  • Mix the ground spice in with all the other spices in a small bowl and whisk well to remove any clumps.
  • Sprinkle the spice mixture and remaining ingredients over the ground meat and knead well until the spices are evenly distributed throughout the meat.
  • Refrigerate overnight to let the spice flavors infuse into the meat. If you try to cook the meat immediately, it will have very little flavor as the spices need time to develop.
  • You can also add an (1) egg and (1) slice dried breadcrumbs to bulk up regular sausage patties.
  • Form into patties, links or crumbles
  • Cook over medium heat to an internal temperature of 160°F or until outside surface is light to medium brown. About 8 to 9 minutes total and there is no pink remaining. Since it is lean do not overcook or the meat will turn out very dry. Usually fat gives it a "moistness" that helps carry the flavor.

1 ¾ teaspoons dried parsley
1 ¼ teaspoons salt
1 ½ teaspoons fennel seeds
¾ teaspoon ground black pepper
½ teaspoon garlic granules
½ teaspoon Italian seasoning
¼ teaspoon dried minced onion
1 pinch crushed red pepper flakes
1 pound ground pork
olive oil

Steps:

  • Combine parsley, salt, fennel, black pepper, garlic, Italian seasoning, minced onion, and red pepper flakes in a spice grinder or mortar and pestle. Grind until all seasonings are finely crushed.
  • Place pork in a large bowl and add seasoning mix. Mix with your hands until well combined. Roll into a log and slice into four 1/2-inch thick sausage patties.
  • Heat oil in a skillet over medium heat and cook sausage patties for 4 minutes. Turn patties and finish cooking for 4 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (73 degrees C).

I've been making these spicy and satisfying sandwiches for more than a dozen years. On occasion, I substitute country sausage for the Italian sausage and they taste just as good. Served with a zesty sauce for dipping, they're my family's favorite. -Brenda Jackson, Garden City, Kansas

1 can (8 ounces) tomato sauce
1/4 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon garlic powder
1 pound bulk Italian sausage
1 medium onion, thinly sliced and separated into rings
8 slices part-skim mozzarella cheese
8 slices French bread (3/4 inch thick)
1/4 to 1/2 cup butter, softened

Steps:

  • In a saucepan, combine the tomato sauce, basil, pepper flakes and garlic powder. Bring to a boil over medium heat. Reduce heat; simmer for 15 minutes. , Meanwhile, shape sausage into four thin oval patties. In a skillet over medium heat, cook patties until no longer pink; remove and keep warm. , In the drippings, saute onion until tender. Place a slice of cheese on four slices of bread; layer each with a sausage patty, onion and remaining cheese. Top with remaining bread. Butter the outsides of sandwiches. , On a griddle or in a large skillet, toast over medium heat until both sides are golden brown and cheese is melted. Serve with herbed tomato sauce for dipping.

1 1/3 to 1 1/2 pounds ground chicken breast
3 cloves garlic, chopped
3 tablespoons chopped parsley leaves
1/4 cup grated Parmesan, Parmigiano-Reggiano or Romano
1 teaspoon fennel seeds, 1/3 palm full
1 teaspoon coarse black pepper, 1/3 palm full
3/4 teaspoon salt, eyeball it
2 tablespoons extra-virgin olive oil, 2 turns of the pan

Steps:

  • Mix chicken with garlic, parsley, cheese, fennel seeds, pepper, and salt. Form 6 large, thin patties, 4 to 5 inches, or 12 small patties, 2 to 3 inches. Preheat a large, nonstick skillet and fry sausage in extra-virgin olive oil, 3 or 4 minutes on each side over medium to medium- high heat.

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.
