PASTA WITH PARSLEY & HAZELNUT PESTO



Pasta with parsley & hazelnut pesto image

350g tagliatelle
80g pack flat-leaf parsley
100g toasted hazelnut
50g parmesan (or vegetarian alternative), grated
zest and juice 1 lemon
100ml olive oil

Steps:

  • Cook the pasta in salted, boiling water according to pack instructions.
  • Put the parsley, hazelnuts, Parmesan and lemon zest and juice into a food processor and whizz to a paste. With the motor still running, gradually drizzle in the olive oil. Season, if you like, with salt and pepper.
  • Drain pasta, return to pan and stir in pesto. Divide pasta between serving bowls and serve.

1/3 cup lightly toasted hazelnuts
3 cups loosely packed arugula
1 teaspoon chopped garlic
Kosher salt
1/4 cup coarsely grated Parmesan
1/4 cup coarsely grated Pecorino-Romano
1/2 cup extra-virgin olive oil
1 teaspoon lemon zest

Steps:

  • Put the hazelnuts in a food processor and pulse until finely ground. Add the arugula, garlic and 1/4 teaspoon salt and pulse until finely chopped. Add the Parmesan and Pecorino-Romano and pulse to combine. With the food processor on, slowly pour in the oil and process until combined. Transfer to a bowl and stir in the lemon zest.

1 cup hazelnuts (about 4 1/2 ounces), toasted lightly and skinned
2 cups packed fresh flat-leafed parsley leaves (about 1 large bunch), washed and dried
2 large garlic cloves
3/4 cup olive oil
2 tablespoons hazelnut oil if desired
freshly ground black pepper

Steps:

  • In a food processor blend together pesto ingredients with pepper and salt to taste until smooth. Pesto keeps, its surface covered with plastic wrap, chilled 1 week or frozen 1 month.

1 large garlic clove
1 cup fresh cilantro sprigs
1/2 cup hazelnuts, toasted
1/4 teaspoon cayenne
1/2 teaspoon salt
1/3 cup olive oil
1 1/2 lb arctic char fillets with skin
Accompaniment: lime wedges

Steps:

  • Put oven rack in middle position and preheat oven to 375°F.
  • With motor running, drop garlic into a food processor to finely chop. Shut off motor and add cilantro, nuts, cayenne, and 1/4 teaspoon salt, then blend until coarsely chopped. With motor running, add oil, blending until incorporated. (Sauce should be coarse.)
  • Arrange fillets, skin sides down, in a lightly oiled baking dish. Sprinkle with remaining 1/4 teaspoon salt, then spoon pesto over fish. Bake until fish is opaque and just cooked through, 12 to 17 minutes, depending on thickness of fillets.

250g jar roasted red peppers
60g hazelnuts, toasted
1 large garlic clove, crushed
50ml extra virgin olive oil
pinch of chilli flakes, optional
½ tsp sherry or white wine vinegar
30g parmesan, grated, plus extra to serve
½ small bunch of parsley
400g dried pasta, penne, rigatoni or orecchiette work well

Steps:

  • Drain the peppers and tip them into a food processor with the toasted hazelnuts, garlic, olive oil, chilli flakes, vinegar and a good pinch of salt. Blitz to a smooth paste. Add the parmesan and parsley, then blitz again. Check the seasoning.
  • Cook the pasta following pack instructions. Drain and reserve a cup of the cooking water. Toss the pesto with the pasta and a splash of cooking water to loosen. Serve in bowls with extra parmesan grated over.

  • Toast the hazelnuts in a small dry pan set over a medium heat for 3-4 minutes, shaking the pan every so often so they brown evenly. Tip out onto the cotton cloth or tea towel, fold over the corners to enclose the hazelnuts, then rub vigorously to loosen the skins. Set aside.
  • Put the wild garlic leaves in the bowl of the food processor and pulse briefly to break them down. Once the leaves are coarsely chopped, add the peeled toasted hazelnuts and pulse again. Now add the cheese and the olive oil and pulse again until you reach the desired texture. Season the pesto generously with salt and pepper and adjust the consistency with more olive oil, if you like.
  • Use a rubber spatula to scrape the pesto out into a large sterilised jar (see Make Ahead). Tap the jar on a work surface to help settle the pesto, then trickle a thin layer of olive oil on top to seal. Seal and store the pesto in the fridge, where it will keep for up to 2 weeks.
