HEALTHIER PAN-FRIED HONEY-SESAME CHICKEN
This is a healthier version of honey-sesame chicken that's pan-fried instead of deep-fried--an easy, home-cooked meal that's salty, sweet, and a little bit spicy. It's a combination of flavors so deliciously right that you'll never think about Asian takeout again. Serve over rice or noodles, and garnish with sesame seeds and green onion slices.

Steps:
- Combine water, chicken broth, ketchup, soy sauce, honey, garlic, rice vinegar, Sriracha, sesame oil, ginger root, and red pepper flakes for sauce in a medium bowl.
- Heat vegetable oil in a wok or large skillet over medium-high heat. Add chicken, and stir-fry until chicken is opaque on all sides, 2 to 3 minutes. Transfer chicken to a plate.
- Reduce heat to medium and add the sauce to the wok. Whisk together water and cornstarch in a small bowl and add to the sauce, stirring constantly until the sauce starts to thicken, 3 to 5 minutes. Add chicken back to the wok, stir, and cook until reheated, about 2 minutes.

- Mix honey, ketchup, olive oil, sesame seeds, soy sauce, lemon juice, Sriracha sauce, salt, pepper, garlic powder, and ginger in a bowl until well combined. Add chicken pieces and toss to coat. Cover and refrigerate for 2 to 6 hours.
- Preheat the oven to 350 degrees F (175 degrees C).
- Transfer chicken and sauce into an oven-proof dish.
- Bake in the preheated oven for 8 minutes. Remove from oven and turn chicken pieces over. Bake until chicken is no longer pink in the center and the juices run clear, 5 to 8 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Mix honey, tomato paste, apple cider vinegar, Sriracha sauce, and sesame oil together in a medium bowl.
- Combine cold water, cornstarch, and 1/2 teaspoon salt in a bowl; mix well. Add to honey sauce mixture and mix well. Set aside until needed.
- Sprinkle 1/4 teaspoon salt and 1/4 teaspoon garlic powder over chicken.
- Whisk egg in a large bowl. Add remaining salt and garlic powder and mix well. Mix in flour. Combine water and cornstarch in a bowl; add to egg mixture and mix well. Add avocado oil and baking powder; mix well.
- Pour 3 inches of peanut oil into the bottom of a wide, deep pot and heat to 325 degrees F (165 degrees C).
- Place 1/2 of the chicken pieces into the batter mixture and turn to coat. Scoop tablespoonfuls of chicken and batter into the hot oil. Do not crowd the chicken. Fry in batches until chicken pieces are golden brown and no longer pink in the centers, about 1 minute per side. Transfer to a paper towel-lined plate. Check oil temperature between batches.
- Pour honey sauce mixture into a large skillet. Bring to a simmer over medium heat, 3 to 4 minutes. Add all chicken pieces to the sauce; turn to coat. Sprinkle on sesame seeds.

HEALTHY SESAME CHICKEN
This is my all-time favorite low-fat, low-cal recipe. I got it from a great cookbook, More Healthy Homestyle Cooking, and I have to say that this recipe is worth the price of the book! For more crunch and color, you can cook some red pepper and trimmed snow peas for 4 minutes in the skillet before adding the chicken. I like it just the way it is, though, served over rice. Enjoy!

Steps:
- In a gallon-size plastic bag, combine flour, salt and pepper.
- Add chicken, seal bag, and shake well to coat.
- Coat a large nonstick skillet with nonstick spray and warm over medium-high heat.
- Add chicken to skillet and cook, stirring, for 3 to 4 minutes, or until no longer pink.
- Transfer to a plate.
- Reduce heat to medium.
- Combine soy sauce and sugar in the skillet.
- Cook, stirring occasionally, until the sugar dissolves.
- Add oil and sesame seeds.
- Add chicken and chives.
- Toss and serve immediatedly.

- Combine the ingredients for the sesame marinade. Pierce chicken with a fork in a few places, then place the chicken in a large container, pour the marinade over the top. Refrigerate for a couple of hours or all day.
