These cookies are amazing but I wanted to add some grains and cut the fat. By adding some cheerios and kiwi puree I have done just that. They taste great and have vitamins and antioxidants.

½ cup butter
1 kiwi, pureed
½ cup brown sugar
½ cup white sugar
2 eggs
2 teaspoons Mexican vanilla extract
2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 cup toasted oat cereal (such as Cheerios ®), smashed
2 cups milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease two baking sheets.
  • Cream together the butter, kiwi, brown sugar and white sugar in a large bowl, until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla extract. Combine flour, baking soda, and toasted oat cereal in a bowl; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared baking sheets.
  • Bake in preheated oven until light brown, about 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I love these cookies but I really wanted to try to make them a little lighter. I actually used sweet potato puree for some of the butter and juice squeezed from an orange for some of the sugar and they still taste great. It sounds a little odd but try it!!

½ cup butter, softened
¼ cup sweet potato puree
½ cup white sugar
1 cup packed brown sugar
½ cup orange juice
4 egg whites
2 teaspoons vanilla extract
1 teaspoon baking soda
2 teaspoons hot water
3 cups all-purpose flour
2 cups semisweet chocolate chips
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat butter, sweet potato, white sugar, brown sugar, and orange juice with an electric mixer in a large bowl until smooth. Add eggs whites one at a time, allowing each egg to blend into butter mixture before adding the next. Beat in vanilla extract. Dissolve baking soda in hot water in a small bowl. Add to sweet potato batter. Stir in flour, chocolate chips, and walnuts. Roll dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
  • Bake in preheated oven until edges are nicely browned, about 10 minutes.

1 cup oat flour
1/2 tsp baking soda
1/4 tsp salt
4 tbsp coconut sugar or brown sugar
4 tbsp regular sugar, (unrefined if desired)
1/3 cup chocolate chips, (or more if desired)
optional 1/3 cup chopped nuts
1 tsp pure vanilla extract
2 tbsp vegetable or melted coconut oil
3-5 tbsp milk of choice, (as needed)

Steps:

  • Healthy Chocolate Chip Cookies Recipe: Preheat oven to 380 degrees. Combine dry ingredients and mix very well. Add wet, and form into a big ball. Now make little balls from the big one. For soft cookies, refrigerate until cold (otherwise, just bake right away). Bake 9 minutes. Remove from oven when they're still a little undercooked, then it's important to let cool 10 minutes before removing from the tray, as they'll continue to cook while cooling. They should have spread out, but every now and then they might not (climate plays a huge role in baking), so just smush down with a spoon if needed. You can also choose to make extra cookie dough balls and freeze them to bake at a later date. For softer cookies, store in a lidded plastic container. Blueberries are both healthy and great tasting. I altered this original recipe by adding a bunch of them, along with some dried cranberries and some yogurt for butter. They are still big and chewy and super yummy but healthier as well.

½ teaspoon baking soda
½ cup unsalted butter, melted
¼ cup non-fat plain yogurt
1 cup packed brown sugar
½ cup white sugar
1 tablespoon vanilla extract
1 egg
1 egg yolk
1 cup semisweet chocolate chips
½ cup blueberries
½ cup dried cranberries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease baking sheets or line with parchment paper.
  • Sift together flour and baking soda in a small bowl; set aside.
  • Beat melted butter, yogurt, brown sugar, and white sugar in a bowl until blended. Beat in vanilla extract, egg, and egg yolk until light and creamy; mix in flour mixture until just blended. Stir in chocolate chips, blueberries, and cranberries by hand using a wooden spoon. Drop 1/4 cup cookie dough 3-inches apart on prepared baking sheets.
