This is from a book called "Take This Dish and Twist it" by George Duran. The collection of recipes here is really fascinating. Can't wait to try them!

Number Of Ingredients 9

2 tablespoons olive oil
1 1/2 cups diced cooked ham
1/2 chopped red onion
1/2 chopped green sweet pepper
1 1/2 cups shredded monterey jack cheese (6 ounces)
1 1/2 cups shredded cheddar cheese (6 ounces)
5 cups large tortilla chips
1 (14 1/2 ounce) can diced tomatoes, drained
1 1/2 cups diced fresh pineapple, drained

Steps:

  • Preheat oven to 400°F.
  • In a nonstick skillet heat 1 T oil over medium-high heat.
  • Add ham; cook and stir for 2-3 minutes or until browned.
  • Transfer to a plate.
  • Heat the remaining 1 T oil in the skillet.
  • Add the onion and pepper;
  • cook for 2-3 minutes or until just softened.
  • Remove from heat and stir in the ham.
  • In a bowl mix together the cheeses.
  • Place half the tortilla chips in the bottom of a 9x9x2-inch baking pan or 1 and 1/2 quart baking dish.
  • Sprinkle with half the cheese, half the ham mixture, half the tomatoes, and half the pineapple.
  • Repeat layers, starting with the remaining tortilla chips.
  • Bake for 5 to 8 minutes or until cheese is melted and bubbling.
  • Serve at once.

2 cups cooking oil
4 large white flour tortillas, cut into quarters
Salt
2 cups lobster meat (can substitute crab orshrimp)
3 tablespoons Meyer lemon oil
1 cup white corn kernels
1/2 cup diced tomatoes
3 tablespoons chopped mint leaves
1/3 cup chopped cilantro leaves
1 tablespoon chopped jalapeno
1 cup canned black beans, rinsed and drained
1/4 cup jicama, diced
1/4 cup lime juice
1 teaspoon chili powder
1/2 teaspoon garlic salt
1 cup creme fraiche
1 avocado, halved, pitted and flesh sliced into eighths
1 cup crumbled queso fresco
1/4 cup chopped chives

Steps:

  • In a medium, wide skillet, heat the cooking oil over medium heat. Add the tortillas to the skillet, a few at a time, and fry for about 1 minute on each side. Put the fried tortillas on paper towels to drain and sprinkle with salt, to taste.
  • In a saute pan, warm the lobster meat with the lemon oil over low heat minutes until warm, about 5 minutes.
  • In a large bowl combine the corn, tomatoes, mint, cilantro, jalapeno, black beans, jicama, lime juice, chili powder, and the garlic salt.
  • Start assembling the nachos by stacking the tortilla chips on each plate. Add the black bean salsa then top with half a cup of the lobster meat. Garnish with creme fraiche, avocado, queso fresco, and chives. Serve.

1/4 cup pineapple juice
2 Tbsp. brown sugar
2 Tbsp. teriyaki sauce
1 tsp. cornstarch
1 tsp. water
2 cups shredded cooked chicken
7 cups tortilla chips
1-1/2 cups KRAFT Shredded Pepper Jack Cheese
1/2 cup diced fresh pineapple
1/4 cup diced onion
3 slices OSCAR MAYER Bacon, cooked and crumbled
2 Tbsp. sliced jalapeño pepper slices
1 Tbsp. chopped fresh cilantro

Steps:

  • Preheat oven to 350 degrees. In a small saucepan over medium high heat, combine the pineapple juice, brown sugar, and teriyaki sauce. Dissolve the cornstarch in the water and add to the saucepan. Bring to a boil, stirring until thickened. Mix the shredded chicken with the sauce until chicken is evenly coated.
  • Place half of the chips in an oven safe baking dish; cover with layers of half of the cheese, chicken, pineapple, and onion. Repeat layers.
  • Bake for 10 minutes. Top with crumbled bacon, jalapeno slices, and cilantro. Serve immediately.

1/3 cup plus 1 tablespoon sugar, divided
2 teaspoons ground cinnamon
1/3 cup honey
1/4 cup butter, cubed
8 flour tortillas (8 inches)
4 ounces cream cheese, softened
1 teaspoon vanilla extract
1 container (8 ounces) frozen whipped topping, thawed
1/2 cup drained crushed pineapple
4 medium bananas, sliced
1 cup sweetened shredded coconut, toasted
1/2 cup chopped macadamia nuts, toasted

Steps:

  • In a small bowl, combine 1/3 cup sugar and cinnamon; set aside. In a small saucepan, combine honey and butter. Cook and stir over medium heat until blended. Brush onto both sides of tortillas; sprinkle tops with sugar mixture., Stack tortillas, top sides up; cut into sixths. Arrange wedges, sugared sides up, in a single layer on ungreased baking sheets. Bake at 400° for 6-8 minutes or until crisp and golden brown. Cool completely on wire racks., In a large bowl, beat cream cheese, vanilla and remaining sugar until creamy. Beat in whipped topping until blended. Fold in pineapple. Arrange tortilla wedges on a large serving platter. Spoon cream cheese mixture over wedges. Top with bananas, coconut and nuts. Serve immediately.
